4 boneless and skinless chicken breasts
2 tbsp garlic parsley salt
1 tbsp paprika
4 tbsp Unsalted Butter
6 oz softened cream cheese
1/3 cup parmesan cheese
2 tbsp mayonnaise
1 cup chopped spinach
2 galic cloves (pressed)

Steps:

  • In a large bowl, combine softened cream cheese, mayonnaise, parmesan cheese, garlic and chopped spinach. Set aside.
  • Butterfly the chicken breasts (see detailed instructions above).
  • Season each breast with garlic parsley salt and paprika on all sides.
  • Stuff each chicken breast with the cheese mixture. To keep the filling inside, seal each end of the breast with a toothpick.
  • Preheat a skillet with butter over medium-heat. Brown all sides of the chicken. Continue cooking over medium-heat until the internal temperature reaches 165 °F.

3 1/2 cups chopped baby spinach (about 8 ounces)
1/4 cup crumbled low-fat feta cheese
3 skinless, boneless chicken breasts (8 to 10 ounces each), trimmed
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup low-sodium chicken broth
2 tablespoons white wine vinegar
2 tablespoons finely chopped sun-dried tomatoes
8 ounces ditalini (about 1 3/4 cups)
1 tablespoon chopped fresh mint

Steps:

  • Combine 2 cups spinach, the feta and 3 tablespoons water in a bowl. Insert a paring knife into the thickest part of each chicken breast, cutting along the side to make a deep 2-inch-wide pocket. Stuff the spinach mixture into the pockets.
  • Heat a large nonstick skillet over medium heat and add the olive oil. Season the chicken with salt and pepper. Add to the skillet, rounded-side down, and cook until browned, about 3 minutes per side. Add the chicken broth, vinegar and sun-dried tomatoes. Partially cover and cook until the chicken is just cooked through, about 15 minutes.
  • Meanwhile, bring a pot of salted water to a boil. Add the ditalini and cook as the label directs. Put the remaining 1 1/2 cups spinach in a colander; drain the ditalini over the spinach to wilt it. Return to the pot.
  • Remove the chicken to a cutting board and slice. Add the pan sauce to the ditalini along with the mint and 1/4 teaspoon salt; toss. Serve with the chicken.

40g dried porcini mushrooms
3 tbsp olive oil
1 shallot , finely chopped
1 garlic clove , finely chopped
100g baby leaf spinach
150g ricotta
50g firm mozzarella , coarsely grated
20g parmesan , finely grated
4 skinless chicken breasts
4 slices prosciutto

Steps:

  • Boil the kettle, tip the mushrooms into a small bowl, pour over boiling water to just cover, then leave to soak for 15 mins. Drain and squeeze out the mushrooms (save and freeze the liquid to make a base for a gravy) and roughly chop.
  • Heat the oil in a frying pan and gently cook the shallots and garlic for 3 mins. Turn up the heat, throw in the mushrooms and cook for a few mins more. Add the spinach, turn the heat up to high and cook until wilted and all the liquid has evaporated. Tip into a bowl and leave to cool. Beat in the cheeses and season with loads of pepper and a little salt. Set aside.
  • Take the chicken breasts and remove the small fillet from the back. Cut a slit into the side of each chicken breast then stuff each one with a quarter of the spinach mixture, closing it with the cut-off fillet. Carefully wrap each stuffed chicken breast in a slice of prosciutto and chill until needed. Can be prepared up to a day ahead.
  • To cook, heat oven to 200C/180C fan/gas 6. Line up the chicken on a baking tray and roast for 20-25 mins until the prosciutto is frazzled at the edges, the cheese is oozing out and the chicken is cooked through.

This recipe is adapted from Michel Richard, the chef of the French-California restaurant, Citrus, in Los Angeles, and his three less-ambitious French-California restaurants in Santa Barbara, Calif., Washington and Baltimore -- all called Citronelle.

8 cups stemmed and coarsely chopped spinach (about 10 ounces)
2 tablespoons unsalted butter
1 small Spanish onion, chopped
2 cloves garlic, finely chopped
1 tablespoon Champagne vinegar
1 cup homemade or low-sodium chicken broth
1 teaspoon granulated sugar
1/4 teaspoon curry powder
Kosher salt and freshly ground pepper to taste
3 tablespoons olive oil
1 1/2 pounds shiitake mushrooms
2 large shallots, coarsely chopped
2 large cloves garlic, finely chopped
Kosher salt and pepper to taste
6 large boned and skinned chicken breast halves, tenderloins removed and reserved (about 2 1/4 pounds)
2 tablespoons plain bread crumbs

Steps:

  • To make the sauce, in a large pot of salted boiling water, cook the spinach until deep green, about 45 seconds. Drain it and transfer to a plate to cool. When cool enough to handle, squeeze out the excess liquid and set aside.
  • In a medium saucepan over medium heat, heat the butter. Add the onion and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic, vinegar, broth, sugar and curry and bring to a boil. Boil until reduced by a third, about 1 1/2 minutes. Stir in the spinach and return to a boil. Remove from the heat and set aside.
  • When the spinach mixture has cooled, transfer to a blender and puree until smooth. Season with salt and pepper and set aside.
  • To make the chicken, in a large skillet over high heat, heat 2 tablespoons of the oil. Add the mushrooms, shallots and garlic and cook, stirring occasionally, until lightly browned and soft, about 6 minutes. Season with salt and pepper. Transfer the mushroom mixture to a baking sheet in an even layer and set aside to cool.
  • Preheat the oven to 300 degrees. When the mushroom mixture is cool, transfer to a food processor with the chicken tenderloins and pulse until a paste forms. Divide the paste into 6 equal portions. Season the chicken breasts with salt and pepper. On a work surface, lay out a 12-inch length of heavy-duty plastic wrap and place 1 portion of the paste in the center. Fold the plastic in half and, using a rolling pin, flatten the paste until slightly larger than half a chicken breast. Unfold the plastic and place a piece of chicken, smooth-side down, on the paste and gather the plastic up and around the breast. Cut the excess plastic and discard. Transfer the wrapped chicken, paste-side up, to a parchment-lined baking sheet. Repeat with the remaining paste and chicken breasts. Bake until firm and cooked through, about 25 minutes. (The plastic will not melt.)
  • Remove the chicken from the oven and preheat the broiler. Carefully unwrap the plastic and return the breasts, paste-side up, to the baking sheet relined with foil. Brush with the remaining tablespoon of oil and lightly sprinkle with bread crumbs. Broil until golden brown, about 3 minutes. Set aside for 5 minutes.
  • Reheat the sauce. Slice the breast halves on the diagonal and arrange each one on a plate, fanning out the slices. Ladle the sauce alongside each breast and serve.

6 boneless, skinless chicken breasts
1 pound crimini mushrooms
2 tablespoons butter
Kosher salt and freshly cracked black pepper
6 ounces softened goat cheese
3 tablespoons olive oil
1 recipe Mushroom Wine Sauce, recipe follows
1 recipe Sauteed Fingerling Potatoes, recipe follows
1/4 cup freshly chopped parsley leaves, for garnish
1 1/2 cups dried shiitake mushrooms
1/4 cup chicken stock
1/4 cup white wine
1 tablespoon butter, cold
2 cups boiling water
Kosher salt and freshly cracked black pepper
1 1/2 pounds fingerling potatoes
4 tablespoons unsalted butter
Kosher salt and freshly cracked black pepper

Steps:

  • Place the chicken breasts, 1 by 1, between 2 pieces of plastic wrap and pound with a meat mallet or rolling pin until about 1/2-inch thick. Set aside.
  • Stem the mushrooms and place the caps and stems separately in a food processor and process until finely chopped. Melt the butter in a medium-sized saute pan over medium-high heat and add the mushrooms. Cook until the mushrooms have released their liquid, and saute until all the liquid has evaporated. (This is called a duxelle.) Season well with the salt and pepper. Set aside.
  • Smear each chicken breast with some of the goat cheese and top with some of the duxelle. Roll the breast up and tie with the kitchen twine. Season with the salt and pepper. In a large saute pan over medium-high heat, heat the olive oil and sear the chicken on all sides. Continue to saute until the chicken is cooked through and golden brown, about 10 to 15 minutes. Allow to sit 5 minutes before removing the kitchen twine and slicing each rolled breast into 4 to 5 slices. Top with some of the remaining duxelle and several spoonfuls of the Mushroom Wine Sauce. Serve with the Sauteed Fingerling Potatoes, garnished with the chopped parsley.
  • Place the shiitakes in a mixing bowl and add the boiling water. Allow to sit undisturbed 15 to 20 minutes, until the liquid is richly fragrant and has taken on the earthy flavor of the mushrooms. Strain and reserve the liquid. Discard the mushrooms or reserve for another use. In a small saute pan over medium-high heat, bring the mushroom liquid to a strong boil and reduce by half. Add the wine and chicken stock, reduce by 1/2 again. Remove from heat and add the butter, swirling the pan until the butter is incorporated and the sauce is glossy and shiny. Season with the salt and pepper.
  • Using the mandoline or a knife, slice the potatoes into thin rounds of uniform thickness. Melt the butter in a large saute pan over medium-high heat and saute the potatoes until cooked through with a golden, crispy crust. Season with the salt and pepper.

I haven't made this in years, but when I found this recipe again it all came flooding back. This is a little more complicated to make but the taste is wonderful.

6 large chicken breasts
1 medium onion, chopped
2 cups spinach
12 fresh shiitake mushrooms, sliced (button mushrooms can be substituted)
2 cups white wine, divided
1 cup cheddar cheese
1 cup monterey jack cheese
fresh basil, to taste
salt, to taste
pepper, to taste
6 red pepper flakes (optional)
2 tablespoons butter

Steps:

  • Pound chicken breasts until they are flat and can handle stuffing easily.
  • In a saute pan, melt butter over medium heat.
  • Add onion and cook until almost caramelized.
  • Add 1/2 cup of wine, mushrooms and the spinach.
  • Put a lid on the pan and let the spinach steam for approximately 3 minutes, or until the wine is gone.
  • Add another 1/2 cup of wine and cook uncovered until the liquid is gone.
  • Stir frequently to keep it from sticking.
  • Add salt, pepper and basil, then taste.
  • This is the time for the red pepper flakes if you feel it is needed.
  • Cook for another minute.
  • Grate cheeses. Place a healthy pinch of the cheese mixture on each chicken breast.
  • Add between 1-2 tablespoons of mushroom mixture to each breast, depending on the size of the flattened breast.
  • Roll the chicken breast and place them roll side down in a baking dish.
  • Bake for 30 minutes at 400 degrees. Check to make sure the juices run clear.
  • While the chicken is baking, add the rest of the wine to the leftover mushroom mixture and cook on high for a few minutes. You want to leave a little of the liquid this time.
  • If you want more cheese, add the leftover cheese mixture to the top and bake until melted. Otherwise, set the rest of the cheese aside for something else.
  • Serve with the mushroom sauce, and nice salad and homemade mashed potatoes.

Large plastic food storage bags or waxed paper
1 package, 10 ounces, frozen chopped spinach
2 tablespoons butter
12 small mushroom caps, crimini or button
2 cloves garlic, cracked
1 small shallot, quartered
Salt and freshly ground black pepper
1 cup part skim ricotta cheese
1/2 cup grated Parmigiano or Romano, a couple of handfuls
1/2 teaspoon fresh grated or ground nutmeg
Toothpicks
2 tablespoons extra-virgin olive oil
2 tablespoons butter
2 tablespoons flour
1/2 cup white wine
1 cup chicken broth

Steps:

  • Place breasts in the center of a plastic food storage bag or 2 large sheets of waxed paper. Pound out the chicken from the center of the bag outward using a heavy-bottomed skillet or mallet. Be firm but controlled with your strokes.
  • Defrost spinach in the microwave. Transfer spinach to a kitchen towel. Twist towel around spinach and wring it out until very dry. Transfer to a medium-mixing bowl.
  • Place a nonstick skillet over moderate heat. When skillet is hot, add butter, mushrooms, garlic and shallot. Season with salt and pepper and saute 5 minutes. Transfer mushrooms, garlic and shallot to the food processor. Pulse to grind the mushrooms and transfer to the mixing bowl, adding the processed mushrooms to the spinach. Add ricotta and grated cheese to the bowl and the nutmeg. Stir to combine the stuffing. Return your skillet to the stove over medium high heat.
  • Place a mound of stuffing on each breast and wrap and roll breast over the stuffing. Secure breasts with toothpicks. Add 3 tablespoons oil to the pan, 3 turns of the pan. Add breasts to the pan and brown on all sides, cooking chicken 10 to 12 minutes. The meat will cook quickly because it is thin. Remove breasts; add butter to the pan and flour. Cook butter and flour for a minute, whisk in wine and reduce another minute. Whisk in broth and return breasts to the pan. Reduce heat and simmer until ready to serve. Remove toothpicks. Serve breasts whole or, remove from pan, slice on an angle and fan out on dinner plates. Top stuffed chicken breasts or sliced stuffed breasts with generous spoonfuls of the sauce.

2 tablespoons olive oil or vegetable oil
1/4 pound shiitake or small white mushrooms, washed and dried
8 small white onions, peeled
4 sprigs fresh rosemary, or 1 tablespoon dried
2 tablespoons finely chopped shallots
1/4 cup dry white wine
3/4 cup fresh or canned chicken broth
2 tablespoons butter
2 tablespoons finely chopped parsley

Steps:

  • Sprinkle the chicken breasts with salt and pepper.
  • Heat the oil in a heavy skillet and add the chicken breasts, the mushrooms and the onions. Cook about 5 minutes over medium heat or until lightly browned. Turn the pieces and cook 5 minutes more, shaking the pan and turning the mushrooms and onions so they brown evenly. Remove chicken breasts, and keep them warm. Pour off fat from the pan.
  • Add the rosemary and shallots and cook briefly, until wilted. Add the wine and cook, stirring and scraping to dissolve the brown particles that cling to the skillet.
  • When the wine is almost reduced by half, blend in the chicken broth. Continue cooking and when the sauce is reduced by half, stir in the butter. Remove pan from stove immediately. Pour sauce over chicken, sprinkle with the parsley and serve.

  • Add the spinach, and saute for 1 minute longer, until just wilted, but still bright green and not mushy.
  • Season to taste with salt and pepper, remove from heat, and let cool enough to handle.
  • Squeeze about half of the spinach dry using your hands; you should have a tennis ball size mass after squeezing.
  • Refrigerate the remaining spinach for another use, and coarsely chop the squeezed ball of spinach.
  • Preheat the oven to 375 degrees F.
  • Spray an 8"x8" baking pan with nonstick cooking spray.
  • In a small bowl, mix the optional roasted red peppers with the olives, capers, optional walnuts, and balsamic vinegar.
  • Combine this mixture with the softened goat cheese, and set aside.
  • If desired, divided in quarters, and refrigerate until firm (recommended, but not required).
  • Sprinkle both sides of the chicken breasts with salt and pepper, and place breasts skin-side down on a flat surface.
  • Spread about one quarter of the spinach mixture in the center of each pounded chicken breast.
  • Evenly divide the goat cheese mixture among the chicken breasts, placing a piece in the center of each breast.
  • Fold the sides of each breast up and around the filling to form a more or less ball shaped package, sealing the bottom of the chicken packages as well as possible without getting fanatical about it.
  • Place the chicken in prepared baking pan, pretty side up.
  • Brush with about half of the butter, and sprinkle to taste with salt and pepper.
  • Cover with aluminum foil, and bake in preheated oven for 25 minutes.
  • Turn oven to broil.
  • Uncover chicken, brush with remaining butter, and sprinkle with a little optional paprika, if desired, and broil just until the chicken is nicely browned.
  • Place the chicken on a serving platter and sprinkle with parsley if desired.
  • Serve with brown rice and a spinach salad dressed with vinaigrette and homemade croutons.

5 ounces frozen chopped spinach, thawed and well drained
2 tablespoons freshly grated parmesan cheese
1 teaspoon grated lemon peel
1/4 teaspoon ground black pepper
1 cup thinly sliced mushroom
low-fat turkey ham
1 cup white grape juice

Steps:

  • Place each chicken breast half between two slices of plastic wrap and pound with meat mallet until 1/4 inch thick.
  • Preheat oven to 350°F.
  • Pat spinach dry with paper towels.
  • Combine spinach, Parmesan, lemon peel and black pepper in a large bowl.
  • Spray a small nonstick skillet with cooking spray; add mushrooms.
  • Cook over medium heat 3-4 minutes or until tender, stirring frequently.
  • Arrange 1 1/2 slices of turkey ham over each chicken breast.
  • Spread each with 1/4 of spinach mixture.
  • Top each with 1/4 of mushrooms.
  • Beginning with longer side, roll chicken tightly; tie with kitchen string or secure with toothpicks.
  • Place rolls in 9-inch square baking pan, seam side down.
  • Lightly spray chicken with cooking spray.
  • Pour grape juice over chicken rolls.
  • Bake 30 minutes or until chicken is no longer pink.
  • Remove string or toothpicks; cut rolls int 1/2-inch diagonal slices.

1 small onion, chopped
10 ounces spinach, steamed
1/4 cup feta cheese, crumbled
1 teaspoon lemon zest
1 teaspoon salt, divided
12 teaspoons black pepper, divided
1 lb boneless skinless chicken breast, pounded thin

Steps:

  • In large nonstick skillet, heat 1 teaspoon oil over medium high heat; saute onion until golden, minutes.
  • In medium bowl, combine onion, spinach, zest, feta, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Divide onion-spinach mixture over chicken, roll up and secure with toothpicks; sprinkle with remaining salt and pepper.
  • In same skillet, heat remaining 2 teaspoons oil over medium high heat.
  • Cook chicken, turning occasionally until golden brown and cooked through, about 10 minutes.

8 ounces portabella mushrooms, roughly chopped
4 ounces shiitake mushrooms, roughly chopped
4 tablespoons butter
4 ounces shallots, roughly chopped
2 cloves garlic, chopped
3 tablespoons cognac
2 quarts well-washed spinach
1 pinch nutmeg
4 boneless skinless chicken breasts
salt and pepper
1/4 cup dry white wine
4 tablespoons clarified butter
1 quart strong brown chicken broth
2 tablespoons cognac
1 tablespoon lemon juice
3 tablespoons heavy cream
1 tablespoon butter
salt and pepper

Steps:

  • For the chicken, mince the mushrooms in a food processor and wring out in a kitchen towel to remove as much moisture as possible.
  • Sauté in a pan with butter.
  • Put shallots and garlic in food processor and pulse to mince, then add to mushrooms.
  • Cook mixture slowly over medium heat until moisture has evaporated.
  • Deglaze the pan with the cognac, add salt and pepper to taste.
  • Cook a few minutes to evaporate the cognac.
  • Put spinach in a pan with only as much water as clings to the leaves.
  • Cover and cook only until leaves start to wilt.
  • Cool until you can handle the spinach, then wring out in a towel to remove moisture.
  • Chop finely by hand and add to the mushroom mixture with the nutmeg.
  • Pre-heat oven to 400º F degrees.
  • Pound chicken breasts flat and season with salt and pepper.
  • Spread some of the mushroom/spinach mixture on the breasts, leaving a margin.
  • Roll up tightly.
  • Place some clarified butter in the bottom of an oven-proof pan.
  • Add chicken and top with wine and remaining butter.
  • Cook for 20 minutes.
  • Let rest before carving.
  • For the sauce, reduce the chicken stock until it is syrupy.
  • Add remaining ingredients.
  • Spoon over sliced chicken rolls.
