EASY CINNAMON BAKED APPLES
Easy Cinnamon Baked Apples requiring simple ingredients and 1 bowl, plus naturally sweetened! The perfect grain- and gluten-free plant-based dessert for the holidays and beyond!

Steps:
- Preheat oven to 350 degrees F (176 C) and set out a 9x13-inch (or similar size) baking dish.
- Peel and core apples, quarter, and use a paring knife to thinly slice lengthwise (see photo). The thinner the better! Just try to be consistent so they cook evenly.
- Add to baking dish and top with lemon juice, coconut oil (optional), coconut sugar, cinnamon, ginger, nutmeg, cornstarch (or arrowroot), apple juice (or water), and a healthy pinch of salt. Toss to combine. Then loosely cover with foil.
- Bake for 45 minutes (covered). Then carefully remove foil and bake for an additional 10-15 minutes or until the apples are very fork tender (especially in the center of the dish) and slightly caramelized (see photo).
- Enjoy as is or with Coconut Whipped Cream or Vanilla Bean Coconut Ice Cream! Best when fresh, though leftovers keep covered in the refrigerator up to 3-4 days or in the freezer up to 1 month. Reheat in the microwave or in a 350-degree F (176 C) oven (covered) until warmed through. Add a bit of water if the "caramel" sauce is too thick.

BAKED APPLES RECIPE (TWO WAYS)
You can use this recipe to make stuffed baked apples with my delicious cinnamon and brown sugar mixture and nuts of your choice, or you can make baked sliced apples, tossed with the same delicious brown sugar mixture. Either way, serve your baked apples warm. This recipe is vegan and gluten free, but if you like, you can serve the cooked apples with a good scoop of your favorite ice cream!

BAKED SPICED APPLES AND ORANGES
I make this every year for Thanksgiving and they are a big hit. I always make a big batch because everyone always asks for seconds.

- 1. In a large bowl, toss together the apples, oranges and brown sugar. Spread evenly in a 13X9 baking dish
- 2. Sprinkle crackers over fruit.
- 3. Melt butter in a small saucepan. Wisk in the flour, cinnamon, nutmeg, cloves and baking powder. Drizzle over crackers, then drizzle half & half over that.
- 4. Cover with aluminum foil and bake at 325 degrees for 1 hour.
- 5. Remove from oven and stir gently to fold in the crust. Serve warm.
APPLES AND ORANGES (AMARO-SPIKED HOT CIDER)
You don't need mulling spices for cider when amaro's in the mix. This spiked cider recipe is a luscious combination of hot cider, Averna, and Grand Marnier.

- Add 3 oz. Grand Marnier, 1 oz. Amaro Averna, and a small pat of salted butter to a 16-ounce travel mug or large heatproof measuring cup. Add 1 cup hot apple cider and stir until butter melts.
- Add 1½ tsp. fresh lemon juice and taste for sweetness, adding additional if needed. If serving in travel mug, garnish with ground pink peppercorns and seal. If serving in mugs, divide drink between two warmed mugs and garnish each with a pink peppercorn-dusted lemon wheel.

- In a blender or food processor, process apples, orange and raisins until finely chopped; set aside. , In a large bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition; beat until light and fluffy. Beat in extract. Combine dry ingredients; add to creamed mixture alternately with orange juice. Stir in fruit mixture and nuts. , Pour into three greased 8x4-in. loaf pans. Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

BRAISED APPLES WITH ORANGE SAUCE

- Preheat oven to 325 degrees. Carefully pare the peel from the oranges and cut into julienne strips. Simmer the strips for 10 minutes in water. Drain and rinse. Squeeze the juice from the oranges, strain and set aside.
- Peel and core the apples and put them in a bowl with water to cover and add the juice of the lemon to prevent them from discoloring.
- Drain the apples. Using 2 tablespoons butter, grease a flameproof baking dish just large enough to hold them comfortably. Put a teaspoon butter in each apple. Sprinkle with sugar. Add 2 tablespoons of the cognac, white wine and orange juice. Bring to simmer on top of the stove, cover loosely with foil paper and put into the oven.
- Bake for 25 minutes, checking occasionally to make sure that the liquid remains at a simmer and that the apples are not overcooking. If they cook too long, they will collapse.
- When the apples are done, arrange them on a serving dish. Add the jelly to their cooking juices and bring to boil. Stir in remaining cognac and orange peel. Cook for a minute or two, or until the sauce is thick enough to coat the spoon. Pour over the apples. Serve at room temperature, with the cream in a small jug.
