1 3/4 cups white sugar
2 eggs
1 1/4 cups mashed bananas
1 teaspoon vanilla
2 cups flour
3/4 cup cocoa
1 1/2 teaspoons baking powder

3/4 cup sour milk (put 1 tbsp. of vinegar in 3/4 measuring cup, fill with skim milk)

Steps:

  • Preheat oven to 350 degrees F.
  • Cream margarine with sugar and eggs.
  • Mix in banana and vanilla.
  • Mix flour with remaining dry ingredients.
  • Add flour mixture to margarine mixture in 3 parts, alternately with sour milk.
  • Begin and end with flour.
  • Spread in 2 greased 8" cake pans.
  • Bake in oven about 40 minutes.
  • When cool, frost generously with chocolate butter frosting.

1 pkg. (2-layer size) yellow cake mix
1/2 cup sour cream
3/4 cup mashed fully ripe bananas (about 2 small)
3/4 of 8-oz. tub COOL WHIP Whipped Topping (Do not thaw.)

Steps:

  • Heat oven to 350ºF.
  • Melt 3 oz. chocolate as directed on package.
  • Prepare cake batter as directed on package; blend in sour cream. Pour half the batter into medium bowl; stir in bananas. Add melted chocolate to remaining batter; mix well.
  • Spoon batters alternately into greased and floured 12-cup fluted tube pan or 10-inch tube pan; swirl gently with knife.
  • Bake 50 to 55 min. or until toothpick inserted near center comes out clean. Cool cake in pan 10 min. Loosen cake from sides of pan with knife. Invert cake onto wire rack; gently remove pan. Cool cake completely.

100ml sunflower oil, plus extra to grease
175g caster sugar
175g self-raising flour
½ tsp bicarbonate of soda
4 tbsp cocoa powder
100g chocolate chips or chunks
175g very ripe bananas
3 medium eggs, 2 separated
50ml milk
100g milk chocolate
100ml soured cream
handful dried banana chips, roughly chopped

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the sugar, flour, bicarb, cocoa and chocolate in a large bowl.
  • Mash the bananas in a bowl and stir in the whole egg plus 2 yolks, followed by the oil and milk. Beat the egg whites until stiff. Quickly stir the wet banana mixture into the dry ingredients, stir in a quarter of the egg whites to loosen the mixture, then gently fold in the rest. Gently scrape into the tin and bake for 1 hr 10-15 mins, or until a skewer inserted comes out clean.
  • Cool in the tin on a wire rack. To make the icing, melt the chocolate and soured cream together in a heatproof bowl over a pan of barely simmering water. Chill in the fridge until spreadable. Remove cake from tin, roughly swirl icing over and scatter with the banana chips.

1/2 cup butter or 1/2 cup margarine, cut in 1/4 chunks
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
2 large bananas (very ripe)
1 teaspoon baking soda
3/4 cup plain yogurt or 3/4 cup sour cream
1 teaspoon baking powder
2 cups flour
1 cup chocolate chips
3/4 cup chopped pecans (optional)

Steps:

  • Process butter, sugar, eggs and vanilla for 2 minutes, scraping down bowl once or twice.
  • While machine is running, drop chunks of bananas through the feed tube. Process until blended ( I mash my bananas before hand).
  • Meanwhile, dissolve baking soda in yoghurt or sour cream. Let is stand for l to two minutes Yoghurt will nearly double in size, so use a 2 Celsius measuring cup.
  • Add to batter and process for 3 seconds.
  • Add flour and baking powder.
  • Process with 4 quick on/off turns, just until flour mixture disappears.
  • Add remaining ingredients.
  • Bake in 2 greased and floured 8 inches pans for 25-30 minutes at 350°F
  • (I also use waxed paper on the bottom of the pans - just cut a circle for the bottom - it makes it easier to take the cake out ) or until cake tester come out clean.
  • Cool for 10 minute
  • Remove from pan.
  • Cool before icing.

Steps:

  • HEAT oven to 350 degrees F. Spray bottom of a 9-inch round springform pan with no-stick cooking spray.
  • BLEND cake mix, eggs, oil and 3/4 cup milk in a medium bowl until moistened. Beat with an electric mixer on medium speed for 2 minutes. Spread batter evenly into prepared pan. Bake 38 to 42 minutes. Cool completely.
  • BLEND pudding mix with 1 cup cold milk. In another bowl, beat cream cheese until fluffy. Mix in pudding and banana extract. Blend in whipped topping. Remove 1 cup and reserve. Stir 2/3 cup fudge topping in small bowl until of spreading consistency. Slice bananas 1/4-inch thick. Dip 3 slices in lemon juice. Cover and reserve for garnish.
  • PLACE 2 tablespoons fudge topping into the corner of a 1-quart resealable bag. Knead. Cut small corner off bag. Drizzle fudge topping over top of cake. Refrigerate at least 1 hour. Garnish with reserved banana slices just before serving.

One 15.5-ounce box banana nut muffin mix, such as Betty Crocker

1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 cup semisweet chocolate chips
1 egg
1 teaspoon rum extract
One 16-ounce can cream cheese frosting
1 cup chopped walnuts

Steps:

  • Spray the bottom of a 1 1/2-quart souffle dish with cooking spray. Line the bottom of the souffle dish with parchment paper and give a quick spray with cooking spray; set aside.
  • Make a foil ring 1-inch thick for the souffle dish to sit on inside a 5-quart slow cooker.
  • In a medium bowl, combine the bananas with the hazelnut liqueur. Add the muffin mix, evaporated milk, oil, vanilla extract, cinnamon, chocolate chips and egg. Stir together until just blended.
  • Transfer to the prepared souffle dish. Place the dish on top of the foil ring in the slow cooker. Lay 8 paper towels over top of the slow cooker bowl and secure with the lid. (This helps to trap steam.) Cook on LOW setting for 4 to 5 hours.

1 1/2 cups mashed ripe bananas
2 teaspoons lemon juice
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
2 cups plus 2 tablespoons sugar
3/4 cup unsalted butter, at room temperature
3 large eggs
2 teaspoons vanilla extract
1 1/2 cups buttermilk
300 grams good-quality white chocolate, melted
150 grams organic extra-virgin coconut oil
Pastry rocks, for dipping

Steps:

  • For the cake-sicles: Preheat the oven to 275 degrees F. Spray the silicone ice pop molds with a light spray of coconut oil.
  • In a small bowl, mix mashed bananas with the lemon juice. In a medium bowl, mix the flour, baking soda and salt. In the bowl of a stand mixer fitted with the paddle attachment, cream the sugar and butter until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla. Steps:

  • Preheat oven to 375°F with rack in middle. Butter a 9-inch square cake pan.
  • Stir together flour, baking soda, and salt.
  • Beat together softened butter (1 stick) and 3/4 cup sugar in a medium bowl with an electric mixer at medium speed until pale and fluffy, then beat in eggs 1 at a time until blended. Beat in bananas, yogurt, and vanilla (mixture will look curdled).

  • Remove from heat and add the mashed bananas, mix well.
  • Add the egg, mix well.
  • Stir in the flour and the milk. Once combined add the chocolate chips.
  • Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if liked.
  • Bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 45 mins, until a skewer comes out clean. Leave to cool and enjoy

1-3/4 cups mashed fully ripe bananas (about 4)
1 cup prepared MAXWELL HOUSE Instant Coffee, cooled
3 eggs
1/3 cup water
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, divided
1 tsp. MAXWELL HOUSE Instant Coffee
2 Tbsp. milk, warmed
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 cups powdered sugar
1/2 cup chopped pecans

Steps:

  • Heat oven to 350°F.
  • Spray 2 (9-inch) round pans with cooking spray; dust with flour. Cover bottoms with waxed paper. Beat first 6 ingredients in large bowl with mixer until blended; pour evenly into prepared pans.
  • Bake 30 to 35 min. or until toothpick inserted in centers comes out clean. Cool 10 min.; remove from pans to wire racks. Immediately remove waxed paper. Cool cakes completely. Meanwhile, make chocolate curls from 1 oz. chocolate. (See tip.)
  • Melt remaining chocolate as directed on package. Dissolve 1 tsp. instant coffee in warm milk. Beat cream cheese in medium bowl with mixer until creamy. Add melted chocolate and milk mixture; mix well. Gradually beat in powdered sugar.
  • Fill and frost cake layers with cream cheese frosting. Immediately press nuts into frosting on side of cake. Top cake with chocolate curls.
