CONFETTI MONKEY BREAD

Confetti Monkey Bread image

Imagine the delight and awe of a birthday boy or girl waking up to this delicious and beautiful treat. I used cinnamon extract (commonly found in most grocery stores) in place of cinnamon, purely for aesthetic purposes, as I wanted to create a beautifully light and colorful monkey bread. If you are not opposed to a dark brown confetti bread, feel free to omit the extract and substitute 1 tablespoon ground cinnamon.

Provided by Amanda Rettke

Categories     dessert

Time 3h25m

Yield 1 ring monkey bread

Number Of Ingredients 17

1/3 cup (5 1/3 tablespoons) unsalted butter, melted, plus additional for greasing the bowl
5 cups all-purpose flour
1/4 cup granulated sugar
1 teaspoon salt
1 package (2 1/4 teaspoons) active dry yeast
1 1/4 cups warm whole milk (105 to 120 degrees F)
2 large eggs, beaten, at room temperature
1 cup rainbow sprinkles, plus extra for garnish
Nonstick cooking spray
3/4 cup (1 1/2 sticks) unsalted butter
1 1/4 cups granulated sugar
1 tablespoon cinnamon extract
1 teaspoon vanilla extract
3 ounces cream cheese, at room temperature
1/4 cup confectioners' sugar, plus extra if needed
2 tablespoons milk, plus extra if needed
1/4 teaspoon vanilla extract

Steps:

  • For the dough: Grease a large bowl with butter and set aside.
  • Pour the flour, sugar and salt into the bowl of stand mixer fitted with the dough hook.
  • Add in the yeast and turn on the lowest speed for 30 seconds to evenly distribute.
  • Add the milk, melted butter, eggs and 1/4 cup warm water (105 to 120 degrees F) to the flour mixture all at once. Beat on low- to medium-speed until the dough starts to pull away from the sides of the bowl.
  • Add in the sprinkles and mix until mostly distributed, about 30 more seconds.
  • Remove the dough from the mixer, shape it into a ball with your hands and place it in the greased bowl, turning once to coat the entire surface.
  • Spray a piece of plastic wrap with nonstick spray and cover the bowl. Let the dough rise until doubled in size. (You can also place in the refrigerator overnight.)
  • For the coating: Melt the butter in a medium microwave-safe bowl. Add in the granulated sugar and extracts and set aside.
  • Generously spray the bottom and sides of a Bundt pan. Preheat the oven to 350 degrees F.
  • Punch the dough down by pushing your fist into the center and then start pulling the edges into the center.
  • Pull apart the dough into small pieces about an inch across and roll in your hands to create smooth, uniform dough balls. Place one layer of dough balls into the Bundt pan, then pour a third of the melted butter mixture over.
  • Repeat this process twice more, or until you have used all the dough and butter mixture.
  • Bake until golden brown on top, 30 to 35 minutes, covering with foil if the top starts to brown too quickly.
  • For the glaze: Meanwhile, beat the cream cheese with the confectioners' sugar until smooth and light. Add the milk and vanilla and mix until fully incorporated. If the glaze seems too thick, add more milk. If the glaze seems too runny, add in a bit more confectioners' sugar. (You are looking for a gravy-like consistency, where the glaze will fall over the sides of the monkey bread but not spill off completely.)
  • Remove the monkey bread from the oven and cool for 10 minutes in the pan. Invert onto a serving plate.
  • Whisk the glaze briefly, then pour over the monkey bread. Garnish with more sprinkles.

Time 1h35m

Yield 12 servings

Number Of Ingredients 15

Nonstick cooking spray, for the pan
Two 16.3-ounce tubes refrigerated large flaky biscuits
3 tablespoons rainbow sprinkles
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 cup granulated sugar
4 tablespoons (1/2 stick) unsalted butter
1 1/2 teaspoons almond extract
1 cup confectioners' sugar
4 ounces (1/2 block) cream cheese, at room temperature
4 tablespoons (1/2 stick) unsalted butter, at room temperature
1/8 teaspoon kosher salt
1 1/2 teaspoons vanilla extract
2 to 3 tablespoons whole milk
4 1/2 teaspoons rainbow sprinkles, for garnish

Steps:

  • For the pull-apart bread: Preheat the oven to 350 degrees F. Grease a 10-inch bundt pan with nonstick cooking spray.
  • Separate the biscuits and cut into quarters. Put the rainbow sprinkles in a large resealable plastic bag, add the biscuit pieces and shake until coated. Add the brown sugar, cinnamon and 1/2 cup of the granulated sugar. Seal the bag and shake until everything is mixed. Pour the pieces into the prepared pan and set aside.
  • Heat the butter with the remaining 1/2 cup granulated sugar in a saucepan over medium-low heat, stirring, until the butter is melted and the sugar is dissolved. Mix in the almond extract. Pour the mixture over the biscuit pieces.
  • Bake until the top of the bread is golden, about 30 minutes. Cover with foil and continue to bake until cooked through, an additional 5 to 10 minutes. Let cool.
  • For the frosting: Mix the confectioners' sugar, cream cheese, butter and salt in a medium bowl. Add the vanilla and 2 tablespoons of the milk and mix until smooth. Add another tablespoon of the milk if the frosting's too thick.
  • Spread the frosting on top of the cake and garnish with the rainbow sprinkles.

CONFETTI CORN BREAD–CRUSTED SHRIMP IN CREOLE FILLING

Confetti Corn Bread–Crusted Shrimp in Creole Filling image

Categories     Bread     Shellfish     Vegetable     Appetizer     Side     Bake     Dinner     Lunch     Seafood     Shrimp     Fall     Tailgating     Potluck     Chile Pepper     Peanut Free     Tree Nut Free     Soy Free

Yield Makes 6-8 servings

Number Of Ingredients 26

Creole Shrimp Filling
4 tablespoons unsalted butter
1 medium onion, chopped
2 stalks celery, thinly sliced
1/2 green bell pepper, chopped
2 cloves garlic, minced
1 tablespoon Creole seasoning
2 tablespoons flour
One 14-ounce can diced tomatoes
1/2 cup tomato sauce
1 cup chicken broth
1 bay leaf
8 ounces bay shrimp
Topping
1/2 cup (1 stick) unsalted butter at room temperature
2 teaspoons granulated sugar
2 eggs at room temperature
1/4 cup peeled and diced mild green chiles, fresh or canned (drained)
1/2 cup corn kernels
1/2 cup canned cream-style corn
2 tablespoons finely chopped red bell pepper
2 tablespoons finely chopped green bell pepper
1/2 cup all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon baking powder
1/2 teaspoon salt

Steps:

  • To prepare the filling, melt the butter in a large sauté pan or skillet over high heat. Add the onion, celery, and green bell peppers. Cook until the vegetables are tender, about 3 minutes. Stir in the garlic and Creole seasoning, and cook until the garlic is fragrant, about 1 minute. Sprinkle the flour over the vegetables and stir constantly, about 2 minutes, until slightly thickened. Add the diced tomatoes, tomato sauce, chicken broth, and bay leaf. Stir and bring to a simmer. Reduce the heat to medium, cover the pan with a lid, and cook for 5 minutes. Add the shrimp and heat through, about 2 minutes. Remove the bay leaf and pour the filling into an 8-by-8-inch square or round baking dish. Set aside in a warm area, while preparing the topping.
  • To prepare the topping, preheat the oven to 375°F. Put the butter and sugar in the bowl of a stand mixer fitted with a paddle attachment. Whip on medium speed until light and fluffy, about 2 minutes. Incorporate the eggs one at a time and mix until smooth. Add the green chiles, creamed corn, red and green bell peppers, the flour, cornmeal, baking powder, and salt. Mix on low speed until the mixture forms a soft batter.
  • Carefully dollop the corn bread batter over the filling. Using an offset metal spatula, spread the batter smoothly across the top of the casserole, forming a thin layer. Place the baking dish on a baking sheet in the center of the oven. Bake until the topping is golden brown and the filling is bubbling around the edges, about 40 minutes. Remove from the oven to a cooling rack. Cut through the corn bread with a small knife. Scoop 6 to 8 generous portions of the filling and the corn bread into large soup bowls or onto plates.

CONFETTI BREAD

CONFETTI CORNBREAD

Confetti Cornbread image

I adapted this from the Jalapeno Cornbread in Ann Hodgman's Beat This Cookbook (which is a MUST BUY!) The low fat suggestions are mine; I also doubled the cheese and added the onions, scallions, garlic, and hot sauce. The orinal recipe calls for canned jalapenos only, but I like to use fresh and add some extra color with serranos. Also, the original recipe calls for a 9X13 pan, but I found that it was too flat, hence the smaller pan and longer cooking time. I haven't tried it yet, but some crumbled cooked bacon or real bacon bits would taste really good.

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 14

2 large eggs (or equivalent egg substitute)
1 cup low-fat sour cream or 1 cup fat free sour cream

1 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt (I usually reduce by half)
1/2 cup grated low-fat cheddar cheese or 1/2 cup monterey jack cheese

3 scallions, minced
1 -2 garlic clove, minced

Steps:

  • Preheat the oven to 375 degrees and grease a 9X9 square pan.

CONFETTI YEASTED PUMPKIN BREAD

Confetti Yeasted Pumpkin Bread image

This recipe originally came from the King Arthur Flour recipe database, and was shaped into a braid. I've added a variety of yummy mix-ins, and adjusted the spices to suit my taste. The result is an egg-rich bread with a slightly sweet flavor. This bread is delicious in the Autumn, but I love it any time of the year, espcially for breakfast. It also makes a great base for a grilled ham, apple, and cheese sandwich! Cook time includes the rising time.

Provided by FireRaven

Categories     Yeast Breads

Time 3h55m

Yield 4 round loaves, 40 serving(s)

Number Of Ingredients 16

5 1/2 cups bread flour
3 1/2 cups white whole wheat flour
3 tablespoons vital wheat gluten
6 teaspoons pumpkin pie spice
1/2 teaspoon ground cloves
1/3 cup white sugar
1/3 cup brown sugar
2/3 cup candied ginger, diced
1/3 cup pumpkin seeds, roasted
1/3 cup raisins
1/3 cup dried sweetened cranberries
3 teaspoons salt
2 tablespoons yeast
1 (29 ounce) can pumpkin puree
4 eggs
1/2 cup butter, melted

Steps:

  • Bring yeast, pumpkin, and eggs to room temperature.
  • Combine dry goods together in the bowl of your stand mixer and stir gently to blend well. Make sure the dried fruits and pumpkin seeds are evenly coated with flour.
  • Combine pumpkin, eggs, and warm melted butter in a separate bowl and stir well.
  • Add wet ingredients to the dry, and stir with the paddle attachment on your mixer until the dough pulls away from the side of the bowl. Switch to the dough hook and knead 5 to 7 minutes, or until smooth, adding additional flour sparingly if dough is too wet.
  • Transfer dough to a clean, lightly oiled bowl, turning to coat. Cover with plastic wrap and allow to rise 1 to 2 hours, or until doubled in bulk.
  • Punch down dough and turn out onto a lightly oiled counter top or a silicone mat. Divide dough into quarters, and shape each quarter into a tight ball.
  • Place balls onto parchment lined baking sheets. (Two balls should fit on a standard sheet pan.) Cover with lightly greased plastic wrap and allow to rise another hour, or until puffy, but not doubled. Preheat your oven to 375 degrees F during the last 10 minutes of the rise.
  • Bake at 375 degrees 30 to 35 minutes, tenting the tops of the bread with foil during the last 10 to 15 minutes to prevent over browning, if necessary. The interior temperature of the bread should read about 200 degrees F on an instant read thermometer, and the bread should sound hollow when tapped.
  • Cool on a wire rack until you can't stand the tantalizing smell any longer, and have to cut yourself a slice!

CONFETTI POTATOES

Confetti Potatoes image

I found this recipe on Cafemom.com. Supposed to be great for toddlers....You don't have to use organic, I definitly don't.

Provided by AshleyP

Categories     Lunch/Snacks

Time 35m

Yield 4 serving(s)

Number Of Ingredients 6

1 package frozen organic O'Brien potatoes
1/2 package organic mixed baby peas and carrots
1/4 package organic corn
0.25 (16 ounce) package green beans, 16 oz. (you may need to chop these smaller for younger kids before you cook)
1/8 teaspoon turmeric or 1/8 teaspoon favorite curry powder
olive oil, to coat

Steps:

  • 1. Combine oil and spice in large (I mean LARGE) mixing bowl.
  • 2. Add all ingredients into the bowl, stirring to coat all veggies with oil and spices.
  • 3. You now have a choice in cooking methods:.
  • a. You can dump all into a large skillet and fry on stove top until crispy and cooked through, or.
  • b. You can pour the mixture into a baking pan (or I like to use my big cast iron skillet) and bake at 350 degrees for about 30-45 minutes, stirring once after 10 minutes, then leaving alone so a crunchy top will form.
  • Tip: shivasgirl's kids think this is Indian food, so she usually serves with pooris (a deep fried bread), but they have devoured this dish all by itself.
  • Tip: You can add any veggies you want, but stick with the carrots, peas and potatoes as a base -- these even taste great if that is all you use!
