TARRAGON SHRIMP SALAD



Tarragon Shrimp Salad image

2 pounds (16- to 20-count) peeled and deveined shrimp (2 1/2 pounds in the shell)
3 tablespoons Pernod liqueur
Kosher salt and freshly ground black pepper
2 tablespoons freshly squeezed lemon juice
1 cup small-diced celery
3/4 cup thinly sliced scallions, white and green parts (4 scallions)
2 tablespoons minced fresh tarragon leaves, plus extra for garnish
2/3 cup good mayonnaise, such as Hellmann's

Steps:

  • Place the shrimp in a large (8-inch-diameter × 5-inch-high) saucepan and add 8 cups of cold water, the Pernod, and 1 tablespoon salt. Turn the heat to medium high and cook the shrimp uncovered, stirring occasionally, for 8 to 10 minutes, until just firm and pink. Drain in a colander.
  • Place half the shrimp in a large bowl. Cut the rest of the shrimp sideways through the back with a sharp paring knife and add them to the bowl as well. Allow to cool for 15 minutes. Stir in the lemon juice, 2 teaspoons salt, and 1 teaspoon pepper. Add the celery, scallions, tarragon, and mayonnaise, and combine. Cover and refrigerate for at least 2 hours for the flavors to meld.
  • Transfer the salad to a serving bowl, sprinkle with extra tarragon and salt, and taste for seasonings. Serve cold or at room temperature.

This shrimp salad reminds me of one of the great lunches of my life, sitting on the front porch of the wonderful grocery in Seaside, Florida...plump, pink shrimp in a fresh tarragon dressing spooned onto saltine crackers, with an ice cold beer, and great friends. From the Pat Conroy Cookbook.

1 lb shrimp, peeled and deveined (21-25 shrimp or lb.)
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon finely minced fresh tarragon
1 teaspoon fresh lemon juice
1 teaspoon tarragon vinegar
1/4 cup finely diced celery
1/4 cup finely minced scallion
1 teaspoon coarse salt
1/2 teaspoon fresh ground white pepper

Steps:

  • In a medium stockpot over high heat, bring 4 qts. of abundantly salted water to a rolling boil. Add the shrimp and cook until just pink, about 3 minutes. Immediately transfer to a colander and run under cool water to stop the shrimp from cooking any further (only takes several seconds; shrimp should still be slightly warm when dressed). Shake colander to drain any excess water.
  • In a small bowl, mix together mayo, sour cream, and tarragon. Set aside.
  • In a medium mixing bowl, toss the warm shrimp with the lemon juice and vinegar. Stir in the celery and scallions. Add the mayo mixture, salt and pepper and toss to coat. Cover and refrigerate until ready to serve. Taste to correct seasoning.

Tart, sweet green mangoes are common in Thailand but hard to find in the States. These mangoes are evergreen; they never turn that yellowish orange color. I think green Granny Smith apples are the perfect replacement for this dish if needed. The tart, sweet crunch, complemented by the smoky coconut, pairs perfectly with plump shrimp.

1 tablespoon (15 milliliters) vegetable oil
1/2 pound (240 grams) medium shrimp, sliced in half lengthwise
2 shallots, thinly sliced
2 cloves garlic, finely chopped
1 to 2 Thai chilies, thinly sliced
1/3 cup (80 milliliters) lime juice
1/3 cup (80 milliliters) fish sauce
1/2 cup (95 grams) brown sugar or palm sugar
3 cups (720 grams) matchstick-cut green mango
1 cup (75 grams) toasted coconut chips
1/2 red onion, very thinly sliced
3 scallions, cut on the bias
1/4 cup (35 grams) cashew nuts, roasted

Steps:

  • Heat a medium skillet on medium and add oil. When you see a wisp of white smoke, add the shrimp and lightly saute them for about 1 minute, then reduce the heat to low. Add the shallots, garlic and Thai chilies and cook them for an additional minute, until the shrimp are just cooked through.
  • Turn off the heat. Stir in the lime juice, fish sauce and sugar. Stir it until the sugar is dissolved. Transfer the shrimp and dressing to a serving plate. Allow to cool for a few minutes. When ready to serve, arrange the mango, coconut and red onion in the serving bowl. Toss to combine, and garnish with scallions and cashews.

1/2 cup chopped red bell peppers
2 cloves garlic, minced
2 tsp. GREY POUPON Dijon Mustard
1/4 tsp. crushed red pepper
1-1/2 lb. uncooked deveined peeled large shrimp
1/4 cup slivered almonds, toasted, finely chopped
1/4 cup chopped fresh cilantro

Steps:

  • Heat dressing in large skillet on medium-high heat. Add bell peppers, garlic, mustard and crushed red pepper; cook and stir 3 min.

4 garlic cloves
1 teaspoon coarse salt
2 teaspoons ground cumin
1 teaspoon dried oregano
2 teaspoons sweet paprika
Freshly ground black pepper
Pinch cayenne pepper (or more if you're brave!)
1 cup freshly squeezed grapefruit juice
2 limes, juiced
2 tablespoons extra-virgin olive oil
2 pounds jumbo shrimp, peeled and deveined, tails left intact
2 large ripe and firm mangos, peeled, sliced, and cut into long wedges
4 ears corn, husks and corn silk discarded
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 ripe Hass avocados, peeled, pitted, and cubed
1 lime, juiced
1 small red onion, finely chopped
1 red bell pepper, seeded and finely chopped
1 jalapeno pepper, seeded and finely minced
3 tablespoons chopped fresh cilantro or basil, plus more for garnish
2 tablespoons red wine vinegar
6 cups mixed salad greens or baby spinach

Steps:

  • Put wooden skewers in a pan of water for 30 minutes, so they don't burn on the grill.
  • To make the marinade:
  • Put the garlic on a cutting board and coarsely chop. Sprinkle with coarse salt and mash the garlic into a paste with the side of the knife. Put the garlic paste in a bowl. Add the cumin, oregano, paprika, black pepper, and cayenne. Mix to combine. Stir in the grapefruit juice, lime juice, and oil. Pour out about 1/3 of the marinade and put into a small bowl. Reserve for dressing the salad.
  • Thread the shrimp and mango onto separate skewers and put side-by-side in a baking dish. Pour the remaining marinade over the shrimp and mango; cover with plastic wrap. Put in the refrigerator and allow to marinate for about 30 minutes, flipping the skewers occasionally.
  • To make the salsa:
  • Preheat an outdoor grill or grill pan to medium-high (you may also preheat the oven broiler.)
  • Rub the corn with 2 tablespoons of the oil and season with salt and pepper. Put the corn directly on the grill grates (or put in a baking pan if using oven method) and cook until the kernels are slightly charred on all sides, turning every couple of minutes. Remove from the heat. Using a sharp knife, carefully cut the kernels off of the cobs and put in a mixing bowl. Add the avocado, lime juice, onions, bell peppers, jalapeno, cilantro, vinegar, and remaining 1 tablespoon of oil. Season with salt and pepper.
  • Grill (or broil) the shrimp until curled, pink and slightly charred on both sides, about 2 to 3 minutes total cooking time. Cook the mangos until grill marks appear, about 1 minute on each side.
  • Divide the mixed greens evenly among 4 plates. Drizzle the reserved mango marinade over the greens. Top with shrimp and mango skewers and a couple of spoonfuls of the roasted corn and avocado salsa. Garnish with some chopped cilantro serve with remaining salsa on the side.

1 small clove garlic
Kosher salt
Juice of 2 limes
1/2 teaspoon chili powder
1/4 cup extra-virgin olive oil
1 1/4 pounds cooked medium shrimp, peeled
1 ripe mango, peeled, pitted and diced
1 14-ounce can black beans, rinsed and drained
1 head romaine lettuce or 3 romaine hearts, torn into bite-size pieces
Large handful fresh cilantro leaves, chopped
1 cup mixed cherry tomatoes

Steps:

  • 1. Thinly slice the onion and soak in cold water while you prepare the rest of the salad.
  • 2. Smashed the garlic and sprinkle with a pinch of salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Transfer to a large serving bowl. Add the lime juice, 2 teaspoons salt, and chili powder. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a dressing. Toss the shrimp in the dressing.
  • 3. Add the mango, beans, lettuce, and cilantro to the bowl. Drain and dry the onion, and scatter over the salad. Gently toss the salad together and serve.

2 cups cubed mangoes (peaches are a good substitute if mangos aren't in season)
1 medium tomatoes, cubed
4 tablespoons fresh chives
4 cups salad greens (the ready to eat kind from a bag)

Steps:

  • Mix together mayonnaise, water, horseradish and mustard in mixing bowl.
  • Transfer half of the dressing to a salad bowl.
  • Pour prepared pasta in salad bowl and toss to combine with dressing.
  • Add shrimp to mixing bowl with remaining dressing and toss to cover.
  • Line two dinner plates with lettuce mix.
  • Spoon pasta on lettuce.
  • Place pepper slices over pasta and spoon shrimp and dressing on top.
  • Arrange mango on shrimp and top with tomato and chives.
  • (personally, I just mixed it all together!)

1 cup boiling water, in bowl (use microwave)
3/4 cup cold water
1 (12 ounce) bottle Heinz Chili Sauce
1 cup diced celery

  • Mix jello and boiling water; stir well for 2 minutes.
  • Add the cold water to jello mix. Mix well.

  • Preheat broiler for 15 minutes.

  • Turn shrimp over and broil for a minute on th reverse side. The shrimp should be pink and cooked through.
  • In another bowl, toss the salad greens with the salt, lemon juice, and olive oil, until the greens are fully coated.
  • In a small bowl, mix the cilantro, mango, bell pepper, and onion. Toss shrimp in this bowl. Stir shrimp with mango salsa mix.
  • Line plates with lettuce mix and add shrimp to top.
