2 1/2 cups cake flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
One 1.4-ounce box white chocolate pudding
1 cup milk
1 cup white chocolate chips
1/2 cup vegetable oil
4 large eggs, at room temperature
1 teaspoon vanilla extract
1 1/2 cups fresh raspberries
1/4 cup sugar
2 tablespoons lemon juice
1 tablespoon cornstarch
3/4 cup heavy cream
7 ounces dark chocolate, coarsely chopped
2 sticks (1 cup) butter
1 cup shortening
1 teaspoon vanilla
5 cups confectioners' sugar

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Coat two 9-inch round cake pans with cooking spray.
  • Whisk together the flour, granulated sugar, baking powder, baking soda, salt and pudding mix in a medium bowl. Set aside. Bring the milk to a boil and add the white chocolate chips. Let stand, covered, for 5 minutes, then stir until completely incorporated. Allow the white chocolate mixture to cool completely. Beat the oil, eggs and white chocolate mixture in a large bowl with an electric mixer until fully incorporated, about 2 minutes. Add the vanilla and reduce the speed to low. Gradually add the flour mixture, beating until combined, about 3 minutes.
  • Divide the batter evenly among the prepared pans. Bake until golden and a toothpick inserted into the center of the cakes comes out clean, 25 to 30 minutes. Allow the cakes to cool in the pans for 10 minutes, then turn out on wire racks to cool completely, about 45 minutes.
  • For the raspberry filling: Combine the raspberries, sugar, lemon juice and cornstarch in a small saucepan. Place over medium-high heat and slowly bring to a boil, stirring constantly until thickened. Let cool completely, about 45 minutes.
  • For the chocolate ganache: Heat the heavy cream to boiling. Pour over the chocolate in a heat-proof bowl. Stir until completely smooth. Allow to cool to room temperature, about 45 minutes.
  • For the buttercream: Beat the butter, shortening and vanilla in a large bowl with an electric mixer until combined and smooth, about 2 minutes. Add the confectioners' sugar and beat until light and fluffy, about 2 minutes.
  • To assemble the cake: Level both cakes by running a sharp knife around the top edge of each cake, scoring it, then carefully cutting through the cakes along the score lines. Fill a piping back fitted with a No.12 tip with buttercream icing. Pipe a dam around the inside of the bottom layer of cake. Inside the dam, spread a very thin layer of raspberry filling, about 3 tablespoons (for this filling, less is more). Then top with a more generous layer of chocolate ganache, about a quarter-inch thick. Stack the other cake layer on top and cover the whole cake with buttercream icing.

1/4 cup plus 2 tablespoons all-purpose flour
1/4 cup sugar
1/4 teaspoon baking soda
1/4 teaspoon baking powder

2 tablespoons milk
1 tablespoon vegetable oil
1 teaspoon lemon extract
Zest of 1 lemon
1 large egg
1 ounce red candy melting wafers
2 tablespoons plus 2 teaspoons unrefined coconut oil
1 ounce pink candy melting wafers
8 ounces white chocolate, chopped
1/2 cup sugar
3 tablespoons cornstarch
1/8 teaspoon kosher salt
1 cup heavy cream
1 cup milk
3 tablespoons freeze-dried raspberry powder
2 tablespoons unsalted butter, cut into small cubes
1 teaspoon vanilla bean paste
Deep pink gel food coloring, for the pudding
1/4 cup raspberry jam

Steps:

  • For the lemon cake: Preheat the oven to 350 degrees F. Spray an 8-inch square baking dish with nonstick cooking spray.
  • Whisk together the flour, sugar, baking soda, baking powder and salt in a large bowl. Whisk in the milk, vegetable oil, lemon extract, lemon zest and egg until smooth and combined.
  • Pour into the prepared baking dish and bake until a toothpick inserted in the center comes out clean, 7 to 10 minutes. Cool for 10 minutes on a wire rack, then turn out onto a cutting board. Use a 2 1/2-inch round biscuit cutter to cut 6 circles from the cake (save the scraps for another use); set aside.
  • For the white chocolate domes: Meanwhile, add the red candy melting wafers and 1 teaspoon of the coconut oil to a small microwave-safe bowl. Add the pink candy melting wafers and 1 teaspoon coconut oil to another small microwave-safe bowl. Microwave in 15-second intervals, stirring in between each, until the melting wafers and coconut oil are melted and the mixture is smooth, about 1 minute. Transfer the red mixture to a small piping bag and the pink mixture to a separate small piping bag.
  • Pipe the red mixture back and forth in thin stripes in the cavities of a silicone half-sphere mold with six 3-ounce cavities. Repeat with the pink mixture, piping back and forth to mingle pink stripes with the red. Freeze until the chocolate is hardened, about 5 minutes.
  • Add 1 tablespoon coconut oil and 4 ounces of the white chocolate to a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until the chocolate and coconut oil are melted and the mixture is smooth, about 1 minute.
  • Pour the chocolate mixture on top of the set candy in the silicone cavities and tilt the mold to swirl the chocolate around until each half-sphere is coated entirely (you can also use your finger to swirl the chocolate around). Tap out any excess chocolate and freeze until the chocolate is hardened, about 5 minutes. Repeat with the remaining 4 ounces white chocolate and 1 tablespoon coconut oil to create a second white chocolate layer. (Some chocolate may spill over on top of the mold, which is fine; it will break off when you unmold the domes.) Tap out any excess chocolate and freeze until the chocolate is hardened, about 5 minutes.
  • For the filling: Whisk together the sugar, cornstarch and salt in a medium bowl. Whisk together the cream, milk and raspberry powder in a medium saucepan. Cook over medium heat, whisking occasionally, until small bubbles begin to form around the edges, 4 to 5 minutes. Add the dry mixture to the saucepan in 3 additions, whisking well after each addition. Cook, whisking constantly, until the mixture is thickened, 4 to 5 minutes. (Do not allow the mixture to boil; adjust the heat if needed.) Remove from the heat and add the butter, vanilla and 3 drops of gel coloring. Whisk to combine. Transfer the pudding to a medium glass bowl, then cover and refrigerate for 30 minutes.
  • Scoop 3 tablespoons of the pudding into each white chocolate cavity in the half-sphere mold. Using the back of a teaspoon, make a divot in the middle of each portion of pudding about halfway down. Pour a heaping teaspoon of raspberry jam into each divot. Top each half-sphere with a cake round, pressing down gently into the pudding (use a paper towel to wipe away any pudding that may seep out of the mold). Freeze until the pudding is set, about 30 minutes.
  • Gently peel the mold away from each of the half-spheres and trim the edges with a paring knife if needed. Place them cake-side down on a serving platter. Let sit at room temperature for 10 minutes before serving.

1 box duncan hines french vanilla cake mix
3.3 oz box white chocolate pudding
1 1/3 c water
3 large eggs
1/3 c canola oil
JELLO MIX
1 1/2 c water
3 oz box raspberry jello
12 oz can(s) cream soda
WHITE CHOCOLATE MARSHMALLOW CREAM FROSTING
8 oz pkg cream cheese
7 oz jar(s) marshmallow cream
3.3 oz box white chocolate pudding
8 oz pkg cool whip

Steps:

  • 1. PREHEAT oven to 350°F for metal or glass pans, 325°F for dark or coated pans.
  • 2. BLEND dry mixes (cake and pudding), water, oil and eggs in large bowl at low speed until moistened (about 30 seconds). BEAT at medium speed for 2 minutes.
  • 3. POUR batter in pan 9X13 glass dish and bake for 33 minutes.
  • 4. When cake is approximately 5 minutes from being done, begin the Jello mixture.
  • 5. Bring 1 1/2 cups of water to a full boil. Add jello and mix until jello is fully dissolved.
  • 6. Add 12 oz cream soda to jello.
  • 7. Pull cake from oven and liberally poke fork holes in cake.
  • 8. Pour jello mix over cake and place in refrigerator for at least one hour.
  • 9. After cake has fully cooled, make White Chocolate Marshmallow Cream Frosting frosting.
  • 10. Soften 8 oz cream cheese.
  • 11. Blend with 7oz jar of marshmallow cream and 3.3 oz box of white chocolate pudding.
  • 12. Add 8oz tub of cool whip and blend completely.
  • 13. Spread frosting (all of it) evenly over fully cooled cake cake.
  • 14. Cut and serve.
  • 15. You may want to garnish with fresh raspberries and white chocolate curls for a more elegant look when entertaining.
  • 16. Store leftover cake (if there is any) in a covered container in refrigerator.

  • Preheat oven to 350°. Line two greased 9-in. round baking pans with waxed paper; grease paper and set aside., In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in melted chips and vanilla. Combine flour, baking powder and soda; add to creamed mixture alternately with buttermilk, beating well after each addition. Transfer to prepared pans., Bake 26-30 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pans to wire racks to cool completely; gently peel off waxed paper., In a small saucepan, bring raspberries and water to a boil. Reduce heat; simmer 5 minutes. Steps:

  • For cake: Preheat oven to 325 degrees F. Grease bottoms of 12-inch, 9-inch and 4-inch round pans and line them with parchment or wax paper. Sift together flour and baking powder. Set aside. Cream together butter and sugar until fluffy. Set aside. Beat egg whites until stiff, but not dry. Set aside.
  • With mixer at low speed, alternately add flour and milk to butter. Beat in vanilla. Gently fold in egg whites and pour into prepared pans. Bake until toothpick inserted into center comes out clean.
  • For mousse: Melt white chocolate in double boiler or very carefully in microwave. Cool. Whip cream until soft peaks form. On low speed, pour in cooled, melted white chocolate.

  • To assemble: Spread raspberries over both the 12-inch and 9-inch layers of prepared cake. Top each with raspberries, approximately 1/2-inches apart. Place 9-inch cake layer on top of 12-inch layer. Place 4-inch layer on very top. Decorate with buttercream.

Steps:

  • In 1 1/2-quart saucepan, mix 1/4 cup sugar, the cornstarch and 1/8 teaspoon salt; stir in 1 cup wine cooler. Cook over medium heat, stirring constantly, until mixture thickens and boils.   • Fold egg mixture into whipped cream. Add flour mixture, about 1/2 cup at a time, folding gently after each addition until blended. Pour into pans.
  • Bake 8-inch rounds 35 to 40 minutes, 9-inch rounds 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool completely on cooling rack, about 1 hour.
  • In 1-quart saucepan, melt 3 ounces baking bars over low heat, stirring occasionally; cool. Beat melted baking bars and remaining frosting ingredients with electric mixer on medium speed until smooth and spreadable. If necessary, stir in additional wine cooler, 1 teaspoon at a time.
  • Fill cake layers with raspberry filling. Spread frosting over side and top of cake.

1 cup whole milk
¾ cup white sugar
1 vanilla bean, slit lengthwise, seeds scraped
1 pinch salt
5 egg yolks
1 (8 ounce) package white chocolate chips
2 cups heavy whipping cream
1 teaspoon vanilla extract
1 (12 ounce) package frozen raspberries

Steps:

  • Heat milk, sugar, vanilla bean and seeds, and salt in a saucepan over medium heat until warm, about 5 minutes.
  • Whisk egg yolks and about 1 cup warm milk mixture in a bowl; stir egg mixture into saucepan. Continue to cook and stir until custard thickens enough to coat the back of a spoon, 5 to 7 minutes. Remove vanilla bean. Stir white chocolate chips into custard until melted. Pour custard into a large bowl and stir in heavy cream and vanilla extract. Cover and refrigerate until chilled.
  • Pour the chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency.
  • Heat raspberries in a saucepan over medium heat until raspberries begin to fall apart, 7 to 10 minutes. Press raspberries through a sieve over a bowl to remove the seeds; discard seeds.
  • Gently swirl raspberries into the soft ice cream creating ribbons of raspberries. Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

John Whaite shares his recipe for a light, fruity layer cake with chocolate ganache and simple sponge

200g butter, chopped into small cubes, plus extra for greasing
100g white chocolate, broken into pieces
4 large eggs
200g caster sugar
200g self-raising flour
175g raspberries, fresh or frozen
200g white chocolate, chopped
250ml double cream
a little icing sugar, for dusting

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base of 2 x 20cm round, loose-bottomed cake tins. Put the butter and chocolate in a heatproof mixing bowl, set over a pan of barely simmering water and allow to melt slowly, stirring occasionally.
  • When the butter and chocolate have melted, remove from the heat and allow to cool for 1-2 mins, then beat in the eggs and sugar with an electric whisk. Fold in the flour and raspberries.
  • Gently pour the mixture into the tins and bake for 20-25 mins or until golden brown and a skewer inserted into the centre comes out clean (the raspberries may leave a residue on the skewer, so don't be fooled by their juiciness). Remove the cakes from the oven and allow to cool in the tins for 10 mins before turning out onto a wire rack.
  • To make the ganache, put the chocolate in a heatproof bowl with 100ml of the cream, set over a pan of barely simmering water. 1 cup raspberry-flavored wine cooler
1 tablespoon butter or 1 tablespoon margarine
1/8 teaspoon almond extract
2 drops red food coloring
3 ounces white chocolate baking bar, chopped
2 1/4 cups all-purpose flour
1 1/2 cups sugar
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 2/3 cups heavy whipping cream
3 eggs
1 teaspoon almond extract
3 ounces white chocolate baking bar, chopped
3 1/2 cups powdered sugar
4 tablespoons raspberry-flavored wine coolers (plus 2 teaspoons)
1/4 cup butter or 1/4 cup margarine, softened
1/2 teaspoon almond extract

Steps:

  • Prepare Raspberry Filling: Mix 1/4 cup sugar, corn starch and 1/8 tsp. salt in a 1 1/2-quart saucepan. Stir in wine cooler. Cook over medium heat, stirring constantly, until mixture thickens and boils.
  • Boil and stir 1 minute; remove from heat. Stir in wine cooler, butter, 1/8 tsp. almond and food coloring.
  • Cover and refrigerate until chilled.
  • Prepare cake: Heat oven to 350-degrees. Grease and flour 2 round cake pans, 8-inchs or 9-inches.
  • Heat white baking bar over low heat, stirring occasionally, until melted; cool.
  • Mix flour, 1 1/2 cups sugar, baking powder and 1/2 tsp. salt; reserve.
  • Beat whipping cream in chilled large bowl until stiff; reserve.
  • Beat eggs about 5 minutes or until thick and lemon colored; beat in melted baking bar and 1 tsp. almond extract.
  • Fold egg mixture into whipping cream.
  • Add flour mixture, about 1/2 cup at a time, folding gently after each addition until blended.
  • Pour into pans. Bake 8-inch rounds 35 to 40 minutes, 9-inch rounds 30 to 35 minutes or until they test done.
  • Cool 10 minutes; remove from pans.
  • Cool completely on wire racks. Fill layers with Raspberry Filling.
  • Prepare White Chocolate Frosting: Heat white baking bar over low heat, stirring occasionally, until melted; cool.
  • Beat melted baking bar and remaining ingredients in medium bowl on medium speed until smooth and of spreading consistency.
  • If necessary, stir in additional wine cooler, 1 teaspoon at a time. Spread over side and top of cake.

  • Add chopped white chocolate and heavy cream to a microwave safe bowl. Microwave for 30 seconds, stir, then continue to microwave at 15 second intervals, stirring in between, until chocolate is completely smooth; set aside to cool for 5 minutes.
  • Once the cakes are completely cooled, use a large serrated knife to remove the domes from the top of the cakes so that they’re flat.
