Whip up a quick bread in minutes! This one boasts fabulous flavors of subtle tea and tempting spices.

3/4 cup granulated sugar
1/2 cup butter or margarine, softened
1/2 cup prepared tea or water
1/3 cup milk
2 teaspoons vanilla
2 eggs
2 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cardamom
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 cup powdered sugar
1/4 teaspoon vanilla
3 to 5 teaspoons milk
Additional ground cinnamon

Steps:

  • Heat oven to 400°F. Grease bottom only of 8x4- or 9x5-inch loaf pan with shortening or cooking spray.
  • In large bowl, beat granulated sugar and butter with electric mixer on medium speed until fluffy. On low speed, beat in tea, 1/3 cup milk, 2 teaspoons vanilla and the eggs until ingredients are well combined (will appear curdled). Stir in remaining bread ingredients just until moistened. Spread in pan.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean (do not underbake). Cool in pan on cooling rack 10 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack. Cool 30 minutes.
  • In small bowl, stir powdered sugar, 1/4 teaspoon vanilla and 3 teaspoons of the milk, adding more milk by teaspoonfuls, until spreadable. Spread glaze over bread. Sprinkle with additional cinnamon. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

This bread machine cake is very moist, but not exactly a coffee cake. This bread was an experiment that turned out to be pretty good for breakfast (or as a snack/dessert). I topped my pieces with strawberry cream cheese. But I'm sure you could put any number of things on top to help you satisfy your sweet tooth. Enjoy!

¾ cup hot water
¼ cup Chardonnay wine
½ teaspoon vanilla extract

Steps:

  • Prepare the chai tea using one packet or two tablespoons of dry mix stirred into 3/4 cup hot water. Allow to cool for about 10 minutes.
  • Combine the chai tea, Chardonnay, vanilla extract, egg yolk, frozen raspberries, and butter in the pan of a bread machine. Add the bread flour, rye flour, all-purpose flour, wheat bran, yeast, walnuts, caraway seed, sugar, and salt.
  • Select the "Sweet" setting with a "Light Crust" and press Start. When the bread has finished baking, allow it to cool for at least 30 minutes before slicing and serving.

1 1/2 cup milk
1 Tbsp Chai tea leaves (2 tea bags)
2 1/4 cups all-purpose flour
2 tsps baking powder
3/4 tsp salt
1 1/2 tsp ground cinnamon
1 tsp ground cardamom
1/2 tsp ground allspice
1/4 tsp ground cloves
1 tsp ground ginger
3/4 cup unsalted butter (room temperature)
1 cup granulated sugar
1/2 cups light brown sugar (packed)
3 large eggs ( room temperature)
1 tsp vanilla
1 cup Chai tea milk
1 cup unsalted butter (room temperature)
1 cup cream cheese (8oz, full fat, chilled, cubed)
4 cups powdered sugar (sifted)
2 tsp vanilla
cornstarch or meringue powder (optional)
cape gooseberries
whole allspice
whole star anise
whole cloves
whole green cardamom pods

Steps:

  • Bring milk and tea to a boil in a small pot over med-high heat. Turn heat off and steep for 10mins. Strain and measure out 1 cup. Top up with milk if needed.
  • Preheat oven to 350F. Grease and flour three 6" cake rounds and line with parchment.
  • In a medium bowl, whisk flour, baking powder, spices, and salt until well combined. Set aside.
  • Using a stand mixer fitted with a paddle attachment, cream butter and sugars on med-high until pale and fluffy (approx 3mins).
  • Reduce speed and add eggs one at a time fully incorporating after each addition. Add vanilla.
  • Alternate adding flour mixture and Chai milk, beginning and ending with flour (3 additions of flour and 2 of milk). Fully incorporating after each addition.
  • Bake for 35-40mins or until a toothpick inserted into the center comes out mostly clean.
  • Place cakes on wire rack to cool for 10mins then turn out onto wire rack. Allow to cool completely.
  • Using a stand mixer or hand mixer beat butter until pale and creamy.
  • Reduce speed to low. Add powdered sugar 1 cup at a time and mix on low until well blended. Increase speed to medium and beat for 3 minutes. Add vanilla and continue to beat on medium for 1 minute.
  • Slowly add chilled cream cheese one cube at a time (about 1 tablespoon at a time). Beat well until blended and ensure no lumps of cream cheese remain.
  • If needed, add cornstarch or meringue powder 1 tablespoon at a time to stiffen the frosting (I didn't but this is an option).
  • Run mixer on low for a couple of minutes to remove any air bubbles.
  • Place one layer of cake on a cake stand or serving plate. Top with 2/3 cup of frosting and spread evenly. Repeat with remaining layers and apply a thin coat of frosting all over the cake. Chill for 20mins.
  • Use the remaining frosting to frost the cake and do a rustic swirl on the sides and top with a large offset spatula if desired.
  • Decorate top with whole spices and gooseberries if desired.

100ml vegetable oil , plus a little for greasing
300ml coconut milk (not low-fat) - if the cream has separated in the can, give it a good mix before measuring
4 large eggs
2 tsp vanilla extract
280g light brown soft sugar
250g self-raising flour
75g desiccated coconut
1 tsp ground ginger
1 tsp ground cinnamon
¼ nutmeg , finely grated
¼ tsp ground cloves
10 cardamom pods , seeds removed and crushed using a pestle and mortar
4 tbsp ginger syrup
3-4 tbsp coconut milk
140g icing sugar
2 balls stem ginger , finely chopped
chopped pistachios and coconut flakes (optional)

Steps:

  • Grease a 20 x 30cm baking tin with a little oil, and line the base and sides with baking parchment. Heat oven to 180C/160C fan/gas 4. Measure the coconut milk and oil into a jug. Crack in the eggs, add the vanilla and whisk with a fork to combine.
  • In a large bowl, mix the sugar, flour, coconut, spices and a pinch of salt. Squeeze any lumps of sugar through your fingers, shaking the bowl a few times so they come to the surface. Pour in the wet ingredients and use a large whisk to mix to a smooth batter. Pour into the tin, scraping every drop of the mixture out of the bowl with a spatula.
  • Bake on the middle shelf of the oven for 25 mins or until a skewer inserted into the middle comes out clean. If there is any wet mixture clinging to it, bake for a further 5 mins, then check again. Leave to cool for 15 mins in the tin, then transfer to a wire rack and drizzle over the ginger syrup.
  • To make the icing, mix the coconut milk with the icing sugar until smooth. Drizzle the icing over the cake in squiggles, then scatter with the chopped ginger, pistachios and coconut flakes, if using. Eat warm or cold. Will keep for 3 days in an airtight container.

2/3 cup hot water
1 cup flour
1 1/2 teaspoons baking powder

1/2 cup butter
3/4 cup granulated sugar
2 eggs
1 teaspoon watkins double-strength vanilla
2 tablespoons butter

Steps:

  • Heat oven to 325°F/170°C
  • Grease and flour a round cake pan (8"/20 cm).
  • Stir hot water into Chai Latte until blended. Measure 1/2 cup/125 mL of the chai latte for the cake and set aside 2 tbsp/30 mL for glaze.
  • Mix flour, baking powder, 1 tsp cinnamon, cloves, ginger and salt. Set aside.
  • Beat sugar and butter in large bowl with electric mixer on medium speed, scraping bowl occasionally, until fluffy.
  • Beat in eggs and vanilla until smooth and blended.
  • Gradually beat in flour mixture alternately with 1/2 cup Chai Latte until smooth.
  • Pour into pan.
  • Bake for 25-30 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes; remove from pan to wire rack.
  • Cool completely, about 1 hour.
  • Spread Chai glaze over top of cake, allowing some to drizzle down side. Sprinkle with additional cinnamon.
  • For glaze, melt butter in 1-quart/litre saucepan over medium heat.
  • Stir in remaining ingredients until smooth. Drizzle glaze on cake. If desired, grate cinnamon on top as garnish.

1 cup whole wheat flour
1 1/2 teaspoons active dry yeast

1 Tablespoon olive oil

Steps:

  • Put all ingredients in the bread machine and set it on the dough setting.
  • When the dough is done, cut it into 8 pieces. Form each piece into a ball. Cover the dough while you are rolling out the pitas.
  • On a lightly floured surface, roll each ball into a 6 - 7 inch round, flat circle. Cover and let rise on a lightly floured surface for about 30 - 40 minutes or until they are a little puffy.
  • Set a pizza stone in the oven and preheat the oven to 500 F. Doing as many as will fit on the stone (I have a large square so I could do 4 at a time), bake the pitas for 4 - 5 minutes or until lightly golden brown. After removing from the oven, immediately place the pitas in a closed paper bag or bread box until they soften. (I found my bread box worked better than the paper bag.) Once they have cooled and softened, store in a plastic bag or bread box until it's time to eat.
