KIWI PARFAIT
A healthy Kiwi Parfait with Greek Yogurt, lime zest, and your favorite sweetener. You'll have a delicious breakfast ready in 10 minutes or less!

Steps:
- In a blender, puree half the diced kiwi. Set aside.
- In a small bowl, mix the non fat Greek yogurt, lime zest, and honey
- Fold the pureed kiwi into the yogurt mix.
- Layer the yogurt, granola and remaining diced kiwi in small glasses, sprinkling a little mint on top of each kiwi layer.
- Add blackberries if using any. Serve immediately.

BLUEBERRY KIWI QUINOA PARFAIT

Steps:
- Place the quinoa in a fine-mesh sieve and rinse well. Transfer to a small saucepan with 1 1/2 cups water and 1/4 teaspoon salt. Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook until the liquid is absorbed and the quinoa is cooked through, about 15 minutes. Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork and set aside to cool completely.
- In a medium bowl, stir to combine the yogurt, honey, vanilla extract and lemon zest. To make filling the glasses easier and cleaner, transfer the yogurt to a large resealable plastic bag or piping bag and snip off a corner.
- Place two 12-ounce glasses on a work surface and start to layer into each glass about 2 tablespoons blueberries, 2 tablespoons diced kiwi, 1/2 cup yogurt, a spoonful of quinoa and a sprinkle of almonds. Repeat the layering a second time, then top with a spoonful of quinoa, a few almonds, and scatter additional fruit over the top. Serve immediately or cover and refrigerate overnight.

- Whisk together the yogurt, honey and lime zest in a small bowl.
- Place 4 small (6-ounce) juice glasses on a work surface and put a spoonful of the yogurt in the bottom of each glass. Add about 2 tablespoons of the quinoa to each glass, followed by about 2 tablespoons of the diced strawberries and kiwi. Repeat the layering in each glass, and scatter any additional fruit that is left over the top layer of yogurt. Serve immediately.
STRAWBERRY KIWI QUINOA BREAKFAST PARFAIT

- Place 4 small (6-ounce/180-ml) juice glasses on a work surface and put 2 tablespoons of the quinoa in the bottom of each glass. Add 1/4 cup (60 ml) of the yogurt to each glass, followed by about 2 tablespoons of the diced strawberries and kiwi. Repeat the layering in each glass, and scatter any additional fruit that is left over the top layer of yogurt. Serve immediately.

- Dissolve gelatin in boiling water.
- Stir in grated lemon peel; chill until consistency of unbeaten egg white.
- Fold in whipped topping; set aside.
- Cut one kiwi fruit into 8 slices; chop remaining two.
- Alternate layers of gelatin mixture and chopped kiwi fruit into 8 parfait glasses; chill 1 hour.
- Garnish with sliced kiwi fruit.

Steps:
- Place the pureed kiwis, sugar syrup, and lemon juice in the ice cream machine freezer. Begin freezing according to manufacturer?s instructions.
- If you're using the egg white, whip the egg white until very frothy, but not yet at soft peak. Stop the machine briefly and fold in the egg white. Continue freezing until entirely frozen.
- Remove to a sealable container. Keep in the freezer.
- Place both in a saucepan. Bring to the boil. As the liquid clears, cover and let cool. Store in the refrigerator; will keep for weeks.

KIWI PARFAIT
Steps:
- In a Champagne glass, begin layering the sliced kiwi, cake and whipped cream until you reach the top of the glass. Finish with a spoon of cream and chopped kiwi. In the microwave, melt the chocolate according to directions. Fill a small piping bag with the chocolate and pipe a message onto the serving plate. Arrange the berries around the message and place the parfait in the center. Serve chilled.

- Make the yogurt mixture. In a small mixing bowl, combine the yogurt with the kiwi pulp, honey, and vanilla. (To make the kiwi pulp -- peel each kiwi and then on a clean cutting surface, finely chop them until you have super tiny pieces. Press them with the bottom of a fork to "purée" them further and to extract more juice.)
- Assemble the Parfaits. Use 2 (approximately 12-ounce), clear glasses or jars. Use about 12 baby kiwi halves to make the bottom layer in each glass or jar. (See bottom notes!) Then add 2 tablespoons of the granola on top of the baby kiwi, in each one. Follow the granola with about 2 tablespoons of the yogurt mixture, in each one. Repeat this twice more, and then finish the baby kiwi. They should be kept refrigerated until you're ready to serve.
