SHANGHAI NOODLE SALAD

Shanghai Noodle Salad image

Tangy, addictive, Asian pasta salad. Great for lunch boxes! Instead of chili flakes, you can add 1/4 teaspoon of chili paste to the whisked dressing ingredients.

Time 2h40m

Yield 8

Number Of Ingredients 13

1 pound fresh thick Chinese wheat noodles
¼ cup ketchup
3 ½ tablespoons sesame oil
3 ½ tablespoons soy sauce
2 tablespoons brown sugar
2 teaspoons kosher salt
1 ½ teaspoons lime juice
¼ cup chopped green onion
2 carrots, peeled and shredded
1 small zucchini, cut into matchsticks
1 red bell pepper, cut into matchsticks
1 tablespoon toasted sesame seeds
1 teaspoon crushed red pepper flakes

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the Chinese noodles, and return to a boil. Cook the noodles uncovered, stirring occasionally, until they have cooked through, about 5 minutes. Drain well in a colander set in the sink. Rinse the noodles with cold water several times to chill, then drain again.
  • In a large salad bowl, whisk together the ketchup, sesame oil, soy sauce, brown sugar, kosher salt, and lime juice until the brown sugar has dissolved. Place the noodles, green onion, carrots, zucchini, red pepper, sesame seeds, and red pepper flakes into the bowl, and gently toss to thoroughly mix the salad and coat with dressing. Chill at least 2 hours before serving.

PAN-FRIED SHANGHAI NOODLES (VEGAN)

Pan-Fried Shanghai Noodles (Vegan) image

These pan-fried Shanghai noodles are perfect on those nights when all you want is a big bowl of savory noodles. Plus, they're 100% vegan and require only 6 ingredients and 20 minutes to make.

Provided by Sharon Chen

Categories     Main Course

Time 20m

Number Of Ingredients 6

1 pound Shanghai noodles (the thick ones)
3 tablespoons sesame oil
10 shiitake mushrooms, sliced
6 ounces baby bok choy, trimmed and quartered
2 tablespoons dark soy sauce
1 tablespoon coconut aminos

Steps:

  • In a medium saucepan, bring about 2 quarts water to a rapid boil. Add Shanghai noodles and cook for about 3 minutes. Check the noodles. You want the outside of the noodles to be soft but still a bit firm on the inside.
  • Remove the noodles from the heat, drain, and rinse under cold running water. Stir a few drops of oil into the noodles to prevent them from sticking together.
  • Heat up sesame oil in a large nonstick pan, a wok, or a cast iron skillet over high heat. Add mushrooms and bok choy. Saute until the bok choy starts to wilt, about 2 minutes.
  • Switch to medium heat. Add cooked noodles to the pan, followed by dark soy sauce and coconut aminos. Stir fry everything together until the noodles get an even brown color. Serve immediately!

Shanghai Style Fried Noodles image

Better than take-out, flavourful and authentic Shanghai fried noodles with chicken, mushrooms, and bok choy is made in just 10 minutes -- it's the easiest dinner!

Provided by Sam | Ahead of Thyme

Categories     Noodles

Time 15m

Number Of Ingredients 11

1 tablespoon vegetable oil
100 grams chicken breast (about half a breast), sliced into small narrow strips
1 tablespoon Chinese cooking wine
300 grams Shanghai chao mian noodles, soaked in warm water for 5 minutes and drained
3 brown mushrooms, sliced
1/2 tablespoon sesame oil
1 tablespoon soy sauce
1/2 tablespoon dark soy sauce
1 teaspoon brown sugar
1 teaspoon white pepper powder
1 large bunch bok choy, base trimmed and discarded

Steps:

  • Heat oil in large pan over high heat. Add chicken and cook for 2-3 minutes, until it changes colour. Then, add cooking wine and turn the heat down to medium-low.
  • Break the soaked noodles apart with your hands and add them to the pan, along with mushrooms and sesame oil and stir-fry together for 3 minutes, until mushroom is soft and translucent.
  • Add soy sauce, dark soy sauce, brown sugar, and white pepper. Stir for 1 minute.
  • Add bok choy and turn the heat up to medium. Cook until bok choy gets medium soft, about 1-2 minutes. Do not overcook as you want the bok choy to still be firm and not soggy. If the sauce is getting too dry, add a tablespoon of water.
  • Serve hot.

SHANGHAI'S BEST DISHES: 40 DELICIOUS FOODS | CNN TRAVEL

From edition.cnn.com

  • Xiaolongbao (小笼包) All dumplings here are good, xiaolongbao are the best. We just had to get this one out of the way first since no list of Shanghai's favorite foods would ever be complete without the mention of our famous soup dumpling, xiaolongbao.
  • Di Shui Dong ribs. These fall-off-the-bone ribs are as succulent as they are tender. Sweetly braised in soy sauce, these put those miniature rib appetizers to utter shame.
  • Braised eggplant (红烧茄子) Few truly love eggplant before they come to China, but once here, almost everyone's a convert to this purple veggie. Of all the eggplant dishes offered in this city, the braised version of this hearty vegetable is by far the most savory.
  • Chicken of the fields: aka frog (田鸡) Don't be grossed out. Below that slimy skin lies meat that is superior to chicken in every way. Frog is the soulmate to your cold Tsingtao, and Shanghai's four-legged answer to the buffalo wing.
  • The M Pavlova. Correction, the famous M Pavlova. Forget cocktails, trade in your yuan for a sweet slice of this meringue torte heaped with tropical fruit and glazed with tangy passion fruit sauce.
  • Grilled oysters (烤生蚝) Shanghai is sea food foodie heaven and we have an entire street dedicated to oysters, mussels, scallops, crawfish and abalone (and for cheap!)
  • Choose your own adventure ... in seafood. If you haven't visited the Tongchuan Lu seafood market strip, go. Go now. This is the place to test and refine your haggling skills as hunger will drive you to a new level of motivation.
  • "The chicken has no sexual experience" (童子鸡) We appreciate tongzi ji, or young chicken, if only for hilariously awkward menu translations like the one above and contributions from the local vernacular ("tongzi ji" is slang for a younger man dating an older woman, or another name for a male virgin).
  • Caramel strawberry kebabs (糖草莓串) A descendant of the classic Sweet Hawthorne Kebab (糖葫芦), the appearance of these ripe, crunchy-sweet strawberry kebabs in vendor stalls announces "Spring is here" to Shanghai.
  • Raw, drunken crab (醉蟹) Don't let those translucent crab parts and globs of orange roe intimidate you. Drunken crab, made with spotted sea crabs, is a must-try for its textures: the flesh is yielding like cold sashimi, the roe creamy but firm.

  • Shanghai Soup Dumplings (xiaolongbao 小笼包 or tang bao 汤包) These paper-thin dumplings are filled with meat and piping hot soup lying in wait to scald the uninitiated.
  • Shanghai-Style Braised Pork Belly (hong shao rou 红烧肉) This is another dish that no self-respecting Shanghai restaurant menu could ever be without. Tender pork belly cubes are doused in a sweet and sticky sauce – a mixture of vinegar, soy, and sugar that come together in a vibrant red color, hence the Chinese character “hong” (红) in the name.
  • Steamed Hairy Crab (qing zheng da zha xie 清蒸大闸蟹) Come late September/early October, the entire city of Shanghai will be in a tizzy with the arrival of this scarce delicacy from nearby Yangcheng Lake, especially the prized crab roe.
  • Shanghai Shao Mai (烧卖) Less well-known than its Cantonese cousin – the dim sum mainstay shumai – Shanghai’s version is filled with sticky rice and shaped like a bell, with a small neck and a big, round bottom.
  • Deep-Fried Dough (youtiao 油条) Often served with rice congee, youtiao is basically a savory version of a churro, if the churro were bigger and airier.
  • Egg Pancake (dan bing 鸡蛋饼) Originally from Nanjing, this is a breakfast burrito, Chinese style. The wrap is made of egg mixed with a little water, flour and cornstarch, grilled until a bit crispy on the outside but still chewy on the inside.
  • Shandong Pancake (shan dong jian bing 山东煎饼) If dan bing were a burrito, then Shandong pancake would be a crepe. Just like a crepe, the Shandong jian bing is paper-thin and cooked till crispy on a custom flat round grill.
  • Scallion Pancake (cong you bing 葱油饼) Unlike the dan bing and the Shandong jian bing, which originated somewhere else in China, the scallion pancake is pure Shanghai.
  • Soy Milk (doujiang 豆漿) Together with shao mai, fried dough sticks and pancake anything, soy milk is the final member of Shanghai’s undisputed Four Kings of Chinese Breakfast.
  • Steamed Buns (baozi 包子) Baozi refers to a family of steamed buns made with a variety of fillings. Minced pork is the most common ingredient, but do try the vegetable version and the red bean paste.
