LEMON-VANILLA CAKE ROLL

- Make the cake: Preheat the oven to 375 degrees F. Coat an 11-by-17-inch rimmed baking sheet or jelly roll pan with cooking spray; line the bottom with parchment paper and spray the parchment. Beat the egg whites and lemon juice in a large bowl with a mixer on medium speed until soft peaks form, about 3 minutes. Add 1/2 cup confectioners' sugar. Increase the speed to medium high and beat until stiff peaks form, 3 to 4 minutes.
- Whisk the egg yolks with the vegetable oil, milk and vanilla seeds in a separate large bowl until smooth. Sift the remaining 1 cup confectioners? sugar, the flour, baking powder and salt into a medium bowl; whisk into the yolk mixture until smooth. Stir about one-third of the whites into the batter with a rubber spatula, then fold in the remaining whites in two batches. Spread the batter in the prepared pan; bake until the cake springs back when gently pressed, 12 to 14 minutes.
- Immediately sift confectioners' sugar generously over the top of the warm cake and loosen the edges with a knife; lay a clean kitchen towel (not terry cloth) over the cake. Place another baking sheet over the towel and flip the cake with the baking sheets to invert it onto the towel. Remove the top baking sheet and parchment. Starting at a short end, roll up the cake and the towel together into a spiral. Transfer seam-side down to a rack and let cool completely.
- Meanwhile, make the frosting: Whisk the egg whites, granulated sugar, vanilla seeds and salt in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Cook, whisking, until the sugar dissolves, 2 to 3 minutes. Transfer the mixture to a stand mixer and beat with the whisk attachment on medium-high speed until cooled and stiff peaks form, 6 to 8 minutes. Beat in the butter, 1 piece at a time, until combined (the mixture may look curdled). Add the lemon zest and juice. Switch to the paddle attachment and continue to beat until smooth, about 2 minutes.
- Gently unroll the cake. Spread 2 cups of the frosting over the cake about 1/4 inch from the edges, then top with a layer of the lemon curd; swirl together. Reroll the cake (without the towel). Trim the ends with a serrated knife. Transfer to a platter and spread the remaining frosting on the top and sides of the cake.
SIMPLE VANILLA SPONGE CAKE ROLL CAKE
This is a fun, simple sponge cake recipe you make in a shallow baking sheet. You can fill it immediately when cooled with any type of filling. It's fun to make and easy to roll. If you don't have cake flour, just measure out regular all purpose flour, remove 1 Tablespoon and sift the flour with the baking powder.

- 1. Preheat oven to 450 degrees. Line a half sheet pan with a silpat and grease with either shortening or butter-sides and bottom silpat also.
- 2. In the bowl of an electric mixer using the whisk attachment, beat eggs and sugar on low, increasing speed gradually to high, beating for 10 minutes or until light and very very fluffy-doubling in size or more. If you don't have cake flour, remove 1 Tablespoon of flour to substitute and sift with baking powder. Gradually add flour mixture to mixing bowl, mixing on low, adding vanilla, and increase to medium speed and beat 1 minute.
- 3. This is the tricky part: Pour the batter gradually around edges of prepared pan, letting it settle into corners before pouring remaining batter in a circular motion to fill most of inside of pan, letting it sit for a few minutes to settle in and even out. Bake 5 minutes.
- 4. When you remove it from the oven immediately pull off top layer of cake-very thin and dark. This will expose the soft inside of cake and make it very easy to roll. Flip pan over onto another half sheet pan and peel off silpat. Flip back over. (if cake sticks, loosen edges with fingers, pulling gently away from sides of pan before flipping)
- 5. Now you can whip up some cream, add fruit, fill with whatever you'd like and then roll from the long side over into a beautiful and soft roll. Frost or sift with powdered sugar. I like to roll it, wrap it in plastic wrap and refrigerate it and decorate it later, right before serving.

- Preheat oven to 350°F.
- Line the bottom of a jelly roll pan with parchment paper then grease.
- Sift together flour, baking powder, and salt in a small bowl.
- Beat egg yolks, sugar, and vanilla extract in a small bowl.
- Beat egg whites until stiff peaks form. Fold in yolk and flour mixture.
- Bake 20 minutes or until golden brown. Cool 5 minutes in pan, unmold and roll into roll starting from the short side(with paper still on) and refrigerate 5 minutes.
- Roll cake out and spread with cream then carefully roll up. Frost outside with cream and garnish with fresh strawberries.
- For sweetened cream beat whipping cream on low speed until frothy.
- Add sugar and flavoring and continue beating until soft peaks form (for best results freeze bowl and beaters before using).

With an electric mixer fitted with a wire whip, beat the eggs and 1 cup of the sugar on medium-high speed in a large mixing bowl until the mixture is pale yellow, thick, and tripled in volume, about 8 minutes. With the mixer on low speed, beat in the warm milk mixture. Sift the flour, baking powder, and salt into a small mixing bowl. Add half the flour mixture to the egg mixture and blend thoroughly until smooth. Repeat with the other half. Add the vanilla and mix gently. - Heat oven to 160C/140C fan/gas 3. Grease a round, deep 20cm tin, then line the base and sides with non-stick baking paper.
- Using electric beaters or a tabletop mixer, beat the butter, sugar, vanilla and ¼ tsp salt together until pale and fluffy, then pour in the eggs, one at a time, giving the mix a really good beating before adding the next.
- Add 1 tbsp of the plain flour if the mix starts to look slimy rather than fluffy. Beat in the yogurt. Mix the flours; then, using a large metal spoon, fold them into the batter, followed by the milk.
- Spoon the mix into the tin and bake for 1 hr 20 mins or until well risen and golden - a skewer inserted into the middle should come out clean.
- Meanwhile, make the syrup by gently heating 50ml water with the sugar and vanilla in a pan until the sugar dissolves. Set aside. Once the cake is out of the oven, leave to cool for 30 mins in the tin, then use a skewer to poke holes all over the cake, going right to the bottom. Pour the syrup over, letting it completely soak in after each addition.
- Leave to cool completely, then either wrap the cake well or fill and ice it. If you wrap it with baking parchment and cling film, the unfilled cake will keep well for up to 3 days, or in the freezer for up to a month.

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Line a greased 15x10x1-in. baking pan with waxed paper; coat the paper with cooking spray and set aside. , In a large bowl, beat egg yolks on high speed for 5 minutes or until thick and lemon-colored.
