½ cup all-purpose flour
⅛ teaspoon baking powder
⅛ teaspoon salt
1 cup white sugar
½ cup butter, softened
2 eggs
2 (1 ounce) squares unsweetened baking chocolate, melted
½ teaspoon vanilla extract
1 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8x8-inch square pan.
  • Sift flour, baking powder, and salt together in a bowl.
  • Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy. Beat in eggs until smooth batter forms; beat in chocolate and vanilla extract. Stir flour mixture in just until incorporated; fold in walnuts. Spread batter into prepared square pan.
  • Bake in preheated oven until top is dry and edges have started to pull away from the sides of the pan, 40 to 45 minutes. Cool completely in square pan, about 30 minutes; cut into 9 squares.

10 ml vegetable oil, for brushing
30 g flour, for sprinkling
55 g chocolate, broken into pieces
70 g butter
180 g caster sugar
70 g self raising flour
1 pinch salt
2 eggs
1/2 teaspoon vanilla extract
55 g walnuts

Steps:

  • Pour a few drops of oil into a square cake tin.Sprinkle the tin with a little flour. Set aside.Put the chocolate and butter into a heatproof bowl.Put a little water in a saucepan and heat gently until it simmers. Stand the bowl over the water making sure it does not touch the hot water.Turn the heat down to medium. Using a wooden spoon,stir the chocolate and butter until it has melted. Remove the pan and stir in the sugar ,keep on stirring ocasionally.Set aside.
  • Sieve the flour and salt together into a large mixing bowl. Break the egg into a small mixing bowl.Pick out any pieces of egg shell that have fallen into the bowl. Beat the egg lightly with a fork until the yolk and the white are mixed together.Add the vanilla extract and set aside.
  • On a chopping board,roughly chop the walnuts using a kitchen knife.Set aside.
  • Add the chocolate mixture,beaten eggs and walnuts to the flour.Mix well until smooth,using a wooden spoon.Spoon the mixture into the prepared tin and level the surface with a palette knife.
  • Place the tin in the oven and bake for 35-40 minutes or until the brownies are well risen.Wearing oven gloves, take the tin out of the oven. Leave the brownies in the tin for about 5-10 minutes or until almost cold. Using a kitchen knife, carefully cut the brownies into 12 bars.Carefully remove the brownies from the baking tin using a palette knife.

GOOEY WALNUT BROWNIES

Does 'zaar really need _another_ Brownie recipe? Probably not but this is a wonderful old recipe from the Edith Hansen cook book. It gives a chewy, dense brownie with an old fashioned flavor. Be careful to not overbake it. The original recipe calls for "part lard if desired" which I have left in as part of the recipe's charm but I always use margarine. Frosting these is gilding the lilly so I don't.

1 cup flour
1/2 teaspoon salt
4 eggs, beaten

Steps:

  • Cream shortening and sugar well.
  • If chocolate squares are used, melt and add to creamed mixture. If cocoa is used, sift together with the flour and the salt.
  • To creamed mixture, add beaten eggs, vanilla, flour, salt and nuts with some of the flour shaken over them.
  • Bake in a greased and floured 9 x 13" pan in a 350°F oven until it shrinks from the edges of the pan (about 25 to 30 minutes).
  • Let cool and cut into squares.

225 g butter
500 g dark cooking chocolate
1 1/2 cups brown sugar
1 cup white sugar
6 eggs
3 teaspoons vanilla extract

Steps:

  • Roast the walnuts in an oven set at 180°C for 10 minutes or until lightly toasted and skins have begun to crack.
  • Allow the walnuts to cool then coarsely chop and set aside.
  • Melt the butter and dark chocolate in a microwave container and stir until smooth . Allow mixture to cool slightly then transfer to a large bowl.
  • Add the brown sugar and white sugar to the chocolate mixture and stir.
  • Add the eggs and vanilla extract to the bowl and stir.
  • Stir in the flour, salt, walnuts and chocolate chips. Mixture should be quite thick.
  • Grease and line a 20cm round cake tin, pour in cake mixture and then smooth the surface.
  • Bake in a fan-forced oven at 180°C for between 1 hour to 1 hour and 20 minutes or until a skewer inserted into the centre comes out clean.
  • Allow cake to cool in the tin before turning out onto a wire rack to cool completely.
  • Serve dusted with icing sugar.

4 ounces/110 g shelled walnuts, plus more for decorating
2 to 4 tablespoons fine breadcrumbs
3 large eggs, at room temperature, separated
1/2 cup/100 g granulated sugar
4 tablespoons grated bittersweet chocolate, optional
1/4 cup/60 g butter, melted until soft enough to pour but not oily
1 tablespoon espresso, Cognac, Irish cream liqueur or other liqueur
Confectioners' sugar, for serving
Whipped cream and chocolate shavings, or coffee ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F/180 degrees C. Grease an 8-inch/20-cm round cake pan and line with parchment paper.
  • Grind the walnuts together with the breadcrumbs in a food processor. Put the egg whites in a large bowl for whisking. Whisk the yolks and granulated sugar in a bowl set over a saucepan of simmering water (without letting the bowl touch the water) until they have tripled in volume and become thick, pale and ribbony. Take the yolk mixture off the heat. Scatter the nut mixture over the yolk mixture, along with the chocolate, if using, then drizzle over the butter and espresso. Fold very gently to blend. Whisk the egg whites to stiff peaks. Stir a spoonful of whites into the batter to loosen it, and then gently fold in the remainder.
  • Pour the batter into the prepared cake pan. Bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Remove from the oven and let cool on a wire rack before flipping the cake out onto a serving plate.
  • Decorate with a sifting of confectioners' sugar and a few walnut halves. Some white blossoms look nice, too. Serve small portions of cake with whipped cream and chocolate shavings or with coffee ice cream.

Steps:

  • Preheat oven to 350 degrees F. Butter and flour an oversized, 12-cup muffin tin.
  • In a large bowl sift together the flour, cocoa powder, baking powder and salt. In a mixer with a whip attachment, cream the butter. Add the sugar and blend well. Add the eggs and vanilla, blending well. Add the dry ingredients and mix on low just until incorporated. Scoop into muffin tins and spread to cover the bottom.
  • Sauce: Whisk together the ingredients. Pour over and divide among the brownie batter filled muffin tins. Bake for 20 to 25 minutes until set. Serve at room temperature topped with whipped cream.

CARAMEL WALNUT BROWNIES

The brownie recipe is "Brownies Cockaigne" from the Joy of Cooking. I had to adapt the directions a bit to make them more readable in this format. They are absolutely the BEST brownies I've ever had. They're more fudgey and dense than cakey. I've added all kinds of things to this brownie recipe and it's always turned out good. The addition of caramel was all mine, though, so I feel like I can take a bit of the credit!

1/2 cup unsalted butter
4 ounces unsweetened baker's chocolate, coarsely chopped
2 cups sugar
4 eggs
2 teaspoons vanilla
1 cup flour
1 cup chopped walnuts
1/4 cup jarred caramel sauce (I use "Smucker's Sundae Syrup") or 1/4 cup ice cream topping (I use "Smucker's Sundae Syrup")

Steps:

  • This recipe has appeared in Joy since the original edition. Have all ingredients at room temperature. Position a rack in the center of the oven. Preheat oven to 350* F. Line a 13 x 9- inch baking pan (I always use Pyrex) with greased aluminum foil, allowing it to overhang the 2 narrow ends of the pan by 2 inches.
  • In a large, heavy saucepan over very low heat, melt butter with chocolate, stirring constantly until the mixture is smooth.
  • Remove from heat and set butter and chocolate aside until completely cool.
  • Once cool, stir in sugar and vanilla.
  • Stir in eggs until well-combined.
  • Add flour and walnuts and stir until just combined (be careful not to overmix!).
  • Scrape the batter into the pan and spread to the edges.
  • Once level, drizzle caramel ice cream topping over brownies in a swirly pattern or zig-zag. Be careful not to get too much syrup in one spot, or it'll make a delicious, gooey hole in the finished brownies. The syrup will make a slight indentation into the brownies as they bake.
  • Bake until the center of the pan is almost firm when lightly pressed and a toothpick inserted in the center comes out clean but still moist at the bottom, 23-28 minutes.
  • Remove the pan to a cooling rack and let stand several hours until completely cool.
  • Using the overhanging foil as handles, lift the brownies to a cutting board, peel off the foil, and slice into pieces.
  • **Helpful hint: Using a plastic knife will keep the brownies from sticking to the knife!***.

1 1/4 cups fine chocolate wafer crumbs, processed in blender or food processor (about 25 cookies)
3 tablespoons margarine, melted
4 cups light ricotta cheese (30 oz.)
1 1/4 cups light brown sugar, packed
1/3 cup unsweetened cocoa powder
1/2 cup half-and-half
1/4 cup all-purpose flour
1 teaspoon vanilla
1/4 teaspoon salt
3 eggs
1/2 cup walnuts, coarsely chopped (2 oz.)
confectioners' sugar (optional)

Steps:

  • Lightly grease sides of 8 or 9-inch springform pan.
  • Combine crust ingredients; mix well.
  • Press evenly over bottom of pan.
  • Chill while preparing filling.
  • In bowl of electric mixer, combine Ricotta cheese, brown sugar, cocoa, half-and-half, flour, vanilla and salt; beat until smooth.
  • Add eggs, one at a time; beat until smooth.
  • Stir in walnuts.
  • Pour batter over crust. Bake at 350 F 1 hour and 10 minutes or until center is just set. Turn off oven; cool in oven with door propped open 30 minutes.
  • Remove to wire cooling rack; loosen cake from rim of pan with metal spatula.
  • Cool completely; chill at least 4 hours.
  • If desired, sift confectioners sugar over cheesecake immediately before serving, or ice with suggested icing and garnish with chocolate curls and whole walnuts.

5/8 cup unsalted grass-fed butter
3/4 cup dark unsweetened cocoa
3/4 cup sugar alcohol (xylitol)
2 large eggs, at room temperature
1/2 cup plus 2 tablespoons almond flour
1 1/4 cups walnuts, lightly chopped
1 teaspoon vanilla extract
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 350 degrees.
  • Grease an 8" x 8" cake pan with nonstick cooking spray and line with parchment, leaving a 2-inch overhang on all sides. Grease parchment.
  • Fill a medium pot with 2 inches of water and bring to a brisk simmer. Into a bowl that fits snuggly on top of the pot, combine butter, cocoa powder, and xylitol. I wish I had a pound for every time I have made brownies in my life and for every new brownie recipe I have tried! I'd be a rich woman! This is my old standard that I return to every time. Moist and delicious with full on chocolate flavour, these are everything a good brownie should be! You can leave the nuts out if you wish. If you want you can add chocolate chips instead. They then become double chocolate fudge brownies!

1 cup unsalted butter
1 cup plain flour
4 ounces semisweet chocolate (Good quality)
4 large eggs
2 cups sugar
1 tablespoon vanilla essence
1 pinch salt
1/2 cup walnut halves, broken into pieces

Steps:

  • Pre-heat the oven to 180*C/350*F.
  • Grease and flour the bottom of an 8 inch square glass baking dish; tap out any extra flour.
  • Melt the butter along with the chocolate over low heat in a large pot.
  • Allow to cool, then stir in the sugar, eggs (one at a time) vanilla, flour and salt, mixing with a wooden spoon and being careful not to over mix, no more than 50 strokes!
  • Pour batter evenly into the prepared pan.
  • Bake until a toothpick inserted in the centre comes out a little wet if you want fudgy brownies.
  • Bake until it comes out cleaner if you want cake type brownies, about 40 to 45 minutes for the fudgy ones.
  • Let cool a bit before cutting into squares.
