SIMPLY TRADITIONAL LASAGNA
A traditional lasagna, with about half the time and effort! I always cook extra to have leftovers, but the more I cook, the more they eat! Serve with garlic toast and salad.

- Brown the ground beef and Italian sausage in a large skillet over medium-high heat. Drain excess grease. Stir in the water and black olives, and season with basil, garlic powder, oregano, sage, pepper, minced garlic, and onion flakes. Simmer for about 15 minutes, stirring frequently. Stir in the marinara sauce, and remove from the heat.
- Preheat the oven to 375 degrees F (190 degrees C).
- Place a layer of the meat and sauce in the bottom of a 9x13 inch baking dish. Cover with a layer of dry noodles. Spread a thin layer of ricotta cheese over the noodles, and sprinkle with a little mozzarella cheese. Cover with another layer of sauce, and repeat layering ending with the meat and sauce on top. Reserve about 1/2 cup of mozzarella cheese for later.
- Bake for 45 minutes in the preheated oven, but check after 30 minutes depending on how thick the lasagna is. Lasagna is cooked when you can easily stick a knife into it. Sprinkle the reserved cheese over the top, and return to the oven for about 10 minutes for a nice melted cheese topping.

Steps:
- Preheat the oven to 180°C/350°F.
- In a large pan, saute the onions and mushrooms in a tablespoon of olive oil or butter until the mushrooms are golden brown.
- Add the garlic, herbs and lemon juice and cook for another minute or two until the garlic is fragrant. Season to taste and set aside.
- Combine the cheese sauce, sour cream and cheese.
- Assemble the lasagna by layering the mushrooms, cheese sauce, pasta sheets and grated cheese in a baking dish. Cover with foil and place in the oven.
- Allow to bake for 40-45 minutes or until the lasagna sheets are fully cooked. Remove the foil then bake for another 10-15 minutes until the top is golden brown.

- Heat 2 tbsp olive oil in a large, deep pan and brown the chicken well. Remove and set aside.
- Add the vegetables and cook for 7-10 minutes or until they start to soften.
- Add the garlic and herbs and cook for another minute before adding the chicken back in.
- Pour in the tomatoes, stock, Balsamic and sugar.
- Cover, reduce and allow to simmer for 20-30 minutes until the sauce has reduced and thickened slightly. Season to taste.
- Layer the bolognese mixture with no-cook lasagna sheets and bechamel/cheese sauce in an oven-proof baking dish (18cm x 25cm or 7in x 10in). Add a quarter cup mozzarella cheese with each layer to make it ultra cheese. Top with cheddar cheese, mozzarella and Parmesan cheese.
- Bake at 200°C/390°F for 20-30 minutes or until a sharp knife can easily be inserted. Remove the foil and allow to bake until browned on top.
- Remove from the oven, allow to rest for at least 10 minutes then slice and serve.

CLASSIC HOMEMADE LASAGNA
Layers of pasta with from-scratch Bechamel sauce and Bolognese and cheese makes this homemade lasagna the ultimate comfort food.

- In a large pot or Dutch oven, heat a few tablespoons of olive oil. Add the meat in batches and brown well. Remove from the pot and set aside.
- In the same pot, add the onion, carrot, celery and fresh herbs. Cook for 10 minutes, stirring occassionally, until they are golden brown and starting to soften. Add the garlic and cook for another 30 seconds.
- Add the meat back into the pot with the stock, tomatoes, sugar, salt and pepper.
- Partially cover with a lid and reduce the heat. Allow to simmer for 45-60 minutes, stirring occassionally, until the sauce is rich and slightly reduced.
- While the bolognese cooks, make the bechamel sauce according to recipe instructions.
- To assemble the lasagna add a few spoons of bolognese sauce into the bottom of a deep casserole dish then add a layer of lasagna sheets. Add a few more spoons of bolognese then layer with the remaining lasagna sheets, bechamel sauce and grated cheese. Finishing with a layer of bechamel and cheese.
- Cover the lasagna loosely with foil and place in a preheated oven (180°C/350°F).
- Bake for 30-45 minutes until a knife can easily be inserted. Remove the foil and allow to bake for another 10 minutes to brown the top.
- Remove the lasagna from the oven and allow to rest for at least 15 minutes. Slice and serve.

- Grease a 3 litre ovenproof dish. Heat oil in a large pan and fry onions, garlic and carrot for 4-5 minutes Add mince and fry for 3-4 mins until brown.
- Stir in tomatoes, tomato puree, stock and seasoning. Simmer, covered, for 30 minutes.
- Melt butter, add flour and stir for 1 minute Remove from heat and gradually add milk. Bring to boil, stirring until thick. Season and add cheddar cheese.
- Preheat oven (see recipe description). Put 4 sheets lasagne in dish, cover with half meat sauce. Repeat layers, finishing with lasagne, cheese sauce and parmesan. Bake for 45 minutes.
- Take out and serve.
SIMPLY DELICIOUS LASAGNA
The best lasagna you've ever had, and so simple too! I make my own sauce for this lasagna but you can use your favorite jar sauce if you want. The cooking time does not include the time to make the sauce. It is well worth the wait to make your own sauce though!!! Enjoy!

- SAUCE:.
- Saute garlic in olive oil over medium heat until it's golden.
- If using red wine, add to the pot and reduce to half by cooking over high heat.
- Add the crushed tomatoes, tomato sauce, Italian herbs, and salt & pepper.
- Reduce heat to low and simmer uncovered for 1-3 hours, stirring occasionally.
- Add sugar, and simmer 15 more minutes.
- Makes about 2 1/2 cups.
- LASAGNA:.
- Heat oven to 350 degrees.
- Brown meat in large skillet over medium-high heat.
- Meanwhile mix ricotta cheese, Parmesan, eggs, and 4 cups mozzarella until well blended. Set aside.
- Drain meat and return to skillet.
- Stir in spaghetti sauce until well blended.
- Spread some sauce onto bottom of 13x9 inch baking dish, top with lasagna noodles, spread some ricotta cheese on top of lasagna noodles, then top with more sauce.
- Repeat layers twice.
- Top with remaining noodles and meat sauce, then top with remaining mozzarella cheese.
- Cover with foil and bake for 1 hour. Let stand for 10 minutes before cutting to serve.
- Enjoy :).
DELICIOUS LASAGNA

- Boil lasagna noodles, according to package directions.
- Sauté beef, then add salt, pepper, and some of the pureed tomatoes. Sauté the veggies in olive oil, then add garlic powder and oregano powder. Mix the beef and veggies into one pan.
- In a separate bowl, mix the Ricotta cheese, cream cheese, and some fresh chopped basil.
- Putting the lasagna together:.
- First sauce the bottom of your lasagna pan.
- Next, add a layer of lasagna noodles, followed by a layer of meat and veggies.
- Add a layer of mixed cheese (Ricotta and cream cheese), then a layer of sauce.
- After that, add a layer of shredded mozzarella.
- Repeat these steps two more times to create three layers total.
- The last layer should be mozzarella.
- Cover and then place into a preheated oven at 350°F for 1 hour or until done to your liking.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and lay noodles on a paper towel.
- In a large skillet over medium heat, cook sausage, spicing to taste, until no longer pink, and reserve.
- In a large bowl, mix the ricotta and 2 jars of spaghetti sauce. In a medium bowl, mix the Parmesan and mozzarella cheeses.
- Stir all but one cup of the cheese mixture into the ricotta mixture; stir in the sausage and chopped spinach.
- Preheat oven to 425 degrees F (220 degrees C).
- Coat the bottom of a 9x13 inch baking dish with a thin layer of spaghetti sauce. Lay 3 to 4 noodles lengthwise and side by side; then lay 3 to 4 noodles overlapping and in a staggered pattern on top.
- Add a generous layer of the sausage/cheese; repeat layers twice, until they have reach 1/2 inch from the top of the baking dish. Layer noodles on top of the lasagna and coat in the last jar of spaghetti sauce. Cover with last cup of cheese mixture and bake in preheated oven for 45 minutes or until golden brown. Slice and serve, and then see a dietician... It's deadly.

KATEL'S TWEAKED WORLD'S BEST LASAGNA
The BEST lasagna I have ever made! Adapted from John Chandler's "World's Best Lasagna" on allrecipes.com. Many reviews said he had too much salt and sugar in his recipe (some reviewers said they were "obvious typos"). I also made some changes recommended by the Allrecipes Test Kitchen, and some by other reviewers of John's recipe. The anchovy paste and red pepper flakes were my idea. I used chuck roast which I trimmed and ground myself. This time I used Taylor Dry Sherry. I used Galbani Sorrento Original Ricotta Cheese (whole milk) and had no regrets, but if available, I would buy Calabro All Natural Whole Milk Ricotta. The saying is: "people who don't like ricotta cheese have never had good ricotta cheese." The Sorrento was rich and creamy, reminding me of mascarpone, not thin and watery, reminding me of yogurt or sour cream. This lasagna was not bland and the sauce did not seem "sweet" (but it was delightful). The 19-mo.-old had seconds. Edited 5/4/15 cut ricotta to 16 oz.

- SAUCE:.
- In a large, heavy pot, cook sausage, ground beef until browned. Drain sausage and ground beef and reserve, leaving 2 tablespoons of fat in the pan. Cook onion over medium heat until well-browned (maybe 5 minutes?), but do not burn. Add garlic and cook for 30 seconds (if garlic burns, it turns bitter).
- Add drained sausage and ground beef back to pan. Stir in anchovy paste, crushed tomatoes, tomato paste, tomato sauce and wine/sherry/water. Now stir in sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, and 2 tablespoons roughly chopped Italian flat-leaf parsley.
- Bring to a boil, then reduce to a simmer. Simmer, covered, for 1 1/2 hours, stirring occasionally. (If you use an enameled cast iron Dutch oven, give yourself a pat on the back.). (The simmering cooks the sauce down to a very thick consistency.).
- Let sauce cool, then refrigerate in a covered non-reactive dish overnight to let the flavors meld.
- LASAGNA:.
- Soak raw, hard noodles in a large roasting pan with VERY hot tap water for 20-30 minute (Noodles won't be cooked but soft, and can complete its cooking in the oven.).
- (Alternatively, you may instead bring a large pot of water to a boil, seasoned with kosher salt. Boil lasagna noodles for 8-10 minutes. Drain noodles and rinse with cold water.).
- In a mixing bowl, combine ricotta cheese with eggs, 2 tablespoons parsley, 1/4 teaspoon nutmeg and 1/2 teaspoon salt.
- Preheat oven to 375 degrees F. Spray 9x13-inch baking dish with cooking spray.
- Spread 1 1/2 cups of meat sauce in the bottom of the 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with half of the ricotta cheese mixture. Top with 1/2 of the mozzarella cheese slices. Spoon 1 1/2 cups of meat sauce on top, then sprinkle with 1/4 cup grated Parmesan cheese.
- For second layer: spread 1 1/2 cups meat sauce, 6 noodles, remaining ricotta mixture, 1/4 cup Parmesan cheese, 1 1/2 cups sauce, remaining half of mozzarella slices, and 1/4 cup Parmesan cheese.
- Tear off aluminum foil to cover pan. Spray foil with cooking spray.
- Bake for 25 minutes, covered with foil, at 375 degrees F.
- Remove foil, and bake an additional 25 minutes.
- Cool 15-20 minutes before serving.
