SUGARPLUM CHRISTMAS CANDY

Sugarplum Christmas Candy image

Sugarplums are a holiday candy popularized in poems and The Nutcracker Ballet. This sugarplum recipe contains different varieties of dried fruit and nuts.

Provided by Elizabeth LaBau

Categories     Dessert     Candy

Time 30m

Yield 24

Number Of Ingredients 9

1/2 cup pitted dates (coarsely chopped)
1/2 cup toasted walnuts (coarsely chopped)
1/4 cup dried cranberries
1/4 cup prunes (finely chopped)
1/4 cup toasted skinned hazelnuts (finely chopped)
2 tablespoons cherry preserves
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/2 cup sugar

Steps:

  • Gather the ingredients.
  • Place the chopped dates, walnuts, cranberries, prunes, and hazelnuts in the food processor . Pulse the mixture a few times.
  • Add the cherry preserves, cinnamon , and cloves, and pulse several more times until the mixture begins to come together. It should hold itself in a ball when you squeeze it between your fingers. You want to retain some of the coarse texture. Do not overprocess it into a sticky paste.
  • Roll the candy into small 1-inch balls. Then roll the balls in the granulated sugar until they are fully covered with the sugar.
  • Store the finished sugarplums in an airtight container between layers of waxed paper until you are ready to serve them. Sugarplums can be kept refrigerated, for up to one month.
  • Enjoy.

SUGARPLUM SODA SYRUP

Sugarplum Soda Syrup image

Visons of sugarplums dance in our heads, sparkle in soda water and shine in festive cocktails. Tie a gift tag with serving instructions around the neck of the bottle, and maybe another with a recipe for a grown-up drink. The syrup brings a ton of holiday cheer to a vodka martini.

Provided by Food Network

Categories     condiment

Time 1h10m

Yield 2 cups

Number Of Ingredients 10

1 cup golden raisins
1 1/2 cups sugar
1/2 cup dried apricots, roughly chopped
1/2 cup pitted dates, chopped
1/2 cup honey
3 cardamom pods
1 cinnamon stick
1/2 a whole nutmeg
1 teaspoon almond extract
Purple food coloring, as desired

Steps:

  • Combine the raisins, sugar, apricots, dates, honey, cardamom, cinnamon stick and nutmeg in 2 1/2 cups water in a medium saucepan over high heat and bring to a boil, stirring frequently. Reduce the heat to low and simmer until the mixture reduces to a thin syrup, about 20 minutes.
  • Slowly pour the mixture through a fine-mesh strainer, gently pressing on the fruit to extract all the syrup. Discard the solids. Stir in the almond extract. Add the food coloring a drop at a time until the desired shade is reached. Allow the soda syrup to cool completely before bottling, about 30 minutes.
  • Suggestion for use: Fill a glass with 8 ounces of cold seltzer water, then add 2 tablespoons soda syrup and stir gently (feel free to add more or less syrup to taste). Garnish with an orange slice.

1 cup finely chopped pitted dates
3 drops orange liqueur or 3 drops orange juice, if mixture is too dry
1 cup confectioners' sugar

Steps:

  • Preheat oven to 400°. Arrange almonds on a baking sheet in a single layer and toast in oven for 10 minutes. Set aside to cool, then finely chop.
  • Meanwhile, combine honey, orange zest, cinnamon, allspice, and nutmeg in a medium mixing bowl. Add almonds, apricots, and dates and mix well; (add a few drops of liqueur or orange juice if mixture is too dry).
  • Pinch off rounded teaspoon-size pieces of the mixture and roll into balls. (Rinse your hands often, as mixture is very sticky.)
