Since this Thai recipe uses only a quarter pound of ground beef, this is a very inexpensive recipe - plus it's a new way to serve it. Recipe is from Cooking Light.

2 tablespoons peanut oil
1 cup thinly vertically sliced shallot
1 teaspoon salt
1 teaspoon turmeric
1/2 teaspoon ground red pepper
1/4 lb ground sirloin
4 cups finely shredded cabbage (about 1 small head)
1 cup plum tomato, cut in thin wedges (about 2 medium)
1/3 cup coarsely chopped coarsely chopped dry-roasted unsalted peanuts

Steps:

  • Heat a wok or Dutch oven over medium heat. Add peanut oil to pan, and swirl to coat. Add shallots, salt, turmeric, and red pepper; cook for 3 minutes or until shallots are tender, stirring frequently. Add beef; cook for 2 minutes or until the beef begins to brown. Add cabbage and tomato; toss well to combine. Reduce heat to medium-low; cover and cook for 10 minutes or until cabbage wilts. Stir in peanuts; cover and cook 10 minutes or until cabbage is tender.

Once upon a time, my husband told me that he didn't like cooked cabbage. "Ah ha," I thought, "a challenge!" So I made a dish based on my "Simmered Leeks" recipe that works so well, and -- let's just put it this way: he changed his mind. He loves it when I make simmered cabbage! A very simple and tasty way to use this much-maligned veggie.

1/2 head cabbage, chopped into approx 1 inch squares or pieces
1 tablespoon olive oil
1 tablespoon butter
1/2 teaspoon salt, to taste
1/4 teaspoon fresh ground pepper, to taste
1 cup chicken broth or 1 cup vegetable broth (I prefer it with the chicken)
3 tablespoons dry sherry (optional)

Steps:

  • Heat oil and butter in large heavy and wide saucepan or saute pan; add cabbage, salt, pepper, and stir over low heat for 5 minutes.
  • Add broth (I usually add a bit of sherry, too) and bring to boil, cover and simmer over medium-low heat, stirring often, for about 15 minutes or until cabbage is tender.
  • Raise heat to medium, uncover and let juices reduce to about half (be careful not to let burn).
  • Taste and adjust seasoning, serve hot.

4 quarts water
1 medium ham hock
1 large pork shank
2 tablespoons bacon drippings
1 large head cabbage - washed, cored, quartered, and cut into 2-inch slices
salt and freshly ground black pepper to taste
2 ½ cups chicken broth

Steps:

  • Combine water, ham hock, and pork shank in a large pot. Bring to a boil, reduce heat, and simmer until meat is cooked through, about 2 hours. Drain and set meat aside to cool to room temperature, about 20 minutes.
  • Remove meat from pork shank, chop into bite-sized pieces, and place in a bowl. Remove skin and meat from ham hock, chop into very small pieces, and add to the bowl, omitting skin if you prefer.
  • Heat bacon drippings in a large skillet or Dutch oven over medium-high heat until hot, but not smoking. Add 1/4 of the cabbage to the hot skillet and saute until slightly wilted, about 3 minutes. Add 1/4 of the meat mixture. Add another 1/4 of the cabbage, cooking until slightly wilted, about 3 minutes, followed by another 1/4 of the meat mixture. Repeat until all cabbage and meat have been added. Season with salt and pepper. If mixture sticks to the skillet, add 1 to 2 tablespoons chicken broth.
  • Slowly add remaining chicken broth to the cabbage-meat mixture in the skillet, give it a good stir, and reduce heat to medium-low. Simmer until cabbage is tender, 30 to 45 minutes.

1/2 tsp cayenne pepper
1/4 lb ground sirloin
4 cups shredded cabbage
1 cup thinly sliced plum tomato wedges
1/3 cup unsalted roasted peanuts, coarsely chopped

Steps:

  • Heat dutch oven over medium. Add oil and shallots, tumeric, salt, cayenne. Cook til tender, stirring. Add beef and begin to brown, then add cabbage and tomato. Reduce heat to med low and cover and cook til cabbage wilts-10 minutes. Add peanuts and cover for additional 10 minutes or so. Serve over rice.

½ cup chopped green bell pepper
2 tablespoons quick cooking oats
¾ teaspoon salt
¼ teaspoon garlic powder
⅛ teaspoon ground black pepper
1 medium head cabbage, cut into thin wedges
1 (15 ounce) can tomato sauce
¼ cup apple cider vinegar
3 tablespoons brown sugar
salt and ground black pepper to taste

Steps:

  • Place a large skillet over medium heat; cook the ground beef, onion, celery, and green bell pepper in the hot skillet until the beef is completely browned, 7 to 10 minutes. Sprinkle the oats, 3/4 teaspoon salt, the garlic powder, and 1/8 teaspoon black pepper into the beef mixture. Arrange the cabbage wedges atop the beef mixture.
  • Stir the tomato sauce, cider vinegar, and brown sugar together in a bowl; season with salt and pepper. Pour over the cabbage and beef mixture. Place a cover on the skillet and simmer until the cabbage is tender, 15 to 20 minutes.
