BEST EVER SWEET PICKLES

Best Ever Sweet Pickles image

I pack away homegrown cucumbers every summer. This recipe is based on the pickled veggies in Brown Eggs and Jam Jars by Aimee Wimbush-Bourque, but I've made it less mustardy and more garlicky to fit my family's tastes. This method keeps them incredibly, refreshingly crunchy. -Ellie Martin Cliffe, Taste of Home Digital Deputy Editor

Provided by Taste of Home

Time 1h10m

Yield 4 pints.

Number Of Ingredients 12

9 cups sliced pickling cucumbers
1 large sweet onion, halved and thinly sliced
1/4 cup canning salt
1 cup sugar
1 cup water
1 cup white vinegar
1/2 cup cider vinegar
2 tablespoons mustard seed
1 teaspoon celery seed
1/2 teaspoon whole peppercorns
12 garlic cloves, crushed
4 bay leaves

Steps:

  • In a large nonreactive bowl, combine cucumbers, onion and salt. Cover with crushed ice and mix well. Let stand 3 hours. Drain; rinse and drain thoroughly., In a Dutch oven, combine sugar, water, vinegars, mustard seed, celery seed and peppercorns. Bring to a boil, stirring to dissolve sugar. Add cucumber mixture; return to a boil, stirring occasionally. Reduce heat; simmer, uncovered, 4-5 minutes or until heated through., Carefully ladle hot mixture into 4 hot wide-mouth 1-pint jars, leaving 1/2-in. headspace. Add 3 garlic cloves and 1 bay leaf to each jar. Remove air bubbles and, if necessary, adjust headspace by adding hot pickling liquid. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

VIRGINIA CHUNK SWEET PICKLES

Virginia Chunk Sweet Pickles image

Virginia Chunk Sweet Pickles are crisp, sweet, tangy and perfectly delicious. A real childhood favorite of mine, and you'll love them too!

Provided by Erica Walker

Categories     Side Dish

Time P7DT20m

Number Of Ingredients 9

75 pickling cucumbers (4-5" long or 2 gallons smaller sized)
2 cups salt
3 tablespoons alum powder
6 cups vinegar
5 cups sugar
1/3 cup pickling spice
1 tablespoons celery seed
2 cups sugar
1 cup sugar (for a different day)

Steps:

  • Make brine with 2 cups salt and one gallon of water. Boil mixture and pour over cucumbers while still boiling hot. Weigh down cucumbers to keep them under the brine (don't let them float to the top). Let stand for one week. In hot weather, skim daily.
  • Drain and cut cucumbers into chunks.
  • For the next 3 mornings make a boiling hot solution of one gallon water and one tablespoon alum powder and pour over the pickles. Make this fresh hot bath each day for three mornings (draining each day and giving a new solution each day).
  • On the fourth morning, drain and discard alum water.
  • Heat 6 cups vinegar, 5 cups sugar, 1/3 cup pickling spice, and 1 tablespoon celery seed to boiling and pour over the pickles-- allow to sit overnight.
  • On the fifth morning drain this liquid off, reserving it, and add to it 2 cups more sugar, heat again to boiling point and pour over the pickles.
  • On the sixth morning drain liquid, reserving it again, add one more cup of sugar, and heat to boiling.
  • At this time, pack pickles into sterilized canning jars and fill within 1/2-inch of top of jar with the boiling liquid, seal at once.
  • If you are wanting to can and store for long-term, process in a hot water bath for 10 minutes.

SWEET CHUNK PICKLES

Sweet Chunk Pickles image

This started out as a recipe from Miriam B. Loo (Current, Inc). I added more spice and garlic. I like garlic. I've made these pickles for years. This recipe has gone to innumerable pot-lucks. I try to keep a fresh batch in the fridge (when I open one jar, I make another) because someone in the house gets a midnight craving or we get invited to dinner (terrific hostess gift) or someone at work organizes a picnic or pot-luck.

OLD FASHIONED SWEET NINE DAY PICKLES

Old Fashioned Sweet Nine Day Pickles image

Love these Sweet Pickles, one of the best sweet pickle recipes in my collection and one of the best I have ever tasted. This is one of those old old recipes shared by a lady that made really great pickles. Very easily made and not as time consuming as it sounds. While modern safety method requirements may call for processing I don't process my pickles as I find it changes the taste and texture, you may do so if you wish. As with many of the old recipes some things just do not enter well ... with this one it's you have to be making up enough of each of the brine solutions to completely cover! NOTE be sure to use non - reactive containers ( stainless steel - unchipped enamel/porcelain, assure all your plastic bowls and containers are food grade)

Categories     Vegetable

Time P9DT45m

Yield 4 quarts, 20 serving(s)

Number Of Ingredients 12

4 quarts cucumbers, cut in 1/2 inch pieces
2 cups pickling salt
16 cups water
4 quarts water
1 cup vinegar
2 cups water
1 teaspoon alum
2 cups vinegar
2 cups water
8 cups sugar
1 teaspoon turmeric
1 tablespoon pickling spices, tied in a bag

Steps:

  • STEP ONE: Cut cucumbers in 1/2 inch pieces or a little larger and place in a crock or large glass container. Bring the soaking brine to a boil, pour over cut cucumbers, cover with a clean cloth and weigh down with a plate. Cover crock with a clean tea towel.
  • Let stand three days.
  • STEP TWO: Drain, put back in crock and cover with fresh water. There is no salt added to this.
  • Let stand two days.
  • STEP THREE: Drain and place back in crock.
  • Bring the pickle solution with the alum to a boil and simmer two minutes pour over.
  • Stand overnight.
  • STEP FOUR: Drain and place back in crock. Make Sweet Pickle brine, bring to a boil and pour over. For three days drain this syrup into a large pot and bring to a boil. Pour back over the cucumber slices. The third day once again bring the syrup to a boil. Put pickles into sterilized jars, pour hot brine over and seal.
  • I often replace some of the cucumber pieces with cauliflower chunks, making for a mixed sweet pickle.
  • Makes about eight pints.

SWEET-AND-SOUR QUICK PICKLES

Sweet-and-Sour Quick Pickles image

Inspired by classic bread-and-butter pickles, these sweet-and-sour pickles are a bit more sour than sweet with a hint of mustard and dill. Apple cider vinegar lends a fruitier flavor to the no-cook brine than white vinegar, which is often used for making cucumber pickles.

Provided by Justin Chapple

Categories     side-dish

Time 6h10m

Yield 1 quart

Number Of Ingredients 7

12 to 14 ounces Persian, kirby or English cucumbers, sliced (see Cook's Note)
4 to 6 dill sprigs
1 1/4 cups apple cider vinegar
3/4 cup water
6 tablespoons sugar
1 tablespoon kosher salt
1 1/2 tablespoons whole-grain mustard

Steps:

  • Stuff the cucumbers and dill into a 1-quart glass or plastic jar with a tight-fitting lid.
  • In another 1-quart jar, combine the vinegar, water, sugar, salt and mustard. Close the jar and shake vigorously until the sugar and salt dissolve. Pour over the cucumbers, cover and refrigerate for at least 6 hours (preferably overnight) or up to 1 month.

SWEET CHUNK ZUCCHINI PICKLES

Sweet Chunk Zucchini Pickles image

Sweet and mildly spicy zucchini pickle chunks that I grew up with from Grandma. Takes several days but well worth it.

Provided by bljersey

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Pickled

Time P2DT4h15m

Yield 50

Number Of Ingredients 8

1 gallon water
16 cups peeled and cubed zucchini
1 cup pickling lime (calcium hydroxide)
1 gallon water
2 cups apple cider vinegar
8 cups white sugar
3 teaspoons pickling spice
2 teaspoons salt

Steps:

  • Place the zucchini into one gallon water in a large bowl. Stir in the pickling lime, and let stand for 24 hours. Drain and rinse the zucchini a few times, then cover with a fresh gallon water. Let stand for 3 hours, then drain.
  • Heat the vinegar, sugar, pickling spice, and salt in a large pot over medium heat until the sugar dissolves. Stir in the drained zucchini. Cover and rest the zucchini for 24 hours. Bring the zucchini mixture to a simmer over medium heat for 35 minutes. Allow to cool.
  • Sterilize about 10 pint-sized jars and lids in boiling water for at least 5 minutes. Divide and pack the zucchini mixture evenly into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings. Store in the refrigerator.
