From Hungry Girl: "Flat 'n Fabulous Admit it -- you find yourself singing that hip-hop jingle for the latest greasefest to come from Carl's Jr. and Hardee's: "Flat buns... I like flat buns..." (it's catchy!). And since grilled onions, a beefy burger, and melted cheese on toasty rye bread (yeah, that's what a "flat bun" is in this case) sounds delicious, we decided to HG-ify it. We're pleased to present HG's Flat Top Patty Melt."

Steps:
- Toast bread slices until they are halfway to desired crispiness. Top each slice with a piece of cheese, and continue toasting until cheese is melted and bread is toasty.
- In a pan sprayed with nonstick spray, cook onions with 2 tablespoons of water over medium heat until desired texture is reached (3 - 5 minutes).
- Prepare burger patty according to the directions on the package (either in the pan sprayed with nonstick spray, or in the microwave). Place half of the grilled onions on one cheese-topped bread slice, and cover with the burger patty. Top with the rest of the onions, and finish off with the other slice of cheesy bread. Enjoy!

- Bring a pan sprayed with nonstick spray to medium-high heat on the stove. (If you have a grill pan, use it -- you'll get neato grill marks.) Lay pineapple ring in the pan, and cook until slightly blackened and caram elized, about 3 minutes per side. Set aside to cool.
- Cut a slit in the burger pouch. Place burger, slit-side up, in the microwave. Microwave for just 1 minute (not the time given on the box). If your microwave is low wattage, microwave for an additional 15 seconds. Remove patty from the microwave and place on a microwave-safe plate. Pour half of the teriyaki marinade on top, spread it around, and flip patty to coat evenly on both sides. Lay cheese slice on top of the patty, and microwave for 30 additional seconds.
- Place the burger patty on the bottom half of the bun, and top with the remaining teriyaki sauce. Add the pineapple ring, tomato, and lettuce. Spread mayo on the top half of the bun, and finish your burger off with the bun's top half. Now CHOMP!

- Preheat oven to 425 degrees.
- Roll out pizza dough into a large rectangle about 12 inches by 16 inches. Transfer to a large baking sheet sprayed with nonstick spray.
- Spread tomato sauce over the dough, leaving about a half-inch border for the crust. Place the eggplant and zucchini slices evenly over the sauce, and then sprinkle with the mozzarella cheese. Evenly distribute mushrooms and peppers over the pizza.
- Bake in the oven for about 15 minutes, until the crust is a nice shade of golden brown. Cut into 8 pieces. If you like, top your piece with some reduced-fat Parmesan-style grated topping and/or red pepper flakes. Now dig in!

I recently purchased the new Hungry Girl Cookbook and this is one of the first recipes that I am going to try. Here is what the book says: "Not to sound like a cheesy commercial, but this soup is so thick, it "eats like a meal." It's almost too easy to prepare a super-sized batch, and it tastes even better the next day! (HG Tip: Freeze leftovers in individual servings for microwavable, super-filling, guilt-free snacks)." UPDATE NOTE 9/7/2008: I made this recipe today for dinner but I made just a couple changes: 1) I used 16 ounces Perdue Ground Chicken (hubby wanted more meat!) and 2) I cooked it all in my crockpot on Low for about 8 hours. Hubby and I had it for dinner and it was awesome! I posted a picture also. The change to the ground chicken changed the points value to 4 points per generous 1 cup serving. I hope you all enjoy as much as we did!

- In a small covered saucepan, cook sliced and peeled apples in 1/4 cup of water until tender (2-3 minutes). Remove from heat and drain water.
- Into 1/4 cup of COLD water, mix vanilla, no-cal sweetener, cinnamon and cornstarch. Cook and stir until thickened to a caramel-sauce-like consistency (adding a few drops more water if it gets too thick). Remove from heat and stir apples into mixture.
- Stuff 4 warm pita halves (30 seconds in the microwave should do it) with mixture.
