BIBB LETTUCE AND SHRIMP WRAPS

Bibb Lettuce and Shrimp Wraps image

I like the idea of a wrap for spring or summer because it's really light and fun to eat. You can also top this with some salsa.

Provided by Alex Guarnaschelli

Categories     appetizer

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 17

1/4 teaspoon salt
2 tablespoons dry sherry
Juice of 1 lemon
4 tablespoons extra-virgin olive oil
1 tablespoon sherry vinegar
Juice and zest of 1 lemon
12 to 16 medium Bibb lettuce leaves, thoroughly washed
1/4 cup dry-roasted peanuts, coarsely chopped
2 tablespoons extra-virgin olive oil
2 medium cloves garlic, peeled, minced
1 red onion, peeled, halved and thinly sliced
Small bunch fresh thyme, tied with string
Sea salt and freshly ground black pepper
1 tablespoon finely grated fresh ginger
1 tablespoon extra-virgin olive oil
12 U-10 shrimp, each cut into 3 equal pieces
1/2 teaspoon paprika

Steps:

  • For the onions: Heat the oil in a medium saute pan over medium heat. Add the garlic, onions and thyme and sprinkle with salt and black pepper. Cook until translucent, 3 to 5 minutes, and then add 1/2 cup water. Continue cooking until the onions are tender, 10 to 15 minutes. If the liquid reduces too much, add a little more water. Taste for seasoning, adding more salt and pepper as needed. Stir in the ginger. Remove from the heat and discard the thyme.
  • For the shrimp: Heat a large skillet over medium-high heat and add the oil. Toss the shrimp with the paprika and salt in a bowl, stirring to coat. When the oil begins to smoke, shut off the heat, add the shrimp to the skillet and toss around with a metal spatula so they are coated with oil and cook more evenly. Stir in the sherry. Turn the heat back on to medium-high and cook until the shrimp are no longer translucent, 1 to 2 minutes. Season with more salt and pepper. Squeeze the lemon juice over and remove from the heat. Reserve any cooking liquid (if there is any). Stir the onion mixture into the shrimp.
  • For the vinaigrette: Whisk together the olive oil, vinegar and lemon juice and zest in a small bowl. Add in any cooking liquid from the shrimp. Whisk to blend. Season with salt and pepper. For assembly: Spoon a little of the onion and shrimp mixture onto the bottom of each Bibb leaf. Top each with a sprinkle of the peanuts and drizzle with the vinaigrette. Serve any remaining vinaigrette on the side.

2 tablespoons smoked paprika
1 teaspoon garlic powder
1 teaspoon ground coriander
Kosher salt and freshly cracked black pepper
Olive oil, for drizzling
8 lettuce cups

BIBB LETTUCE SALAD

Bibb Lettuce Salad image

Yield Makes 4 servings

Number Of Ingredients 9

4 heads Bibb lettuce
Kosher salt and freshly ground black pepper
2 tablespoons minced shallots
2 tablespoons minced chives
1/4 cup Italian parsley leaves
1/4 cup tarragon leaves
1/4 cup chervil leaves
1/2 cup House Vinaigrette
1 tablespoon plus 1 teaspoon fresh lemon juice

Steps:

  • Carefully cut out the core from each head of lettuce and separate the leaves, but keep each head of lettuce together; discard any tough outer leaves. Because each head of lettuce will be reassembled, the easiest way to work is with one head at a time. First, place the leaves in a bowl of cold water to refresh them and remove any dirt, then lift out and spin-dry in a salad spinner.
  • Place the leaves from a single head of lettuce in a bowl. Sprinkle with a pinch of salt, a few grinds of pepper, 1 1/2 teaspoons of the shallots and chives, and 1 tablespoon each of the parsley, tarragon, and chervil. Then toss gently with 2 tablespoons of the vinaigrette and 1 teaspoon of lemon juice. Repeat with the remaining heads.
  • For each serving, arrange the outer lettuce leaves as a base on the plate and rebuild each head of lettuce, ending with the smallest, most tender leaves.

SHRIMP AND CORN SALAD

Shrimp and Corn Salad image

From RealSimple. I make this in huge batches and eat on it for days! It's so good on top of a little arugula with goat cheese. I sometimes use chicken and pine nuts instead of shrimp and pumpkin seeds--sort of sub out according to what I have around.

GRILLED CORN AND SHRIMP SALAD

Grilled Corn and Shrimp Salad image

Categories     Salad     Quick & Easy     Backyard BBQ     Shrimp     Corn     Grill     Grill/Barbecue     Watercress     Gourmet

Yield Serves 6

Number Of Ingredients 9

6 ears of corn
1/3 cup olive oil plus additional for brushing the corn and the shrimp
1 pound medium shrimp (about 25), shelled and deveined
1 red onion, chopped fine
1 large fresh jalapeño chili including the seeds, minced (wear rubber gloves)
1/3 cup loosely packed fresh coriander, chopped fine
3 tablespoons fresh lemon juice
1 tablespoon white-wine vinegar
2 bunches of watercress, rinsed well, spun dry, and coarse stems discarded

Steps:

  • Brush the corn with some of the additional oil and grill it on a rack set about 6 inches over glowing coals, turning it, for 15 minutes, or until it is golden brown. Let the corn cool until it can be handled. Working over a bowl, with serrated knife cut the kernels from the cobs and with the back of the knife scrape the pulp from the cobs. Brush the shrimp with some of the additional oil, grill them on the rack, turning them, for 6 to 8 minutes, or until they are cooked through, and transfer them to the bowl. Stir in the onion, the jalapeño, and the coriander
  • In a small bowl whisk together the lemon juice, the vinegar, and salt and pepper to taste, add the remaining 1/3 cup oil in a stream, whisking, and whisk the dressing until it is emulsified. Pour the dressing over the corn mixture and combine the salad well. Divide the watercress among 6 plates and spoon the salad over it.

CHOPPED SALAD IN LETTUCE CUPS

Chopped Salad in Lettuce Cups image

Now, I can make many different versions of salads to put into these lettuce cups. From ... Cobb, Mediterranean, chopped, traditional, lettuce tomato, onion ... or you can make a all vegetable salad, a Mexican black bean and corn salad, fruit salad, chicken, shrimp or crab salad. The method is the same. But I love serving these at dinner parties. My last one I served a version of a caesar salad and put them in lettuce cups and served at a dinner party. They were a big hit. So, my favorite is a simple chopped salad, I love the traditional version for this.

Provided by SarasotaCook

Categories     Salad Dressings

Time 15m

Yield 8-10 Lettuce Cups, 8-10 serving(s)

Number Of Ingredients 16

8 lettuce leaves (you can use radicchio, bibb, boston, or anything you like)
2 cups chopped iceberg lettuce
2 plum tomatoes, diced (slightly seeded)
2 hard-boiled eggs, diced
1/4 cup chopped bacon
1 small red onion, diced
1/2 cup cucumber, diced (skin on)
1/4 sup sliced black olives
1/4 cup red wine vinegar
1/2 cup olive oil
1 1/2 tablespoons lemon juice
1/2 teaspoon dried oregano
1/2 teaspoon Dijon mustard
1/4 teaspoon minced garlic
salt
pepper

Steps:

  • Dressing -- Add all the ingredients and mix well. Just set to the side.
  • Salad -- In a large bowl add all the ingredients and toss well. Now remember -- you can add anything, these are just my favorites. Make IT YOUR salad. I just like to chop well so it is easy to fit into the lettuce leaves.
  • Toss and Fill -- I just like to toss the chopped salad with a little of the dressing, not too heavy and then fill into the lettuce leaves. My favorite is radicchio or bibb, but you can use any type of leaf you want. You can also secure the leaf with a tooth pic too which is fun and then serve small cups of extra dressing on the side.
  • Now if you are a buttermilk type dressing by all means, or a balsamic dressing. You can really use your favorites here. It is more the method and the technique which just makes it really fun to serve at parties. Just have fun with them.
