3 to 4 large sweet potatoes (about 1 3/4 pounds), peeled and cubed
1/2 cup milk
1/4 cup brown sugar, packed
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
2 large eggs
1/2 cup all-purpose flour
1/2 cup brown sugar, packed

Steps:

  • For the sweet potatoes: Add 1 3/4 pounds peeled and cubed sweet potatoes to a large pot of salted water. Bring to a boil over high heat, then lower the heat to a simmer and cook until the potatoes are very tender, 15 to 20 minutes. Drain and cool. Mash the sweet potatoes.
  • For the filling: Preheat the oven to 350 degrees F. Butter a 2-quart baking dish.
  • Whisk together the butter, mashed sweet potatoes, milk, brown sugar, vanilla, salt and eggs in a large bowl. Transfer to the prepared baking dish.
  • For the topping: Combine the flour, brown sugar, butter and salt in a medium bowl until moist and the mixture clumps together. Stir in the pecans. Spread the mixture over the top of the sweet potatoes in an even layer. Bake until mostly set in the center and golden on top, 25 to 30 minutes. Serve hot.

4 1/2 pounds sweet potatoes (scrubbed (about 4-5 very large sweet potatoes))
1 cup unsweetened vanilla almond milk
2 vanilla beans
2 tablespoons virgin coconut oil
3/4 teaspoon ground cinnamon
3/4 teaspoon kosher salt
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon white pepper
1 1/3 cups old-fashioned rolled oats
1 cup roughly chopped pecans (untoasted)
1/2 cup almond meal**
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
5 tablespoons melted coconut oil
1 tablespoon pure maple syrup

Steps:

  • Preheat the oven to 375 degrees. Lightly grease a 9x13-inch casserole dish or other 3-quart casserole dish and set aside.
  • Prick the sweet potatoes all over with a fork, then place them on a baking sheet lined with foil or a silpat mat. Bake until the potatoes are fork tender, about 1 hour or so, depending upon the size of your potatoes. Remove from the oven and let sit until cool enough to handle, about 5 minutes. Peel and discard the skins (they should come off easily with your fingers), break the potatoes in large chunks with a fork, then place the chunks into the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl.
  • While the potatoes bake, pour the almond milk in a small saucepan. Split the vanilla beans, scrape the seeds into the pan, then add the empty pods to the pan too. Bring to a very gentle simmer over medium heat for 5 minutes, stirring occasionally. Do not let the almond milk boil. Remove from heat and let the vanilla steep while the potatoes continue baking.
  • Remove the vanilla bean pods from the saucepan, then pour the almond milk and vanilla bean specs into the bowl with the sweet potato chunks. Add the melted coconut oil, cinnamon, salt, nutmeg, and white pepper.
  • Mash the potatoes together with the milk and spices (or beat gently with a mixer or your paddle attachment or run though a food mill) until fairly smooth with some texture remaining. Taste and add additional salt/pepper as desired. Transfer to the prepared baking dish. With the back of a rubber spatula, press and smooth into a single layer.
  • In a separate bowl, combine the topping ingredients-oats, pecans, almond meal, cinnamon, salt, coconut oil, and maple syrup-until moist and evenly mixed. Sprinkle over the sweet potatoes.
  • Bake until the topping is toasted and fragrant and casserole is warmed through, about 20 minutes. Serve warm.

1 cup canned coconut milk (light or regular)
¼ cup maple syrup
¼ cup coconut oil (melted)
1 Tablespoon ground flaxseed

Steps:

  • Peel and chop the sweet potatoes into large chunks. Place the chunks in a large saucepan and cover with cold water, bring to a boil and reduce to simmer. Simmer until the sweet potatoes are fork tender, about 15-20 minutes. Once done, drain well and let cool.
  • Meanwhile, preheat your oven to 350°F and spray a little cooking spray on a 9x13 or 9x9 inch casserole dish.
  • In a mixing bowl, combine the pecans, oats, oat flour, and brown sugar. Cut in coconut oil with a fork or knife until the mixture is sandy with pea-sized chunks of oil. Set aside.

1 teaspoon vanilla extract
½ teaspoon sea salt
½ cup coconut sugar
½ cup pecans
½ cups oat (, gluten-free if needed )
2 tablespoons maple syrup
½ teaspoon cinnamon
¼ teaspoon sea salt
¼ teaspoon nutmeg

Steps:

  • Preheat oven to 350 F/ 175 C
  • Cut the potatoes into cubes.
  • Put them in a pot and cover with water. Add a pinch of salt, and bring to a boil. Takes about 10 minutes.
  • Simmer another 10 minutes until potatoes are soft.
  • Drain and rinse with cold water to cool them down.
  • Add them to a bowl with the coconut milk, vanilla and salt.
  • Mash with a potato masher. I like to leave some chunks for texture, but you can mash until smooth.
  • Put into a square dish (9 x 9 or 8 x 8 works) and smooth out the top.
  • To make the toppings, put all ingredients into a food processor and blend until crumbly.
  • Pour the topping over the top of the sweet potato mixture.
  • Bake for 25 minutes.
  • Serve!

500g sweet potatoes
125g butter, plus extra for the dish
125g light brown soft sugar
150ml whole milk
3 eggs
grating of nutmeg
½ tsp ground cinnamon
1 tsp vanilla bean paste
35g butter
75g plain flour
75g light brown soft sugar
50g pecans, chopped

Steps:

  • Fill a large pan with boiling water from the kettle and set over a medium-high heat. Carefully drop in the whole, unpeeled sweet potatoes and cook for 30 minutes until very tender when pierced with the tip of a sharp knife. Drain well and leave to cool for 10 mins, then peel.
  • Heat the oven to 180C/160C fan/gas 4. Tip the peeled sweet potatoes into a large bowl, add the butter and mash with a potato masher until completely smooth. Tip in the brown sugar, milk, eggs, spices and vanilla and whisk until everything is combined and smooth.
  • Lightly butter a 20 x 30cm baking dish, then scrape in the sweet potato mixture. To make the topping, rub the butter into the flour, then stir in the brown sugar, pecans and a good pinch of salt. Sprinkle the topping evenly over the sweet potato filling, then bake for 45-50 mins until golden on top.
