BEER CHILI

I'm not sure if this came from a published recipe or not, but it's been a family favorite. You can make it as mild or as hot as you like. I recently made this for a chili party and out of the 7 different kinds of chili recipes that were there, this was the only one that was empty at the end of the night. In order for it to be a thicker chili you must use the Carol Shelby's chili seasoning mix that come in the little brown box. If you don't use this mix, it will be more like soup than chili.

1 (12 ounce) can beer, of your choice
1 (46 ounce) can V8 vegetable juice
1 (8 ounce) can kidney beans (mild or hot)
1 (8 ounce) can chili beans (mild or hot)
1 (8 ounce) can diced tomatoes
1 lb ground beef (browned and drained)
1 medium chopped onion
1 chopped green pepper (optional or desired amount)
1 (8 ounce) package chili seasoning mix (Carol Shelby specifically)
saltines or Fritos corn chips

Steps:

  • Brown and drain 1 lb.of hamburger.
  • While browning hamburger, empty V-8 Juice and Beer into a large stock pot, bring to a boil.
  • Reduce heat to a simmer; add all remaining ingredients, EXCEPT CHILI PACKAGE SPICES (add beef, beans, onion, green pepper, tomatoes etc.).
  • Open chili spice package. You will find 4 packets of different spices.
  • Add larger package of chili spices first and stir.
  • Add salt packet to taste (I usually end up adding all of this one); stir.
  • Add small cayenne pepper packet to taste (optional). Will be extremely hot & spicy if all is added. I usually add 1/4 to 1/2 of packet).
  • If you like thick chili, follow directions on package for use of masa flour to thicken.
  • Continue to simmer and stir. It's ready to eat when heated all the through. The longer it simmers the spicier it will get. My mom used to let it simmer for an hour or more when I was younger. If you decide to simmer longer than 20 minutes, after last ingredient is added, turn the heat down to low.
  • We like to garnish with sour cream, crackers, shredded cheese and/ or Fritos. I also noticed at the chili party that some people added spaghetti noodles to their chili.

Took me awhile to get this the way I wanted it by playing around with several different recipes. I am a bit of a wimp and this is at my threshold for spice, so adjust to your tastes if you like it hot.

2 lbs lean ground beef
1 lb sirloin, diced
1 medium onion, chopped
16 ounces tomato sauce
28 ounces kidney beans, undrained
12 ounces beer
15 ounces diced tomatoes with green chilies
2 garlic cloves, minced
1 tablespoon paprika
1/4 teaspoon cayenne
3 beef bouillon cubes
1/2 teaspoon oregano
1 teaspoon pepper
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon salt

Steps:

  • Brown ground beef in large pan or pot; remove and drain grease if necessary.
  • Add sirloin and onion and saute until lightly browned. Return ground beef to pot. Add remaining ingredients and mix well.
  • Heat over medium-high heat until boiling. Reduce heat and simmer 2-3 hours, covered, stirring occasionally.

1 tablespoon olive oil
1 red bell pepper, finely chopped
1 yellow bell pepper, finely chopped
1 green bell pepper, finely chopped
1 orange bell pepper, finely chopped
1 large red onion, finely chopped
1 stalk celery, chopped
2 pounds ground pork
2 pounds ground beef
8 serrano chile peppers, diced
3 (14.5 ounce) cans diced tomatoes
1 (4.5 ounce) can diced green chile peppers
3 (6 ounce) cans tomato paste
2 (15 ounce) cans kidney beans
6 tablespoons minced garlic
1 fluid ounce key lime juice
4 fluid ounces tequila
16 fluid ounces beer
2 ½ tablespoons chili powder
salt and pepper to taste

Steps:

  • Heat the olive oil in a large pot over medium heat. Stir in the red bell pepper, yellow bell pepper, green bell pepper, orange bell pepper, onion, and celery. Cook until tender. Place pork and beef in the pot, and cook until evenly brown. Drain grease.
  • Mix serrano chile peppers, diced tomatoes, green chile peppers, tomato paste, kidney beans, garlic, lime juice, tequila, and beer into the pot. Season with chili powder, salt, and pepper. Bring to a boil. Reduce heat to medium-low, and simmer 5 hours.

You have never had chili like this before! I am always being asked to make it for football games or just anytime friends and family get together! It is a compilation of many recipes I have tried over the years. Betcha' you've never had chili like this before!

1 pound hot or sweet Italian sausage
1 pound ground beef
½ onion, chopped
1 ½ pounds beef stew meat, cut into 1/2 inch pieces
1 (28 ounce) can diced tomatoes
1 (12 fluid ounce) bottle dark beer
2 cups water
¼ cup chili powder, or to taste
¼ teaspoon red pepper
¼ teaspoon white pepper
¼ cup white sugar
½ teaspoon ground cinnamon
salt and black pepper to taste
3 tablespoons tomato paste
1 (15 ounce) can kidney beans, rinsed and drained

Steps:

  • Cook and stir sausage in a large skillet over medium heat until browned. Drain; place sausage in a pot large enough to hold all ingredients. In same skillet, cook and stir onion with ground beef over medium heat until beef is browned and onions are tender; drain and add to the large pot.
  • In same skillet, cook and stir stew beef over medium heat until browned. Without draining, pour stew beef into the large pot.
  • Pour tomatoes, beer, and water into the pot with meats. Stir in chili powder, red pepper, white pepper, sugar, and cinnamon. Season to taste with salt and black pepper. Simmer until stew beef is very tender, at least 2 hours, stirring occasionally and adding more water as needed. If you prefer a thicker chili, thicken as needed with tomato paste. If using kidney beans, add them 10 minutes before serving, just in time to heat through.

3 tablespoons corn oil
2 lbs skirt steaks, cut into 1/2-inch cubes
2 lbs pork sausage
10 garlic cloves, minced
2 medium onions, roughly chopped
2 jalapeno peppers, seeded and finely diced
4 cups pinto beans (optional) or 4 cups black turtle beans, fully cooked (optional)
2 tablespoons ground cumin
1 tablespoon ground coriander
5 tablespoons chili powder
1 teaspoon chili flakes
1 tablespoon paprika
2 teaspoons oregano
1 teaspoon sage
1 bell pepper, diced
2 stalks celery, diced
28 ounces crushed tomatoes
6 ounces ground dried chile or 6 ounces roasted chilies, finely chopped
2 cups beef stock
1 bay leaf
2 tablespoons fine cornmeal (optional) or 2 tablespoons masa harina (optional)
2 (12 ounce) cans beer (or 8 kegs beer, ice cold, can't blame a guy for trying!)

Steps:

  • In a large cast iron skillet, heat the oil on medium high heat until quite hot and lightly brown the meat. Brown in three or four batches, to avoid overcrowding the skillet.
  • Transfer the browned meat to a large Dutch oven or heavy casserole. Discard all but 3 tablespoons of fat from the skillet.
  • Reduce the heat under the skillet to medium and add the garlic, onion and diced jalapeno pepper. Saute for 2 minutes, stirring often.
  • Add the cumin, coriander, chile powder, paprika, chile flakes, oregano and sage to the skillet; stirring well to coat the onions, garlic and jalapenos with the spices. Continue cooking the spice mixture for another minute, stirring frequently to avoid scorching.
  • Add the bell pepper, celery, crushed tomatoes with their juice and the canned chiles. Stir well with a wooden spoon, scraping the bottom and sides to loosen any tasty bits stuck to the skillet. Transfer contents of the skillet to the Dutch oven and place over medium high heat.
  • Add the beef stock, bay leaf and beer to the dutch oven, stirring well to mix all the ingredients.
  • Bring the chili to a boil. Reduce the heat to low and with the pot half covered, cook at a simmer from 1 to 2 hours, until the meat is tender.
  • If you are adding beans: When the meat is tender, add the cooked beans and simmer another 20 minutes. Hot beans may also be held on the side and added by request.
  • Note: If you want the chili to be a little thicker, add 2 tablespoons of the corn meal or masa harina a little at a time, stirring constantly. This will tighten the chili up some and add a subtle, earthy flavor.
  • Politically incorrect, somewhat humorous safety tip: No matter how great you've been told you look in one, never wear a toga when working around an open flame. (Or an open toga when around a flaming worker).

1 (19 ounce) can red kidney beans, drained
1 (14 1/2 ounce) can no-salt-added diced tomatoes, undrained

1 (12 ounce) bottle beer (such as Budweiser)
1 tablespoon yellow cornmeal
1 tablespoon fresh lime juice

Steps:

  • Combine first 4 ingredients in a large Dutch oven over medium-high heat.
  • Cook 5 minutes or until beef is browned, stirring to crumble.
  • Stir in chili powder, cumin, sugar, and salt; cook 1 minute.
  • Add oregano and next 4 ingredients (through beer) to pan; bring to a boil.
  • Reduce heat, and simmer 15 minutes.
  • Stir in cornmeal; cook 5 minutes.
  • Stir in juice.

Hot chili is a very underrated summer menu item. Bring a big ol' thermos of this to a picnic or other warm weather cookout, and it makes a great side to those grilled burgers and dogs. Just have some insulated cups around, and maybe some hot sauce, and you're in business. But no matter what season it is, I hope you give this beef, bean, and beer chili a try soon.

1 tablespoon vegetable oil
1 onion, diced
2 pounds lean ground beef
2 teaspoons salt, plus more to taste
3 cloves garlic, minced
3 tablespoons ground ancho chile powder

Steps:

  • Place a pot over high heat. Drizzle in vegetable oil. Add diced onion, ground beef, and salt. Break up meat with wooden spoon into small pieces as it browns. After meat browns and releases its juices, continue stirring until the released liquid evaporates, about 4 minutes. Reduce heat to medium-high. Add garlic, chile powder, cumin, paprika, black pepper, and cinnamon. Cook and stir until mixture begins to darken, 3 or 4 minutes.
  • Stir in beer. Add cocoa powder, oregano, cayenne, water, and tomato puree; stir well. Bring to a simmer; adjust heat to medium-low. Simmer 30 minutes.
  • Stir in diced green pepper and pinto beans. If mixture becomes too thick, add a bit more water. Simmer until peppers are tender and flavors have blended, about 30 more minutes.
