KONA INN BANANA BREAD
I got this from a Garden Center Favorites cookbook quite a few years ago. It is THE BEST banana bread I have made--and I have tried a bazillion recipes. I keep coming back to this one!! I hope you like it.

Steps:
- Cream together butter and sugar.
- Add bananas and eggs.
- Sift dry ingredients.
- Blend wet and dry mixtures but don't overmix.
- Bake in a loaf pan at 350° for 45 minutes.
- Makes 1 20-ounce loaf.

KONA INN BANANA BREAD

Steps:
- Preheat the oven to 350.
- Grease and flour 2 8x4x3-inch loaf pans.
- Stir together the flour, salt and baking soda in a bowl. In another larger bowl, mix together the shortening, sugar, mashed bananas, eggs and walnuts. Add the combined dry ingredients and stir only until the batter is thoroughly blended.
- Pour into the prepared pans and bake 50-60 minutes, or until a skewer or straw inserted in the center of the loaves comes out clean, or with only a few moist crumbs. Remove from the oven and let cool in the pan for 5 minutes, then turn out on a rack and let cool completely.
KONA INN ( HAWAII) BANANA BREAD
I have tasted many Banana Bread recipes but this one is different. I have never tasted a BB this moist and the macadamia nuts make it more special. This bread brings back wonderful memories of KONA HAWAII. P.S. You can also add walnuts if you don't have macadamia nuts.

- 1. Cream together butter,sugar, eggs and vanilla. Then add flour mixture. Fold in bananas. Add nuts.
- 2. Spray pans cook @350 65-70 minutes*1/2 way through baking lightly cover with a piece of foil because the sugar may darken too much.
BANANA MUFFINS

- Preheat the oven to 425 degrees F. Lightly brush a 12-muffin tin with butter and set aside.
- Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
- Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
- Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not overmix the batter or your muffins will come out dense. Gently stir in the nuts. Divide the batter evenly into the muffin tin.
- Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature.

- Preheat the oven to 350 degrees F and set a rack in the lower-middle level.
- Smear the cups of a muffin pan with a little shortening, sprinkle with a little flour, and shake the pan to distribute the flour.
- Peel the bananas, place them in a large bowl, and beat them well with an electric mixer. The riper the bananas and the more you beat them, the more tender your muffins will be. Don't expect absolute smoothness; there will always be a few lumps. Set aside.
- In a small bowl, combine the flour, baking soda, and salt.
- Add the sugar, shortening, eggs, and walnuts to the bananas and mix well.
- Add the dry ingredients to the bananas mixture and stir just until the batter is thoroughly blended.
- Pour the batter into a large measuring cup with a spout and fill the muffin cups about two-thirds full.
- Bake for 15 minutes, then check the muffins for doneness. A toothpick inserted in the center of a muffin should come out clean. If not, bake for 5 minutes more and check again. When the toothpick comes out clean, remove the muffins from the oven and let cool in the pan for 5 minutes.
- Run a knife around the edges of the muffins and transfer them to a platter. Serve warm. Tip: For a nice finish, you can sift powdered sugar over the tops of the muffins, if desired.
ROYAL HAWAIIAN BANANA BREAD RECIPE
Steps:
- Preheat the oven to 350°F, or 178°C
- Next, in a mixing bowl add sugar, oil, and eggs. Mixed ingredients together.
- Into the same mixing bowl, add all your remaining dry ingredients. This will include all-purpose flour, baking powder, baking soda, cinnamon, and salt.
- Next, you can add into the mixing bowl your mashed bananas, and vanilla. If you wish to include pineapple, please add your crushed and drained pineapple at this step. Stir to combine.
- If desired, you can now add in your nuts and coconut. Stir to combine.
- Generously grease your bread pan, with cooking spray.
- Pour the prepared batter into your greased bread pan. Placed into the oven that has been preheated to 350°F. Bake for a total of one hour. If you wish to add streusel topping, you will want to bake for 30 minutes, remove it from the oven, and add your topping before continuing baking. Bake until a toothpick inserted into the center of your loaf comes out clean.
- When your bread is removed from the oven, you will want to allow it to cool before turning it out of the pan. For best results, cover the bread with foil while it cools. This will help it stay very moist. Cut into slices, serve, and enjoy.
- Streusel Topping In a mixing bowl combine brown sugar and flour. Tossed together with melted butter until clumps begin to form. After the bread has baked for 30 minutes, remove the bread from the oven and add your topping. Continue to bake until a toothpick inserted into the center of the bread comes out clean.
