CHIPOTLE HONEY VINAIGRETTE

This chipotle honey vinaigrette tastes just like the original.

6 tablespoons red wine vinegar
3 tablespoons honey
¾ cup vegetable oil
½ teaspoon dried oregano
1½ teaspoons salt
½ teaspoon ground black pepper
2 chipotle peppers in adobo sauce
2 small garlic cloves, roughly chopped

Steps:

  • Combine all of the ingredients in a blender or mini food processor and process until smooth. Taste and adjust seasoning if necessary. Serve immediately or store in an airtight container in the refrigerator.

6 dried chipotle chilies, stemmed, seeded, if desired
2 cups red wine vinegar

Steps:

  • Combine the chilies and vinegar in a small pot. Bring to a boil, reduce to a simmer and cook covered 5 minutes. Set aside to cool. Store in a jar in the refrigerator up to 3 months.

Vinegar-Coarse Salt Chipotle Roasted Potatoes image

Number Of Ingredients 8

1/4 cup red wine vinegar
1/2 teaspoon ground cumin
1 teaspoon chili powder
6 small or 4 large russet potatoes
1/4 cup olive oil
2 tablespoons kosher salt
1 tablespoon coarse black pepper
1 small red onion, cut into medium wedges

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, mix vinegar, cumin and chili powder. Slice potatoes into 1-inch size chunks. Toss potatoes with vinegar mixture. Let sit for 5 to 10 minutes.
  • Drizzle olive oil over potatoes and place them in a single layer in large rimmed baking pan or roasting dish. Season with salt and pepper. Roast, uncovered for 40 minutes, stirring occasionally.
  • Remove potatoes from oven, add onions and mix together. Return pan to oven and roast for an additional 20 minutes.
  • Serve warm with Argentinean Steak and Chimichurri Sauce, if desired.

Making chipotle vinegar is about as difficult as making a cup of tea. It is a fantastic tool to have in your repertoire when you want to add acidity with smoke in one easy pour. Use it in your favorite salads or anywhere you want to add smokiness. This recipe is a component of [Tamarind Barbecued Duck with Smoky Plantain Crema](/recipes/food/views/108202) .

Yield Makes 1 3/4 cups

Number Of Ingredients 2

2 chipotle chiles, stemmed, halved, and seeded
1 3/4 cups Spanish sherry vinegar

Steps:

  • In a small pot, toast the chipotles over medium heat for 2 minutes. Add the vinegar, bring to a simmer, and simmer for 2 to 3 minutes. Remove from the heat and pour into an airtight container. Allow the vinegar to sit for at least 24 hours before using. Stored in a cool, dark place, this spicy vinegar will keep for 6 months.

CHIPOTLE MOZZARELLA PASTA SALAD

Number Of Ingredients 10

1 pound rotini or fusilli
1/2 cup mayonnaise
1/4 cup whole milk
2 to 3 tablespoons white vinegar
2 to 3 teaspoons chopped chiles in adobo sauce (from canned chipotles in adobo sauce)
Kosher salt and freshly ground black pepper
2 cups red and/or yellow grape or cherry tomatoes, halved
1 English cucumber, quartered lengthwise and chopped
12 ounces mozzarella (fresh or smoked), cut into small cubes
24 fresh basil leaves, chopped, plus extra for garnish

Steps:

  • Cook the pasta according to the package directions. Drain it, rinse under cool water and set aside in a large bowl.
  • Combine the mayonnaise and milk in a medium bowl, then add 2 tablespoons vinegar and stir until smooth. Add the chipotles in adobo sauce and 1/2 teaspoon each of salt and pepper. Stir the dressing until combined. Give it a taste and add more vinegar if you'd like it to have a bit more bite. Add more adobo sauce if you'd like it to have a little more heat.
  • Drizzle the dressing over the pasta, then throw in the tomatoes and cucumber and add the cheese. Stir the pasta around, then add the basil and stir until just combined. Taste and adjust the seasoning as needed, then cover the bowl with plastic wrap and chill it for at least 2 hours or up to 24 hours.
  • Transfer to a serving bowl and garnish with more basil.
