TVP VEGGIE BURGERS

I tried to recreate the veggie burgers that McMaster University's Bridges Cafe serves, and I think I've pretty much got it with this recipe.

Number Of Ingredients 15

1 1/3 cups textured vegetable protein (dehydrated soy)
1 cup boiling water
2 tablespoons ketchup
Worcestershire sauce
soy sauce
1/2 teaspoon salt
1/2 teaspoon marjoram
1 teaspoon oregano
1 tablespoon parsley flakes
1/4 cup grated carrot
1/4 cup finely chopped celery
1/4 cup finely chopped red onion
3 finely chopped garlic cloves
1/2 cup chopped fresh basil
1/3 cup flour

Steps:

  • Stir TVP into boiling water in a medium mixing bowl.
  • Add ketchup, Worcestershire, soy (appx. 2 tsp), salt, herbs and spices.
  • Let stand 10 minutes.
  • Heat carrots, celery, onion, garlic and basic in a little oil in a skillet, until JUST softened.
  • Mix veggies into TVP mixture, slowly adding flour until the mixture holds its own shape (like a mix between dough and ground beef).
  • Shape into 6 patties (1/2 inch think or so).
  • Cook in frying pan in a bit of oil until both sides are hardened up and darkened.
  • I've tried adding chili powder to the oil in the pan before cooking the patties, and it adds nice flavour.
  • Also, when shaping the final mixture, it really helps to wet your hands with a bit of water to prevent it sticking.

2 cups canned seasoned black beans, drained
1 cup seasoned breadcrumbs
1/4 cup grated onion
1/2 teaspoon chili powder
1 large egg
Salt and freshly ground pepper
Canola oil, for the pan
4 slices Swiss cheese
1/2 cup mayonnaise
Hot sauce
4 burger buns, toasted
Lettuce and sliced tomatoes, for topping

Steps:

  • Mash the beans.
  • Using a fork, mash the beans in a medium bowl until they are mushy but still have some whole bean pieces throughout.
  • Make the burger mixture.
  • Mix the breadcrumbs, grated onion, chili powder, egg and some salt and pepper into the beans. Add a splash of water if the mixture looks dry. Set aside for 5 minutes. Preheat a large cast-iron skillet over medium-high heat and add a few tablespoons of canola oil.
  • Form the patties.
  • Divide the bean mixture into 4 equal balls and form into 4 nice, neat patties. Black bean burgers don't shrink when they cook, so whatever size you make them when they go into the skillet will be the size they are when they come out.
  • Cook the burgers.
  • Cook the burgers until browned, 4 to 5 minutes on each side. Add a slice of Swiss cheese to the top of each burger. Invert a second skillet on top of the first skillet and continue cooking, 2 minutes, until the cheese is melted.
  • Top the burgers.
  • Combine the mayonnaise and some hot sauce in a small bowl. Serve the burgers on toasted buns with the spicy mayonnaise, lettuce and sliced tomatoes.

75g wholemeal bread ,or sourdough
75g walnuts
400g sweet potato
400g can black beans, drained
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp onion granules
1 tbsp tomato purée
2 tbsp rapeseed oil, to fry
½ cucumber, halved, deseeded and sliced on an angle
2 large carrots (about 300g) peeled into ribbons
small bunch coriander, finely chopped
2 tbsp lime juice
1 tbsp rapeseed oil
4 sourdough burger buns
2 large tomatoes, thickly sliced
1 avocado, peeled, stoned and sliced
50g rocket
coconut yogurt or burger sauce of choice

Steps:

  • Put the wholemeal bread and walnuts in a food processor and pulse to make fine crumbs.
  • Prick the sweet potatoes with a fork and microwave for 5-10 mins until soft. Cut in half and scrape the cooked centres into the food processor with the bread and walnut crumbs. Make sure the beans are drained thoroughly then add them to the processor with the paprika, cumin, onion granules, and tomato puree. Season generously and pulse until the mixture is mostly smooth and holding together. Divide the mix into 4 patties and chill for 20 mins to firm up.
  • Meanwhile make the side salad by mixing the cucumber, carrot, coriander, lime juice and rapeseed oil together. Season and put to one side.
  • Heat the oil in a large non-stick frying pan over a medium heat. Add the patties and fry for 4-5 mins on each side until golden and hot through. Place a small handful of rocket into each burger bun. Top with the tomato slices, burgers, and then avocado. Add a dollop of coconut yogurt or burger sauce of your choice. Serve with the carrot and cucumber salad alongside.

3/4 cup boiling water
1 tablespoon ketchup
1 teaspoon sea salt
1/2 teaspoon ground oregano, Mediterranean
1/2 teaspoon ground marjoram
1/2 teaspoon garlic powder
1/4 cup grated carrot
1/4 cup finely chopped celery
2 tablespoons finely chopped green onions
1 tablespoon dried parsley flakes
1/2 cup vital wheat gluten
1 tablespoon vegetable oil

Steps:

  • In a medium sized mixing bowl combine the boiling water with the TVP®, ketchup, sea salt and herbs. Let stand for 10 minutes, then mix in the grated carrot, chopped celery, chopped green onion and parsley flakes. Blend together well with hands. Mix in the vital wheat gluten flour to make a firm mixture.
  • Divide mixture into 6 equally shaped balls and flatten to form patties (about 4" wide).
  • Heat vegetable oil in a nonstick skillet and fry patties for 8-10 minutes each side over medium low heat until browned.
  • Serve with fresh sautéed mushrooms to make "mushroom burgers".

3 (15 ounce) cans black beans
1 (15 ounce) can dark red kidney beans
3 large eggs
2 cups flour
1 1/2 cups textured vegetable protein

Steps:

  • Drain and rinse beans in a colander.
  • In a blender, combine beans and eggs. Blend until smooth, some chunks will remain. Depending on strength of blender, additional water may be useful.
  • In a bowl, season blended bean mash to taste. Add chopped veggies if desired. Add cumin, chili powder, garlic salt, etc. Add prepared, rehydrated TVP(follow directions on package)- mix thoroughly.
  • Slowly add flour to bean and TVP mix, stir until mixture is thickened.
  • To cook, spread a patty sized amount onto a non-stick baking sheet. Bake at 400°F until outside of patty is crispy and browned. Freeze leftover bean mash in small containers. Mash thaws well when using a microwave's defrost feature.
