FALL HARVEST SALAD WITH APPLES
Steps:
- Prepare maple roasted butternut squash or roasted sweet potato cubes.
- Toast pecans in a 325 degree oven for 7-10 minutes.
- Place all apple cider vinaigrette dressing ingredients in a high-speed blender, such as a Nutribullet, or a small mini-prep food processor and blend for 20-30 seconds, or until emulsified.
- In a large bowl combine mixed greens and vinaigrette. Toss to completely coat the greens.
- Top salad with bell pepper, onion, apple, pumpkin seeds, pecans, and butternut squash.*
- Serve immediately as is or with Fried Goat Cheese and enjoy!

- Whisk together oil, vinegar, honey, poppy seeds, mustard, salt and pepper until fully combined. It will take 1-2 minutes of whisking for the vinaigrette to emulsify.
- In large bowl combine greens, pomegranate seeds, pumpkin seeds, pecans, cheese and apples. Pour dressing over the top and toss salad until evenly coated with dressing. Season with salt and serve.

A refreshing (and refreshingly simple!) side salad with crisp apples, toasted pecans, crunchy celery, and a light dressing made with cider vinegar and pure maple syrup.

- Add all ingredients for the Cider-Maple Vinaigrette to the bottom of your salad bowl. Whisk until blended. Set aside.
- Heat oven to 350 degrees Fahrenheit. Spread pecans on a rimmed cookie sheet. Place in preheated oven and cook, stirring once or twice, until fragrant and slightly browned, about 4 minutes. Remove from oven and set aside.
- If desired, in a small bowl, toss the apple matchsticks with the lemon juice. This will help prevent them from browning - see note below.
- Add lettuce, apples, and celery to the salad bowl. Toss until all of the greens are lightly coated with the dressing.
- Top with toasted pecans and serve.

- Combine the vinegar, garlic, salt, and pepper in a medium size bowl. Slowly whisk in the olive oil. Mix the lettuce and radicchio in a salad bowl. Just before serving pour on the dressing and toss.
- Divide the salad among 4 salad plates. Place 3 apples slices on one side of each salad, and one quarter of the fennel on the other side. Sprinkle the pecans all over the salads.

- Preheat oven to 425°F.
- Line baking sheet with foil; lightly coat with cooking spray.
- In bowl combine brown sugar and finely chopped pecans.
- Place apple halves, cut sides up, on baking sheet.
- Brush tops of apples with butter; sprinkle with brown sugar mixture.
- Bake 15 minutes or until just tender when pierced with a fork.
- Meanwhile, in a screw-top jar combine oil, cider, vinegar, honey, salt, and pepper. Cover; shake well.
- Arrange greens on serving platter; top with apple halves.
- Spoon melted sugar and pecans from baking sheet atop salad.
- Shake dressing; drizzle desired amount on salad.

- Soak farro in cold water for 20 minutes; drain well.
- Bring 2 quarts salted water to a boil in a medium pot. Add farro and simmer, uncovered, until tender, 30 to 35 minutes. Drain well then rinse under cold water for 30 seconds. Drain again, then transfer to a large bowl, cover and refrigerate.
- Heat 2 tablespoons of the oil in a large skillet over medium heat. Add onions and cook until softened and translucent, about 5 minutes. Add apples, stir well and cook until slightly softened, 2 to 3 minutes more.
- Transfer apple mixture to bowl with farro. Add thyme, vinegar, remaining 2 tablespoons oil, pecans, salt and pepper and toss gently to combine. Serve immediately.
