- Preheat the oven to 200°C/fan 180°C/Gas 6
- In a large deep ovenproof frying pan, heat the oil
- Add the onions, pepper and garlic. Season with freshly ground black pepper and cook for 10 minutes or until soft
- Add the tomatoes and paprika and continue to cook gently for another 5 minutes
- Make 4 little wells in the mixture and crack an egg into each one. Season with more black pepper, cover and place in the oven
- Cook until the eggs are set this should take about 5-8 minutes. Sprinkle over the parsley, if using

- Heat olive oil in a skillet over medium-high heat. Add chorizo and cook until just beginning to crisp, about 2 minutes. Add cherry tomatoes and season with a pinch of salt. Cook and stir until tomatoes soften and release their juices, about 5 minutes.
- Beat eggs with salt, pepper, and paprika in a small bowl. Stir seasoned eggs into tomato mixture in the skillet. Reduce heat to medium-low and cook and stir until the eggs are set, 3 to 5 minutes.

- Heat the oil in a frying pan that has a lid, then soften the onions, chilli, garlic and coriander stalks for 5 mins until soft. Stir in the tomatoes and sugar, then bubble for 8-10 mins until thick. Can be frozen for 1 month.
- Using the back of a large spoon, make 4 dips in the sauce, then crack an egg into each one. Put a lid on the pan, then cook over a low heat for 6-8 mins, until the eggs are done to your liking. Scatter with the coriander leaves and serve with crusty bread.

- Preheat oven to 400°F.
- Heat oil in a large skillet over medium heat. Add the onion and sauté until softened, about 5 minutes. Stir in the garlic and cook for 2 minutes more. Remove to a bowl and cook the sausage until brown, about 7 minutes. Spoon or pour off excess fat and return onions and garlic to the pan.
- Add the tomatoes, paprika, and salt. Cook until mixture has warmed through, about 2 minutes.
- Brush ramekins with olive oil. Divide the sausage mixture among the ramekins. With the back of a spoon, gently press into mixture to create a well. Top each with an egg. Bake until egg whites are cooked and the yolks are still runny, 12 to 15 minutes. Top with a sprinkling of cilantro.
- Serve immediately with toasted bread.

- Melt butter in a pot over medium-low heat. Stir rice, jalapeno, green onion, and garlic together in the melted butter until rice is completely coated with butter. Add chili powder, cumin, salt, chipotle chile powder, and cayenne pepper; cook and stir until fragrant, about 1 minute.

- Fry onion and pepper until slightly brown then pour into the cazeula.
- Carefully break all 6 eggs on top of the vegetable layer.

SMOKY SPANISH POTATOES AND EGGS
This quick recipe makes as good a smoky-spicy breakfast as it does dinner. The flavors combine two tapas favorites, patatas bravas and huevos rotos.

- Preheat oven to 450°F. Place potatoes on a sheet pan and drizzle with 2 Tbsp. olive oil and season with 1 tsp. kosher salt. Toss to coat. Spread into an even layer and roast, tossing halfway through, until tender and starting to brown, 25 minutes.
- While the potatoes roast, in a large, oven-safe skillet, heat 1 Tbsp. olive oil over medium-high. Add onion and cook, stirring occasionally, until slightly softened, about 4 minutes. Add garlic and cook, stirring occasionally, until fragrant, about 1 minute. Add chiles, sauce, tomato paste, paprika, and cumin and cook, stirring frequently, until the onions are coated and the mixture has darkened slightly, 1 to 2 minutes. Turn off heat and immediately add sherry vinegar; scrape up any browned bits on the bottom of the pan and stir to combine.
- Transfer the onion-chiles mixture to a food processor or blender (reserve the pan; there's no need to wash it). Add the tomato and season with black pepper and ¾ tsp. salt. Pulse, scraping down the sides of the food processor as needed, until the mixture forms a mostly smooth, thick paste.
- Reduce oven temperature to 375°F. Transfer roasted potatoes to the reserved skillet; add the sauce and stir to thoroughly coat. Use a spoon or spatula to create three wells in the potato mixture; drizzle 2 tsp. olive oil between the three wells. Crack an egg into each well and season with salt and pepper. Bake until the whites of the eggs are set but the yolk is still runny, about 6-8 minutes. Top with chopped parsley and mayonnaise before serving.

- Finely mince 3 cloves of garlic, finely dice 1/2 of an onion, shred a generous cup of mild Manchego cheese and reserve 2 organic eggs, each one cracked into seperate small bowls
- Heat a fry pan with a medium heat, add in 2 tbsp of extra virgin olive oil and add the diced onions & minced garlic, mix with the oil continuously, after 4 minutes and the onions are translucent, add in 1/2 tsp of sweet smoked Spanish paprika and 1/2 tsp hot smoked Spanish paprika, mix together with the onions & garlic, then add in a 15 oz can of diced tomatoes, season with sea salt & freshly cracked black pepper and mix it all together until well combined
- After simmering the tomatoes for about 5 minutes, add the eggs into the pan, I like to make a little hole in the tomato sauce and pour in each egg, season the eggs with sea salt & freshly cracked black pepper and add the shredded manchego cheese all over the skillet, trying not to cover the egg yolks, place a lid on the pan
- After 2 to 3 minutes remove the lid from pan and simmer for another 2 to 4 minutes, or until the egg whites are cooked through but the egg yolks are still creamy, remove from the heat and sprinkle with freshly chopped parsley, serve next to a crusty baguette, enjoy!
