MOM'S BEST EVER TURKEY MEATLOAF

Mom's Best Ever Turkey Meatloaf image

This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

Categories     Oven

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 14

1 lb ground turkey breast
1/2 cup fat free egg substitute or 2 eggs
1/4 cup bell pepper, finely diced
1/2 cup onion, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons bottled minced garlic or 6 garlic cloves, minced
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce, divided
1 teaspoon dried basil
1 cup tomato sauce
3/4 cup rolled oats, not instant oatmeal
cooking spray

Steps:

  • Spray 9 x 5 loaf pan with cooking spray.
  • Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
  • Add more egg if too dry, or add more oatmeal crumbs if too wet.
  • Press turkey mixture into pan.
  • Bake at 375°F for 45 minutes.
  • Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
  • Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
  • Return to oven for an additional 15- 20 minutes.
  • If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
  • If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.

MOM'S BEST SPAGHETTI SAUCE

Mom's Best Spaghetti Sauce image

A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

MOM'S STUFFED EGGPLANT

Mom's Stuffed Eggplant image

Provided by Michael Chiarello : Food Network

Categories     side-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 13

1 large eggplant
3 tablespoons extra-virgin olive oil, divided
1/2 pound ground beef
Salt and freshly ground black pepper
1 onion, small diced
1 red pepper, small diced
3 cloves garlic, minced
1/2 cup freshly chopped parsley leaves
1/2 cup freshly chopped basil leaves, chopped
1 1/4 cup grated Pecorino Romano, divided
1/4 cup bread crumbs
1 egg
2 chopped tomatoes

Steps:

  • Preheat oven to 350 degrees F.
  • Cut the eggplant in half and scoop out the center, leaving enough meat inside the skin so that it holds its shape when baked. Boil the scooped-out center part until very soft, about 10 to 12 minutes.
  • Meanwhile, in a medium saute pan heat 1 tablespoon olive oil over medium heat. Season the beef with salt and pepper. Add the seasoned ground beef to the pan and saute until all of its liquid is evaporated and the beef begins to brown slightly. Drain the beef, removing the extra, unnecessary fat. Let cool briefly and chop the cooked beef so that there are no large chunks of meat. In another medium saute pan over medium heat add the remaining 2 tablespoons olive oil and saute the onions, peppers and garlic together.
  • In a bowl mix together the cooked eggplant, vegetables, cooked beef, herbs, 1 cup of the cheese, bread crumbs, and the egg.
  • Fill the scooped-out eggplant halves with this mixture, dividing it evenly among the 2 halves.
  • Top with chopped tomatoes and the remaining 1/4 cup of grated cheese, season with salt and pepper, place on an oiled oven tray or baking dish, and bake for 50 minutes in preheated oven. Let cool briefly, slice widthwise and serve.

MOM'S SPAGHETTI AND MEATBALLS

Mom's Spaghetti and Meatballs image

Provided by Valerie Bertinelli

Categories     main-dish

Time 2h15m

Yield 12 servings

Number Of Ingredients 15

1 pound ground beef
1 pound ground pork
2 eggs, lightly beaten
1 cup Italian-style dried breadcrumbs
1/2 teaspoon dried oregano
8 cloves garlic, half grated or minced, the other half sliced
1/4 cup finely grated Pecorino Romano, plus more for garnish
1 1/4 teaspoons kosher salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil
1 yellow onion, finely chopped
1 cup dry white wine
Two 26.5-ounce boxes strained tomatoes, such as Pomi
4 fresh basil leaves, torn, plus torn leaves for garnish
2 pounds spaghetti

Steps:

  • Combine the beef, pork, eggs, breadcrumbs, dried oregano, grated garlic, Pecorino Romano, 1/2 teaspoon of the salt and pepper to taste in a large bowl. Using your hands, thoroughly mix the ingredients together until evenly incorporated. Roll into meatballs slightly larger than golf balls, setting them on baking sheets as you work.
  • Heat the oil over medium heat in a large Dutch oven until it shimmers. Working in batches and taking care not to crowd the pan, saute the meatballs, turning frequently, until browned on all sides, about 5 minutes. Using a slotted spoon, transfer from the pan back to the baking sheet.
  • Reduce the heat to medium-low, add the onion to the pan, and saute, stirring occasionally, until fragrant, about 2 minutes. Add the sliced garlic, stir, and cook 1 minute more. Add the wine, increase the heat, and bring to a boil, then reduce the heat and simmer for 2 minutes. Add the tomatoes, 4 of the basil leaves, the remaining 3/4 teaspoon salt and the meatballs along with any accumulated juices. Simmer, partially covered, until the flavors come together, about 1 hour 20 minutes. Taste and adjust the seasonings.
  • Meanwhile, cook the spaghetti in two batches in boiling salted water according to package directions. Drain and serve with the meatballs and sauce ladled on top. Garnish with torn basil and freshly grated Pecorino-Romano.

AUTHENTIC ITALIAN SUNDAY SAUCE

Authentic Italian Sunday Sauce image

The only recipe you will ever need for authentic Italian Sunday Sauce !

Provided by Vanessa

Categories     Main DIshes

Time 2h

Number Of Ingredients 21

1 pound Sweet Italian Sausage (there are about 4 sausage links per pound)
FOR THE MEATBALLS:
1 lb ground beef
1 lb ground pork
1 lb ground veal
6 handfuls italian seasoned bread crumbs (2 handfuls for each pound of meat)
3 handfuls grated parmesan cheese (1 handful per each pound of meat)
3 eggs, lightly beaten
3 eggshells of water (just do it lol).
1 teaspoon minced garlic
1/4 cup chopped flat leaf parsley
FOR THE SAUCE:
2 Tablespoons Extra Virgin Olive Oil
1 large onion, chopped
3 cloves garlic, sliced
1 small can Tomato Paste
2 cans of water (use tomato paste can). Or alternatively 1 1/2 cups
2-28 ounce can Crushed Tomatoes (I like San Marzano tomatoes)
1/4 cup red wine
1 carrot, grated (for sweetness instead of using sugar)
Sea salt and fresh ground black pepper

Steps:

  • Cook the Sausage: Preheat broiler to high. Place sausage on a broiler pan and broil for about 15 minutes, turning once. They will finish cooking in the sauce
  • Make the Meatballs:
  • Preheat oven to 400 degrees.
  • Combine. all meatball ingredients in a large bowl. Mix on lowest setting until ingredients are just combined. Don't over mix or your meatballs will be tough. I use my kitchen aid mixer, but if you don't have one it is fine to use a large bowl and a mixer or even your hands.
  • Lightly brush a baking sheet with Extra Virgin Olive oil. Form meat mixture into meatballs and place on baking sheet about an inch apart. Bake until lightly browned, approximately 20 minutes. You don't want them cooked through, just browned so they hold together. They will finish cooking in the sauce.
  • MAKE THE SAUCE:
  • Heat Olive Oil in a large pot. Add onions, a little salt, and cook until softened.
  • Add garlic and cook another minute. A
  • dd the Tomato paste, water, salt, and pepper. Stir to combine. Bring to a boil, reduce heat to lowest setting, cover partially and simmer for 20 minutes stirring occasionally.
  • Increase heat to medium high. Add crushed tomatoes, wine, grated carrot, and season with some more salt and pepper. Bring to a slight boil, reduce heat back to low.
  • Partially cover and simmer for 1 hour. Add in the meatballs and sausage and cook for an additional 90 minutes(still partially covered), stirring occasionally to ensure the sauce doesn't stick to the bottom.

MOM'S MEATBALLS

Mom's Meatballs image

Scrumptious meatballs from Mom. Mom never browned them first if she was using in her spaghetti sauce. See her recipe for sauce posted in my recipes, recipe #210729. She would drop them in raw and let them simmer for 40 mins. You will have to skim off any excess fat that rises to the top of the sauce if done this way. Or you can saute them first or bake in the oven before adding them to the sauce. No need to skim off any grease if pre-cooked.

MOM'S MEATLOAF

Mom's Meatloaf image

Lot's of meatloaf recipes out there, but what makes this one different is the brown sugar/soy sauce glaze that cooks over the top. This is my mom's recipe and I haven't found one better than hers. I had submitted it to the local newspaper a couple of years ago. Yesterday I ran into a lady and after the introductions she asked me if I was the one who had submitted a meatloaf recipe to the paper a few years back. I was stunned that she would associate a stranger with a recipe. Anyway she said that their family has really enjoyed it and they have given the recipe to all of their friends and they all love it. Wow, so I thought I would submit this one more meatloaf recipe so I coud spread the joy. Ha!

MOM'S BEST HEALTHY MEAT SAUCE

Mom's Best Healthy Meat Sauce image

This was one of my favorite recipes that mom made while I was growing up. I make it all the time now for my husband and I. Since I like to eat healthy, I normally make the sauce with lean ground turkey, but mom always made it with ground beef. The chili sauce is THE secret ingredient--don't leave it out!! It tastes great over spaghetti with Parmesan cheese sprinkled on top. It freezes very well and makes great leftovers.

MOM'S SPAGHETTI SAUCE

Mom's Spaghetti Sauce image

A great sauce for any pasta dish, I usually leave the meats out for most baked dishes. This recipe came to me from my Mother, a full-blooded Italian-American, with a few minor additions/changes by me. I have never found a recipe that I like as much, but then I am probably biased. Cook time is 1 to 8 hours depending on how long you have. Mom used to cook it all day. I like to go at least two hours, but I have spent as little as 45 minutes on the cook time.

Provided by Wally Wilkins

Categories     Sauces

Time 2h30m

Yield 2 quarts

Number Of Ingredients 23

2 stalks celery
1 large onion
2 -4 cloves garlic (or 2-4 tablespoons of diced garlic from the jar You can adjust to taste.)
3 (6 ounce) cans tomato paste (I prefer Contadina)
2 (14 1/2 ounce) cans tomatoes (Use what you prefer, but I like the diced Italian Seasoning type)
1 (15 ounce) can tomato sauce
1 lb ground beef or 1 lb stewing beef, cut in cubes (optional)
2 tablespoons olive oil (can use vegetable oil if you prefer)
4 -8 ounces sliced mushrooms (optional)
2 -4 ounces black olives, chopped or sliced (optional)
1 bell pepper (optional)
oregano
thyme
sweet basil
rosemary
cumin
italian seasoning, can be used in place of the above spices
bay leaf
crushed red pepper flakes (optional)
garlic powder
onion powder
salt
black pepper

Steps:

  • Cut celery and onion (and bell pepper if used) as fine as you prefer.
  • If you like chunky style sauce make the pieces bigger, I like mine chopped fairly small.
  • In a large skillet, heat 1-2 tblspn of oil, when oil is hot (not smoking) add celery and stirfry.
  • As celery begins to clarify, add onion (and bell pepper, if used) and stirfry until it begins to glaze, add chopped garlic, stir for a short time (don't let anything begin to brown).
  • If using meat, add ground beef or stew beef and brown, stirring regularly, adjust heat to make sure nothing burns.
  • Salt and black pepper to taste.
  • Transfer to a larger pot (if you have a good sized pot that you can brown in, you can just start with that instead of using the skillet.).
  • Stir in tomato paste and cook until the color darkens.
  • Stir in tomatos and tomato sauce.
  • Add spices (Italian seasoning or individual spices) to taste.
  • Add 3 Bay Leaves.
  • Stir in mushrooms and/or black olives and crushed red pepper, if desired.
  • Stir in 1-2 cans of water (I use the tomato paste, tomato and tomato paste cans to get the leavings out of them.).
  • Adjust heat to simmer.
  • Let cook for at least 1 hour, longer if you can, and stir regularly.
  • Check spice to taste and add what you want.
  • You can cook this for a little while or for a longer time.
  • I prefer at least 2 hours to give all the spices a chance to blend well.
  • But it can be cooked for as little as a half hour.
  • If you want it to cook for a long time, monitor the thickness and add water as needed.
  • Don't forget to remove the Bay Leaves before serving.
  • Some people like to add a pinch of sugar to cut the acidity, but I believe that the Bay Leaves accomplish this and have never used sugar.
  • When done, serve over or mix with the cooked pasta of your choice.
  • Add grated parmissan if desired.
  • Also individuals can add crushed red pepper to their own servings, for those who like it a little spicier.
  • If making a baked dish such as Lasagna, Ziti, etc.
  • you may want to make the sauce a little thinner (add water) to start with.

CLASSIC ITALIAN MEAT SAUCE

Classic Italian Meat Sauce image

If you are a meat sauce family (my family is a serious meat sauce family), then a pot of this in the fridge, or a container of this in the freezer is just pure peace of mind.

Provided by Katie Workman

Categories     Main Course

Time 50m

Number Of Ingredients 11

2 tablespoons olive oil (divided)
1 pound ground beef
1 pound fresh pork sausage (squeezed from the casing)
1 ½ cups chopped onion
2 teaspoons finely minced garlic
2 teaspoons dried oregano
1 teaspoon dried basil
Coarse salt and freshly ground pepper (to taste)
Big glug or two of red or white wine (if you have a bottle open )
2 28-ounce cans crushed tomatoes (preferably in puree)
¼ teaspoon red pepper flakes (optional)

Steps:

  • In a large saucepot, heat one tablespoon of the olive oil over medium-high heat. Add both the ground beef and the sausage together and cook, stirring frequently, and breaking up the meat so that it's very crumbly and browned throughout, about 4 to 6 minutes. Turn it into a strainer and let it the fat drain off.
  • Add the remaining tablespoon of oil to the same pot over medium heat (don't clean it! All those little bits of flavor from the meat will season the sauce). Add the onion and cook, stirring frequently, until softened, about 5 minutes. Add the garlic, oregano and basil and cook, stirring for 2 more minutes, until you can smell the garlic and herbs. Add the wine, if using, and stir for one more minute, scraping up any bits stuck to the bottom, until the wine pretty much evaporates.
  • Add the canned tomatoes and red pepper flakes if using, and stir to combine everything. Bring to a simmer over medium high heat, stirring occasionally. Add the browned meat, lower the heat to medium low and simmer, stirring occasionally for 20 minutes. Taste, and season gently with the salt and pepper (the sausages provide a whole lot of seasoning).

19 ABSOLUTE HEALTHIEST MEATS TO CHOOSE (AND 6 MEATLESS ...

From morningchores.com
Estimated Reading Time 6 mins
  • Fish and Shellfish. It should come as no surprise that fish is at the top of the list. It is full of heart-healthy omega-3’s and has such a wide variety of options.
  • Chicken. Chicken is one of the easiest meats to raise yourself. They require very little and if you choose the right bird you could have a dual-purpose breed that is great for both meat and eggs.
  • Turkey. Turkey is another poultry that offers a lot of healthy choices. It obviously has white and dark meat, but it is all pretty good for you if you exclude the skin.
  • Beef. There was a time when beef was considered to be unhealthy. Now, it is being reported that as long as the beef is lean then you are good to go. That made me a little sad because my favorite part of a juicy steak is the fat.
  • Veal. Veal is a tough meat option for some to consider. Since veal is meat from a calf it can be difficult to raise this option for yourself. I have a hard time culling baby animals.
  • Lamb. Lamb is another tough meat source for some to consider. Again, you must cull a baby animal. Yet, they are pretty easy to raise as long as you have more than one since they are social animals.
  • Buffalo. I was actually rather surprised by the latest studies on this meat. There was a time when buffalo was considered less healthy. I’m so glad that it is back to being considered healthy because some of the best burgers I have ever eaten were buffalo burgers.
  • Ostrich. This might make you make a double-take. You may have never considered eating ostrich, and I’ll have to agree that this is not a typical meat option for many people.
  • Emu. This is another healthy meat option that might throw you through a loop. For those unfamiliar with an Emu, it is the second-largest bird breed if measuring by height.
  • Sandwich Meats. Sandwich meats are usually highly processed. If you aren’t against processed foods, then you could consider this a healthy meat option.
