Steps:
- Preheat oven to 350 degrees. Line (regular size, not mini) cupcake pan with paper liners. (Don't skip the paper liners as they make stick). Make brownies according to package directions and pour batter only half way up the liners. Bake in preheated oven for 12 minutes. While they are baking, mix the coconut, sweetened condensed milk and milk together. Remove brownies from oven and spoon on some sweetened coconut. Place bake in oven and continue to bake an additional 14-16 minutes. Remove from oven and allow to cool completely before removing the paper liners. Drizzle on the chocolate then sprinkle on the almonds.
ALMOND JOY* BROWNIE BITES
I found this recipe on one of my favorite websites, "Flour Me With Love". My friend, Lisa, and I had a "bake day" yesterday, tried these, and they were SO GOOD! The best part is...they're very easy to make! Enjoy!

Steps:
- 1. Preheat oven to 350 degrees. Line cupcake pans (regular size...not mini) with liners. Make sure to use the liners or they will stick.
- 2. Make the brownies according to directions and pour the batter only about halfway (or a little less) up the liners.
- 3. Bake in a preheated oven for 12 minutes. While the brownies are baking, mix together the coconut, sweetened condensed milk, and milk.
- 4. Remove the brownies from the oven and spoon on some of the coconut (I used a cookie scoop for that), and then return to the oven for 14-16 minutes.
- 5. Remove from oven and allow to cool COMPLETELY before removing the liners. Once they are completely cool, and the liners are removed, drizzle the melted chocolate over them and sprinkle with the nuts.
ALMOND JOY BROWNIES
This is a Pillsbury Bake-Off recipe from the 50s. The Almond Joys are melted and mixed into the recipe. I expected a more chocolately brownie when I discovered this recipe and was surprised to end up with a "blonde" coconut brownie with only a hint of chocolate taste. Very good.

BITE-SIZE CHOCOLATE ALMOND BROWNIES
Steps:
- Preheat oven to 350 degrees F.
- Using a stand mixer with a paddle, mix the almond paste. Gradually add the eggs one at a time. Add the cocoa powder and mix until combined. Warm the melted butter and add it to the mixture until completely combined. Butter and flour mini muffin tins or flexipan molds, however, if you prefer, you can use paper liners for the muffin tin. Fill each cavity 1/8-inch from the top. Bake for 8 minutes being careful not to overbake or they will be too dry.

Steps:
- Preheat oven to 350. Spray 9X13X2 pan with nonstick cooking spray.
- Prepare Brownies as indicated on the box but add 1 tsp almond extract the same time you add the eggs. Cool. When the brownies are cool, poke holes all over the brownie's surface with a fork. (Keep the oven on).
- Put the condensed milk into a small medium sized saucepan and bring to a low boil over medium heat. Stir often so it doesn't turn the milk into caramel. Add the marshmallow cream and continue mixing until combined. Add the coconut and mix well. Spoon the coconut mixture over the cooled brownies and put it back in the oven for 8 minutes. Cool. (Turn off oven).
- In small bowl, melt chocolate chips in the microwave for a minute at a time and mix well. Continue until completely melted. Drizzle over bars. While the chocolate is still soft and unset, scatter almonds over the bars too. Cover lightly and store in the refrigerator until ready to serve.
- Cut brownies 3 lines lengthwise with a sharp knife, then 5 lines across. You'll have 18 beautiful almond-joy-ee brownies!
- Raves all around!
