½ cup water, plus 1 tablespoon, divided
3 cloves garlic, minced
2 large fresno chiles, minced
¼ cup sugar
⅓ cup rice vinegar
2 teaspoons kosher salt
1 tablespoon cornstarch
2 large carrots, peeled
½ lb green beans, trimmed
1 tablespoon vegetable oil
1 small yellow onion, diced
3 cloves garlic, minced
1 teaspoon fresh ginger
1 lb shrimp, peeled, deveined and finely chopped
1 tablespoon fish sauce
1 teaspoon kosher salt
1 teaspoon pepper
1 tablespoon rice vinegar
2 cups bean sprout
16 lumpia wrappers
egg wash, for brushing
canola oil, for frying

Steps:

  • Make the sweet chili sauce: In a small pot over medium heat, mix together ½ cup (120 ml) of water, the garlic, Fresno chilies, sugar, rice vinegar, and salt. Bring to a boil, then reduce the heat to low and simmer for 2 minutes.
  • In a small bowl, whisk together the cornstarch and remaining tablespoon of water.
  • Whisk the cornstarch slurry into the sauce until fully incorporated. Continue to simmer for 1 minute, or until the mixture has thickened. Remove from the heat and let cool.
  • Make the lumpia: Julienne the carrots. Cut the green beans on the diagonal.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the onion and cook for 3 minutes or until slightly tender.
  • Add the garlic and ginger, and continue cooking for 2 minutes more, until fragrant.
  • Add the carrots and green beans, and toss to combine. Add the shrimp, fish sauce, salt, pepper, and rice vinegar, and cook for 2 minutes or until shrimp is pink.
  • Add the bean sprouts, toss to incorporate, and remove the pan from the heat.
  • Lay out a lumpia wrapper in a diamond shape and spoon 2 tablespoons of filling onto the bottom of the wrapper, leaving about 1½ inches (4 cm) of space from the bottom point.
  • Fold the bottom point over the filling, then fold in the edges to create an envelope shape. Roll the wrapper toward the top point. Brush the top point with egg wash and finish the roll to seal the end. Repeat with the remaining wrappers and filling.
  • In a large, deep skillet, heat 1 inch (2.5 cm) of canola oil to 300°F (150°C).
  • Carefully add 4-5 lumpia at a time to the hot oil. Fry on each side for 1-2 minutes, or until golden brown. Note: If the lumpia are cooking too quickly or burning, reduce the heat. Remove the lumpia from the oil and drain on a wire rack or paper towels.
  • Garnish with cilantro and serve with the sweet chili sauce.

1 cup finely sliced red cabbage

1 teaspoon dark agave syrup
1 pound boneless, skinless halibut fillets
1/4 cup cornstarch
1 teaspoon chili powder
1 cup all-purpose flour
Kosher salt and freshly ground black pepper
1 1/2 cups lager beer, chilled
2 quarts canola oil
Twelve 5-inch fresh corn tortillas
1/4 cup grated Parmesan
1 cup Rojo Salsa, recipe follows
Fresh Tortilla Chips, recipe follows
2 dried ancho chiles
2 dried guajillo chiles
2 dried pasilla chiles
4 quartered Roma tomatoes, stemmed
3 cloves garlic, peeled
1 jalapeno, seeded and stemmed
1 medium sweet onion, sliced

Canola oil, for frying
24 thick, good-quality corn tortillas

Steps:

  • For the cabbage slaw: Add the cabbage to a mixing bowl and season with salt. Toss with your hands and gently massage the cabbage to tenderize. Add the cilantro and juice from the lime.
  • For the smoky chipotle aioli: Combine the mayonnaise, chipotle and agave in a small bowl. Taste and adjust the seasoning as needed.
  • For the Baja fish tacos: Carefully cut the halibut into 12 even-sized pieces (each about 4 inches long). Combine the cornstarch, chili powder and 3/4 cup flour in a large bowl and sprinkle with salt and pepper. Using a whisk, create a well in the center and slowly pour in the beer as you stir. Slowly incorporate the dry ingredients into the beer, forming a smooth batter.
  • Heat 3 inches oil in a heavy pot to 350 degrees F. Line a tray with paper towels.
  • Season the remaining 1/4 cup flour in a shallow dish with salt and pepper. Lightly dredge each piece of fish in it, shaking off any excess. Dip into the batter, then place in the hot oil. Cook, turning occasionally, until golden brown, 3 to 4 minutes. Drain on the paper towels and season with salt. Keep warm.
  • To assemble, place a large nonstick pan over medium heat. Place the tortillas in the pan 2 at a time and lightly drizzle with oil. Sprinkle with the Parmesan and cook until golden and the Parmesan is crispy and stuck to the tortilla, 30 to 40 seconds on each side.
  • To make each taco, smear a little chipotle aioli on the bottom of each tortilla. Top with some drained slaw, a piece of crispy fish and some Rojo Salsa. Serve with Tortilla Chips.
  • Remove the stems and seeds from the dried chiles, then tear them into large pieces. Toast the chiles in a large saute pan over medium-high heat until they start to change color, about 2 minutes. Remove from the heat and add hot water to just cover the chiles (about 2 cups). Place back on medium-low heat and simmer until soft and tender, 13 to 15 minutes. Remove from the heat and set aside to cool.
  • Preheat the broiler.
  • Place the tomatoes, garlic, jalapeno and onions on a baking tray, then broil until everything is charred well, turning once, 7 to 8 minutes. Transfer to a blender along with the chiles and their cooking liquid and pulse until smooth but still with a little texture. Taste and adjust the seasoning. Set aside until ready to serve.
  • Break down the salt into finer pieces in a mortar and pestle (so it sticks to the chips better).
  • Heat 5 to 6 inches oil to 350 degrees F in a heavy pot.
  • Stack up the tortillas and cut into 6 even pieces. Working in batches, sprinkle into the hot oil and cook, stirring so they don't stick together, until puffed and golden, 2 to 3 minutes. Drain and place on a rack over a tray. Season with salt immediately. Serve warm with salsa.

Lumpia is the Phillipino version of a Chinese egg roll. The skins used, though, are light and flaky instead of doughy. They are similar to a Vietnamese spring roll but more loaded with meat, and very skinny. They are addicting and easy to eat; you can make a bunch ahead and freeze them either before or after frying.

2 cloves garlic, crushed or pressed
2 stalks green onion, finely chopped
1/4 large yellow onion, finely chopped
3 ounces shiitake mushroom caps, finely chopped (about 4 caps, stems removed)
4 ounces sliced water chestnuts, finely chopped
1 pound (26- to 30-count) shrimp, peeled and deveined
1/2 pound ground pork
2 teaspoons soy sauce
1 teaspoon Thai fish sauce or patis
1 teaspoon brown sugar
1/2 teaspoon ground pepper (white or black)
2 quarts neutral frying oil
30 lumpia or spring roll pastry wrappers, thawed
1 large egg, beaten
1/4 cup sweet chile sauce
1 tablespoon cane or distilled white vinegar, or more to taste

Steps:

  • In a food processor, chop the garlic as small as possible. Add the green onion and yellow onion and pulse to a similar size as the garlic. Add and pulse the shiitake mushroom caps and water chestnuts until all are a similar size. Add the shrimp and pulse until the shrimp are a coarse hamburger grind. Add the ground pork, soy sauce, fish sauce, brown sugar and pepper and mix all thoroughly. Transfer to a bowl, then cover with plastic wrap and refrigerate for 30 minutes.
  • Preheat 1 inch frying oil to 350 to 360 degrees F in a heavy-bottomed pot.
  • Carefully peel one wrapper off the stack. Orient the wrapper square to the edge of the counter, not diagonal. Scoop about a heaping tablespoon (approximately 1 ounce) of the filling and spread it about an inch from the edge closest to you and about 1/2 inch from each side. Brush all of the edges with the egg wash. Fold the edges in on the sides and begin rolling the bottom of the wrapper to the top, making a tight rope. Make sure when you finish rolling that the egg wash has sealed the roll. Place the lumpia seam-side down on a plate while you make the remaining lumpia. (This amount of filling should make approximately 30 rolls. (These could be made smaller for appetizers.)
  • Fry in batches until golden brown and cooked through, about 3 minutes. Remove to drain on a rack or paper towels. Serve hot with sweet chile sauce mixed with vinegar to taste.

2 chipotle peppers in adobo sauce, chopped
1 lemon, juiced

½ teaspoon crushed red pepper flakes
¼ teaspoon cayenne pepper
2 pounds uncooked medium shrimp, peeled and deveined

Steps:

  • Mix together the garlic, chipotle peppers, lemon juice, olive oil, paprika, cilantro, kosher salt, black pepper, red pepper flakes, and cayenne pepper in a bowl. Stir in the shrimp, and mix well to thoroughly coat. Marinate for 30 minutes in refrigerator.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the shrimp from the marinade, and discard excess marinade. Thread about 5 shrimp per skewer, and grill on the preheated grill until the shrimp turn pink and opaque in the center, about 2 minutes per side.

Lumpia are Chinese-style egg rolls from the Philippines. They are in the hall of fame with Vietnamese spring rolls and Thai bo bia rolls. All were inspired by the Chinese influence in the respective countries, but I think lumpia are the most delicious. The skins are thinner and the filling is finely ground. Paired with palm vinegar, they are the perfect snack food.

Number Of Ingredients 16

1 pound medium shrimp, peeled and deveined (about 26 to 30 shrimp)
2 cloves garlic, crushed or pressed
2 green onions, finely chopped
1/4 yellow onion, finely chopped
3 ounces shiitake caps, finely chopped (about 4 caps, stems removed)
4 ounces sliced water chestnuts, finely chopped
8 ounces ground pork
1 teaspoon patis (Filipino fish sauce) or Thai fish sauce
2 teaspoons Japanese soy sauce
1 teaspoon brown sugar
1/2 teaspoon ground white pepper (can substitute black pepper)
30 lumpia wrappers or spring roll pastry wrappers, thawed
1 large egg, beaten
2 quarts neutral frying oil, such as peanut or canola
1/4 cup sweet chile sauce
1 tablespoon cane vinegar or distilled white vinegar

Steps:

  • Using a small food processor, chop the shrimp to a coarse grind resembling hamburger meat. Remove to a large mixing bowl.
  • In the same food processor, chop the garlic as small as possible. Add the green onion and yellow onion and pulse to a similar size as the shrimp. Remove the onion mixture to the mixing bowl with the shrimp. Next pulse the shiitake caps and sliced water chestnuts. Add the pork to the food processor and pulse once more. Add to the mixing bowl.
  • Add the fish sauce, soy sauce, brown sugar and white pepper to the mixing bowl. Mix all the ingredients thoroughly, cover with plastic wrap and refrigerate for 30 minutes.
  • Carefully peel one lumpia wrapper off the stack. Orient the wrapper square to the edge of the counter, not diagonal. Scoop about 1 heaping tablespoon of the filling (approximately 1 ounce) and spread it about an inch from the edge closest to you and about 1/2 inch from each side. Fold the edge closest to you past the filling, then using the fingertips, pull and concentrate the filling into a tight rope close to you. Next, roll away from you to form a thin eggroll shape, stopping about 1 1/2 inches from the edge. Fold one end inward and using a brush or fork, apply a minimal amount of beaten egg to the edge and folded-in end as glue. Finish rolling to complete the roll. Place the lumpia seam-side down on a plate while the remainder are formed. You should have approximately 30 rolls.
  • Heat 1 inch of the frying oil to 340 to 350 degrees F in a large, heavy-bottomed pot. When the oil is at temperature, fry the lumpia in batches until golden brown and cooked through, about 3 minutes. Remove to drain on a wire rack or paper towels.
  • Mix the sweet chile sauce and vinegar and serve with the hot rolls. You can adjust the amount of vinegar to taste.

36 Mexican shrimp, 16 to 20 size
2 1/4 teaspoons minced ginger
1 1/2 tablespoons chopped chives
1 1/8 teaspoons chipotle sauce
Kosher salt
White pepper
1 1/2 tablespoons flour
1 1/4 tablespoons water
9 large square spring roll wrappers
1 1/8 quarts vegetable oil
6 cloves garlic
3 tablespoons olive oil
3/8 cup mayonnaise
3/8 cup sour cream
3/4 teaspoon lemon juice
1 1/2 stalks garlic chives, chopped
3 tablespoons chipotle sauce, to taste

Steps:

  • On 12 of the shrimp, remove all but the tail, then butterfly, devein, and set aside.
  • For the shrimp filling: Peel the remaining shrimp, devein and mince into a paste. Mix with ginger, chives, chipotle sauce, salt, and pepper. Adjust seasoning after sauteeing a small amount of the mixture and tasting.
  • For the glue paste: Mix together the flour and water to form a paste. Cut the spring roll wrappers on the diagonal to create 2 triangles. Take a teaspoon of the shrimp filling and lay it into the cut of a butterflied shrimp. Repeat with the remaining shrimp and filling. Place the shrimp on the base edge of a spring roll triangle with the tail sticking out and the apex to the top. Roll the shrimp to 2/3 along the base, then fold over the top of the triangle to enclose the shrimp. Roll to the ends and secure with the glue. Refrigerate for at least 2 hours and up to 2 days.
  • For the aioli: Preheat the oven to 250 degrees F.
  • Roast the garlic and olive oil in a small pan for 45 minutes, or until soft. Remove from heat, cool and mash. Add mayonnaise, sour cream, lemon juice, garlic chives, chipotle sauce, and salt. Refrigerate until ready to use.
  • Heat oil to 365 degrees F.
  • Fry shrimp for 3 minutes, or until brown. Remove from oil and drain on a paper towel lined plate. Let cool for a few minutes. Serve with aioli sauce.

3/4 pound (12/15 count) shrimp (translation: 12 to 15 shrimp to a pound)
1 tablespoon dried oregano
1/2 tablespoon dried thyme
1 teaspoon lemon pepper (a mixed spice seasoning), or dried lemon peel
1/4 to 1/2 teaspoon ground chipotle chile (may be replaced with cayenne pepper, but only after you've been to hell and back searching for chipotle)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 tablespoons olive oil
Cilantro Dipping Sauce, recipe follows
1 cup lightly packed fresh cilantro leaves, stems discarded before measuring
3 tablespoons freshly squeezed lime juice
1/2 cup sour cream

Steps:

  • Shell, clean, and devein shrimp. I leave the tails on for aesthetic reasons. Pat dry with a paper towel.
  • In a medium-size bowl, mix oregano, thyme, lemon pepper, chipotle, salt, and black pepper. Toss shrimp thoroughly with mixed spices. Keep refrigerated until ready for cooking.
  • Heat oil in a well-seasoned iron skillet or nonstick pan over high heat. Wait until oil is smoking hot, then place about 10 shrimp in it so that each has enough room to lie on its side. Cook for approximately 1 1/2 minutes per side, or until shrimp is no longer translucent. Do not overcook.
  • Serve hot, or at room temperature, with cilantro dipping sauce. For that special surreal touch, serve shrimp piled up on a barbie doll.
  • Blend cilantro and lime juice in a food processor or blender until cilantro is liquefied. Pour into a small bowl and use a fork to blend in sour cream until fully blended into a pale green sauce. Refrigerate until ready for use.
