EASY HOMEMADE SPAGHETTI SAUCE RECIPE
My family's secret homemade spaghetti sauce is easy to make using a few staple ingredients you may already have on hand! Perfectly thick and packed with flavor, you'll be ditching that store bought pasta sauce!

- In a large pan heat the extra virgin olive oil over medium heat until just shimmering. Add the onions, garlic, and finely grated carrots. Cook for about 5 minutes, stirring regularly until softened.
- Add the crushed tomatoes and about 1/2 cup water. Add a generous pinch of salt and pepper. Stir in oregano, paprika, crushed pepper flakes, if using. Finally, stir in the fresh basil and parsley.
- Bring the sauce to a boil, then turn heat to low. Cover and let simmer for about 15 to 20 minutes. Check partway through, and if you feel the sauce is too thick, you can add a bit more water (preferably some of your pasta cooking water). When sauce is ready, throw in more fresh basil, if you like.
- If serving for dinner, add cooked pasta of your choice to the sauce. Mix to combine and let the pasta cook in the sauce over low heat for about 5 minutes.

SPAGHETTI SAUCE

- In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
- Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
- Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
- After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
- Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
- Amen.
BEV'S SPAGHETTI SAUCE
This is a recipe I have developed over a number of years. This is the only spaghetti sauce my family will request! Very easy to make. I hope your family enjoys it as much as mine does!

- Brown the ground beef, onion and garlic in olive oil with bay leaves, oregano, basil, Italian Seasoning, salt and pepper.
- Add tomato paste, tomato sauce and diced tomatoes.
- Stir well and bring to a simmer over medium heat.
- Cover and simmer for 1 1/2 hours.
- Use sauce to top your cooked spaghetti.
- Top with sauteed mushroom.
- Pass the Parmesan.
SHERI'S HOMEMADE SPAGHETTI SAUCE
This is a recipe that I came up with by tweaking ones that I have read and my Mom's recipe. Since I don't actually have my Mom's recipe, it died with her, because she never wrote it down! I, on the other hand, have been writing them down and passing them on to family, friends and Recipezaar. Hopefully, one recipe will be great, family loves it, and it keeps on going because everyone loves it!! This recipe is totally from scratch and can be canned. I cook this in a big turkey roaster so it can simmer for hours. The whole house smells wonderful while its cooking!! Enjoy!!

- Blanch, peel and core the tomatoes. Chop them so they are in smallish pieces. Place in roaster.
- Peel garlic and place in a food processor. Half and quarter the onions and toss them in with the garlic. Process until finely chopped. Pour in with tomatoes.
- Seed and clean the peppers. Cut in chunks and toss in the food processor. Process until finely chopped. Pour into tomatoes. Stir up well.
- Add remaining ingredients except the bay leaves, allspice and fennel. Take these and divide into two cheese cloth sections. Take each cheese cloth and tie it with spices enclosed. Add to tomatoes.
- Start roaster at about 300°F Get it hot, stirring occasionally. Let it cook for about 3 hours.
- Turn cooker down to 200°F and let simmer either all day or overnight. (I let it go overnight, and when I came out of the bedroom, the house was filled with yumminess).
- Once it reaches the consistency you like, I like mine thick, ladle hot sauce into clean, hot quart jars. Wipe rim clean, place two part canning lids in place and tighten to finger tight.
- Put hot jars into readied pressure canner, process according to processors directions for 25 minutes.

SPAGHETTI SAUCE (HOMEMADE)
Finally, a thick and rich Spaghetti Sauce with no tomato paste or tomato sauce. This "from scratch" recipe is easy, fresh and simple. I always decide to make spaghetti and then don't have tomato paste or sauce or I ran out of Italian seasoning. This is even better the next day. - A food processor can be used to smooth the sauce if the tomatoes are too chunky.

- Brown meat, drain and reserve 2 Tbs of fat.
- Saute onions in olive oil if using lean meat or use reserved fat.
- Dissolve cornstarch with tomatoes. (Can blend at this point for desired texture).

- In large mixing bowl, combine well with hands the 2 meats.
- Add to deep, large non-stick skillet. *If not using non-stick pan, add a little olive oil to pan first so it won't stick.
- Sprinkle EVENLY rest of meat mixture ingredients over meats. Stir meats to mix in herbs and spices.
- Cook over medium heat til meat is no longer pink. Break up meat as you go along, but just don't overdo it. You don't want tiny, overly fine pieces.
- Drain grease.
- Pour into large heavy-bottomed pot.
- Add rest of ingredients EXCEPT mushrooms, and stir/fold to mix well.
- Now add the mushrooms! :).
- Heat over medium heat til simmering.
- Lower heat to just a simmer and cook, stirring every so often, for about 30 minutes.
- Serve over hot, cooked and well drained spaghetti, thin spaghetti, mostaccioli, or rotini noodles.
- Serve with tossed salad, garlic bread and parmesan cheese on the side if desired. ENJOY!

- In a large skillet, cook the beef, peppers, celery, onion and garlic over medium heat until meat is no longer pink and vegetables are tender; drain.
