SKILLET CORNBREAD WITH STRAWBERRY JAM

Skillet Cornbread With Strawberry Jam image

Provided by Alex Guarnaschelli

Time 55m

Yield 8 to 10 servings

Number Of Ingredients 16

1 1/4 cups coarsely ground cornmeal
3/4 cup all-purpose flour
1/4 cup sugar, plus more for sprinkling
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup whole milk
1 cup buttermilk
2 large eggs, lightly beaten
1 stick unsalted butter, melted
1 pound strawberries, hulled and halved
1 lemon
Juice of 1/2 orange
Pinch of salt
1/2 cup sugar
1 tablespoon unsalted butter

Steps:

  • Make the cornbread: Place a 9-inch cast-iron skillet in the oven and preheat to 400 degrees F. Whisk the cornmeal, flour, sugar, salt, baking powder and baking soda in a large bowl. Whisk in the milk, buttermilk, eggs and almost all of the melted butter, reserving about 1 tablespoon for brushing the skillet.
  • Carefully remove the hot skillet from the oven and brush the bottom and sides with the reserved melted butter. Pour the batter into the skillet, return to the oven and bake until a toothpick inserted into the center of the cornbread comes out clean, 20 to 25 minutes. Let cool 10 to 15 minutes, then sprinkle lightly with sugar for texture.
  • Meanwhile, make the jam: Cut the strawberries width-wise into 1/4-inch-thick slices (the slices should be thin enough to bend slightly). Using a vegetable peeler, remove the zest from 1/3 of the lemon with a light touch, leaving the pith behind; transfer to a large bowl. Squeeze the lemon juice into the bowl. Add the orange juice, salt, sugar and strawberries and toss. Cover and refrigerate until the cornbread is out of the oven.
  • Melt the butter in a large skillet over medium-high heat. Add the strawberry mixture and cook, stirring, until the juices reduce and thicken slightly, about 10 minutes. Slice the cornbread and serve with the strawberry jam.

1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt

EASY STRAWBERRY JAM

Easy strawberry jam image

Easy, no pectin strawberry jam perfect for spreading onto toast or dolloping onto scones with lashings of whipped cream.

Provided by Alida Ryder

Categories     Jam     preserves

Time 55m

Number Of Ingredients 4

4 cups chopped strawberries
2 cups sugar
1/4 cup freshly squeezed lemon juice
1 vanilla pod

Steps:

  • First, prepare your preserving pot. Wash jars, lids and bands in hot, soapy water. Heat jars in simmering water. Set lids and bands aside.
  • Combine the crushed strawberries, lemon juice, vanilla and sugar in a large saucepan. Bring to a boil over medium heat, stirring constantly to dissolve sugar. Boil, stirring frequently, until mixture thickens and gels (approximately 15 minutes). To test if the jam is ready, spoon a little onto a small plate and wait 30 seconds. Drag your finger through the jam and if the remaining jam doesn't "bleed" back, the jam is ready. Remove the jam from the heat and skim off any foam that may have risen to the top.
  • Ladle the hot jam into hot jars, one at a time, leaving 1/4 inch (0.5cm) headspace. Wipe the rim of the jar and center on the lids. Apply the bands and adjust to fingertip tight.
  • Process the filled jars in boiling water for 10 minutes. Remove pot lid. Wait 5 minutes, then carefully remove jars, cool and store up to 1 year in the pantry.

Yield Makes one 9-by-5-inch loaf

Number Of Ingredients 12

8 ounces (2 sticks) unsalted butter, softened, plus more for pan
1 1/2 cups all-purpose flour, plus more for dusting
3/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 large eggs, separated
2/3 cup plus 2 tablespoons sugar
2 teaspoons freshly grated lemon zest
1 teaspoon pure vanilla extract
1 tablespoon fresh lemon juice
1/2 cup plain whole-milk yogurt
1/2 cup strawberry jam

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-5-by-2 1/2-inch loaf pan. Dust with flour; tap out excess. Sift together flour, baking soda, baking powder, and the salt.
  • Put egg whites in the bowl of an electric mixer; beat on medium speed until soft peaks form. Add 1/3 cup plus 1 tablespoon sugar; beat until stiff, glossy peaks form. Transfer meringue to a large bowl.
  • Fit mixer with the paddle. Put butter in a clean mixing bowl; mix on medium-high speed until fluffy, 2 to 3 minutes. Mix in flour mixture in three batches, alternating with two batches of yogurt.
  • Whisk one-third meringue into batter. Gently fold in remainder with a rubber spatula. Spoon batter into pan.

  • Cut cake horizontally into three layers. Spread half of jam on bottom layer. Top with middle layer. Spread remaining jam on middle layer. Top with third layer. Refrigerate until set, about 2 hours.

STRAWBERRY PRESERVES BREAD

Strawberry Preserves Bread image

I got this receipe from "The Texas Experience" cookbook. I've tweaked it to my personal preferences and I'm very pleased with the results. It's a very tender bread with a subtle hint of strawberry flavor. I used Imitation Strawberry Extract because that's all I could find locally. If you try it please let me know if you're pleased with the results also.

STRAWBERRY BREAD

Strawberry Bread image

Grab some fresh strawberries and whip up a loaf of this delicious Strawberry Bread! This bread bakes up soft and moist, it is filled with diced strawberries, and flavored with vanilla and a splash of almond extract.

Provided by Allison - Celebrating Sweets

Categories     Breakfast     Dessert

Time 1h5m

Number Of Ingredients 12

1 ½ cups all purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
½ cup oil*
1 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
½ teaspoon almond extract
¾ cup buttermilk
1 ½ cups diced fresh strawberries
1 tablespoon all purpose flour (for the strawberries)
1 tablespoon granulated sugar (for topping)

Steps:

  • Preheat oven to 350°F with a rack in the middle of the oven. Grease a 9x5 loaf pan and set aside.
  • In a medium bowl, combine flour, baking powder, and salt.
  • In a separate bowl, whisk oil, sugar, eggs, vanilla, almond extract, and buttermilk. Add the dry ingredients and whisk until combined.
  • In another bowl combine the strawberries and 1 tablespoon flour. Add the strawberries to the batter (reserving a few for the top) and stir with a rubber spatula until combined.
  • Pour batter into prepared loaf pan and smooth the top. Sprinkle the reserved strawberries on top and sprinkle 1 tablespoon of sugar all over the batter. Bake for 45-55 minutes, until a toothpick inserted into the center comes out clean (be careful not to overbake). Rotate the pan halfway through bake time to ensure even browning. Place the pan on a rack to cool for 15 minutes, then carefully remove from the pan and place directly on the wire rack to cool. Note: I like to run a thin knife between the bread and the pan to help it release from the pan easier.

STRAWBERRY JAM

Strawberry Jam image

This strawberry jam canning recipe from Paula Deen is a sweet spread perfect for breakfast or brunch. Ingredients include sliced strawberries, sugar and pectin. Prep time is 30 minutes and cooking time is 30 minutes on the stovetop.

Provided by Paula Deen

Time 30m

Yield 30

Number Of Ingredients 3

4 cups sliced strawberries
4 cups sugar
1 packet pectin

Steps:

  • Add the strawberries, sugar and pectin to a medium saucepan over medium-low heat. Stir gently as the strawberries break down and begin to thicken. Cook for 20 minutes. Cool and store in jars.
  • Properly-handled sterilized equipment will keep canned foods in good condition for years. Sterilizing jars is the first step of preserving foods.
  • Tips:
  • Jars should be made from glass and free of any chips or cracks. Preserving or canning jars are topped with a glass, plastic, or metal lid, which has a rubber seal. Two piece lids are best for canning, as they vacuum seal when processed.
  • To sterilize jars, before filling with jams, pickles, or preserves, wash jars and lids with hot, soapy water. Rinse well and arrange jars and lids open sides up, without touching, on a tray. Boil the jars and lids in a large saucepan, covered with water, for 15 minutes.
  • Use tongs when handling the hot sterilized jars, to move them from boiling water. Be sure the tongs are sterilized too, by dipping the ends in boiling water for a few minutes.
  • As a rule, hot preserves go into hot jars and cold preserves go into cold jars. All items used in the process of making jams, jellies, and preserves must be clean. This includes any towels used, and especially your hands.
  • After the jars are sterilized, you can preserve the food. It is important to follow any canning and processing instructions included in the recipe and refer to USDA guidelines about the sterilization of canned products.
  • Makes 1 quart

SUGAR FREE STRAWBERRY JAM

Sugar Free Strawberry Jam image

Making sugar free strawberry jam is easy-peasy! This recipe is so fruity and naturally sweet you'll wonder why you ever bought jam in a store. Bring on breakfast!

Provided by Katrin Nürnberger

Categories     Breakfast

Time 50m

Number Of Ingredients 5

400 g / 14 oz strawberries, diced
2 tbsp water
1 tsp chia seeds (ground)
1 tsp lemon juice (optional)
1 tbsp powdered sweetener (optional)

Steps:

  • Chop the strawberries and place them in a saucepan together with the water.
  • Bring to the boil (lid on), then turn down the heat medium and let it bubble away for 15 minutes. Only add the lemon juice if you want to store the jam for longer than 1 week - it prevents the growth of bacteria.
  • Mash the strawberries with a potato masher (or with a fork), then continue to cook on low-medium for another 30 minutes until reduced by half. You want it to bubble peacefully. Bubbles will become smaller as the liquid evaporates. Stir regularly with a spatula to prevent the jam from burning. Towards the end of cooking, stir constantly.
  • Taste. If necessary, sweeten with 1 tbsp of powdered erythritol.
  • Add the ground chia seeds and stir. Cool and fill into a sterilised jar. Store in the fridge.
