Sheet pan chicken fajita Crunchwrap is the ultimate giant Crunchwrap that you can serve at a party or for dinner.

For the Fajita Chicken:
1 pound chicken breast
2 teaspoons olive oil, divided
1 teaspoon lime juice
1 teaspoon Worcestershire sauce
2 tablespoons taco seasoning
2 teaspoons salt, divided
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper , sliced
1 large onion, sliced
For the Crunchwrap:
1 tablespoon unsalted butter
9 flour tortillas
1 1/2 cup Monterey Jack cheese
1 1/2 cup cheddar cheese
1/2 cup pickled jalapenos
5 tostada shells
1 cup pico de gallo
1 cup guacamole
Sour cream, cilantro, for optional garnish

Steps:

  • Gather your ingredients
  • Slice the chicken into thin strips.
  • Add 1 teaspoon of the olive oil to a medium skillet and heat over medium-high. Add the chicken, lime juice, salt, Worcestershire sauce, and 1 tablespoon of the taco seasoning. Cook, without disturbing, until the chicken is golden brown on the bottom. Flip the chicken and continue cooking until cooked through. Transfer the chicken to a medium bowl.
  • Add the remaining olive oil to the same skillet and heat over medium-high. Add the bell peppers, onions, salt, and remaining taco seasoning. Saute until peppers and onions are softened and browned. Transfer to the same bowl as the chicken and set aside.
  • Gather your ingredients. Preheat the oven to 400 F.
  • Butter a half sheet pan with the butter. (This works the best with softened butter.)
  • Line the sheet pan with 7 of the tortillas, slightly overlapping, to cover the bottom and overhanging along the edges.
  • Spread half of the cheese into a layer across the tortillas.
  • Layer the cooked chicken and peppers mixture over the cheese in an even layer.
  • Sprinkle the remaining cheese over top, then add the jalapenos and tostadas.
  • Add the remaining 2 tortillas over the top of the layers, then fold over the edges of the bottom tortillas. Press down.
  • Spray the tortillas with non-stick cooking spray, then place another sheet pan over top and weigh it down with a cast iron skillet or other heavy, oven-proof item. Transfer to the oven and bake for 30 minutes.
  • Remove the cast iron pan and top sheet pan. Bake for another 6 to 8 minutes or until the top tortillas are brown.
  • Remove the crunchwrap from the oven, allow to cool slightly, and flip if you wish. Cut into squares. Top with pico de gallo and guacamole and serve immediately. Add sour cream and chopped cilantro, if desired.

We took a fast-food favorite and made it way (way!) bigger. And since it's stuffed with delicious layers of beef, cheese, crunch and sour cream, you'll be glad it's large enough to share.

Number Of Ingredients 10

1 pound ground beef
One 1-ounce package taco seasoning
1 cup jarred cheese sauce
Seven 12-inch flour tortillas
4 tostada rounds
1 cup sour cream
1/2 head iceberg lettuce, shredded (about 4 cups)
1 plum tomato, diced
Canola oil, for brushing
Hot sauce, for serving, optional

Steps:

  • Put a rimmed baking sheet in the oven and preheat the oven to 450 degrees F.
  • Cook the ground beef with the taco seasoning according to the package instructions on the taco seasoning. Set aside until ready to use.
  • Meanwhile, in a microwave-safe bowl, heat the cheese sauce in the microwave in 30-second intervals until warm and pourable.
  • On a work surface, lay out 5 flour tortillas in a circle, overlapping slightly. Add a tortilla to the middle, on top of the others. Spread the ground beef evenly over the center tortilla. Pour the cheese onto the beef (it's okay if it's not completely covered). Cover the cheese with a layer of 4 tostada rounds. Press them down, breaking them a little, to make a flat layer. Spread the sour cream in an even layer over the tostadas. Sprinkle the lettuce over the top of the sour cream, then sprinkle with the tomatoes. Add the final tortilla over the tomato. Fold the sides of the tortillas up and over to wrap around the layers. The top should be covered in overlapping folds. Press the wrap down so that it is even and not domed. Brush the top with canola oil.
  • Remove the rimmed baking sheet from the oven. Brush the baking sheet with canola oil, then carefully transfer the wrap to the baking sheet meat-side down. Bake immediately until the top is golden brown, 4 to 5 minutes.
  • Invert the crunch wrap onto a serving platter or cutting board. Cut into wedges and serve with hot sauce if using.

1 tablespoon olive oil
1 medium yellow onion, diced
1 lb ground beef
1 package taco seasoning
1 tablespoon lime juice
nonstick cooking spray, for greasing
5 large flour tortillas
1 cup shredded cheddar cheese
1 ½ cups tortilla chips, crushed
1 ½ cups iceberg lettuce, shredded
½ cup sour cream
2 roma tomatoes, diced

Steps:

  • Make the beef filling: Heat the olive oil in a pan over medium heat. Add the onion, and cook, stirring occasionally, until caramelized, 5-6 minutes.
  • Add the ground beef and cook, breaking up with a spatula, until no longer pink, 5-6 minutes. Add the taco seasoning and lime juice and mix well. Transfer to an airtight container, cover, and refrigerate until ready to use.
  • Grease a large cast iron skillet with nonstick spray. Lay 4 of the tortillas around the edges of the pan, overlapping in the center. Top with the beef filling, shredded cheddar, tortilla chips, lettuce, sour cream, and tomatoes. Top with the remaining tortilla, then fold the overhanging tortillas toward the center to encase the filling.
  • Cook over a fire or open grill for 18-20 minutes, or until the bottom is golden brown. 5. Carefully flip, then cook for another 5-7 minutes, or until golden brown on the other side.
  • Carefully invert the crunchwrap from the skillet onto a cutting board and slice into pieces. Serve immediately.

  • Make the black bean and corn filling: Heat the olive oil in a medium pan over medium heat. Add the onion and garlic and cook until caramelized, about 3 minutes.
  • Add the tomato, corn, black beans, paprika, chili powder, cumin, salt, and pepper and mix thoroughly. Cook until the vegetables are tender, about 8 minutes. Transfer to a medium bowl, cover with plastic wrap, and refrigerate until ready to use.
  • Preheat the oven to 375˚F (190˚C).
  • Generously grease a baking sheet with nonstick spray.
  • Place 6 tortillas around the sides of the pan so half of the tortilla is hanging over the edge Place 2 tortillas in the middle, covering the exposed pan.
  • Sprinkle half of the cheddar cheese and half of the Monterey Jack cheese over the tortillas.
  • Scoop the black bean and corn filling onto the tortillas in the upper-left corner of the tray. Spread the mixture so that it fills ¼ of the sheet tray.
  • Scoop the onion and pepper filling over the tortillas in the upper-right corner of the tray. Spread the mixture so that it fills another ¼ of the sheet tray.
  • Scoop the mushroom filling over the tortillas in the lower-left corner of the tray. Spread the mixture so that it fills another ¼ of the sheet tray.
  • Scoop the tofu mixture over the tortillas in the lower-right corner of the tray. Spread the mixture so that it fills the remaining ¼ of the sheet tray.
  • Sprinkle the rest of the cheese over the fillings.
  • Place the remaining 2 tortillas over the cheese in the center of the pan.
  • Fold the overhanging tortillas onto the pan so they cover the fillings and touch the center tortillas.
  • Place another baking sheet on top. Place an oven-proof weight, such as a cast-iron skillet, on top of the sheet tray.
  • Bake for 20 minutes. Remove the weight and top baking sheet. Bake for another 15 minutes, until the tortillas are golden and crisp.
  • Flip the quesadilla onto a cutting board.
  • Slice and serve with salsa and sour cream.
