1 cup fresh baby spinach, roughly chopped
1/3 cup plain Greek yogurt (see notes)
1/4 cup shredded mozzarella cheese
1 Roma tomato, seeded and chopped
1 teaspoon fresh lemon juice
1/4 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Combine all ingredients in a bowl until well mixed. Season to taste with extra salt and pepper and serve!

1/3 cup olive oil (regular or extra virgin)
1/3 cup red wine vinegar
2 tablespoon lemon juice
1 clove garlic
2 teaspoon sugar (or honey)
1 1/2 teaspoon dried oregano
1/2 teaspoon salt (or to taste)
1/2 teaspoon pepper (or to taste)
3/4 cup quinoa (dried)
6 ounce tuna (drained (2 cans))
1 cup cherry tomatoes (halved)
1 medium cucumber (chopped)
1/2 red onion (diced)
15 ounce chickpeas ((1 can) drained and rinsed)
1/2 cup feta cheese (crumbled)

Steps:

  • Cook the quinoa according to package instructions. Allow it to cool down fully in the fridge.
  • Whisk the dressing ingredients in a bowl or mixing cup and set aside.
  • Add the cooled quinoa and remaining salad ingredients to a large mixing bowl. Pour the prepared dressing into the bowl and toss everything well. Taste for seasoning.

For the Dressing:
1 medium clove garlic (grated)
2 tablespoons olive oil ( extra-virgin )
2 tablespoons lemon juice (freshly squeezed)
Pinch sea salt
For the Salad:
1/2 cup quinoa
2 cups water (divided)
1/2 teaspoon sea salt
7 ounces/200 milliliters water-packed tuna (1 can, drained)
2 cups baby spinach (loosely packed)
14 ounces/400 milliliters chickpeas (1 can, rinsed & drained)
1/3 cup celery (finely chopped)
1/3 cup cilantro (coriander leaves, chopped)
1/3 cup mint (chopped)
2 spring onions (finely sliced)
8 cherry tomatoes (or baby tomatoes, quartered)

Steps:

  • Gather the ingredients.
  • In a small bowl, mix together grated garlic clove, 2 tablespoons extra-virgin olive oil, 2 tablespoons lemon juice and a pinch of sea salt. Set aside.
  • Gather the ingredients.
  • Place quinoa in a small, heatproof bowl. Cover with 1 cup of boiling water and soak for 5 minutes.
  • Use a sieve to drain it and then give the quinoa a good wash under cold, running water. Run your fingers through it while you wash it.
  • Place quinoa in a small saucepan and add the remaining 1 cup of water and 1/2 teaspoon of sea salt. Bring to a boil, then lower heat to medium-low and cover. Simmer for 15 minutes or until the water has been absorbed. Remove quinoa from heat and allow to sit for 5 minutes with a lid on.
  • Meanwhile, in a large mixing bowl, combine the tuna, spinach, chickpeas, celery, cilantro, mint, spring onions, and cherry tomatoes.
  • Fluff the quinoa gently with a fork and then add to the salad ingredients. Add the dressing and then stir well to coat the ingredients.
  • Divide salad between 2 large bowls and serve.

3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
2 teaspoons dried tarragon
3 cups cooked quinoa

  • In small bowl, whisk together oil, vinegar, mustard and tarragon.

2/3 cup quinoa
1 1/3 cups water
1 tablespoon stock (i used chicken)
90 g tuna (i used mustard flavour)
1 tablespoon minced garlic
150 g mixed vegetables (i used the frozen ones)
20 g spinach (if you buy the stuff that comes in segments, it's roughly one of those)

Steps:

  • Mix the stock with the water and bring to boil.
  • When nearly boiled add the minced garlic and frozen spinich so that it can defrost (add later if fresh).
  • When boiled add the quinoa and turn heat to low, simmer until all liquid is absorbed.
  • Prepare the veggies, if using frozen veggies, when liquid is nearly absorbed, heat up the veggies as per packet directions.
  • When all liquid is absorbed, add the tuna and the veggies, stir through and then serve.
  • Enjoy.

100g quinoa
3 tbsp extra virgin olive oil
juice 1 lemon
½ tbsp white wine vinegar
120g can tuna, drained
1 avocado, stoned, peeled and cut into chunks
200g cherry tomatoes on the vine, halved
50g feta, crumbled
50g baby spinach
2 tbsp mixed seeds, toasted

Steps:

  • Rinse the quinoa under cold water. Tip into a saucepan, cover with water and bring to the boil. Reduce the heat and simmer for 15 mins until the grains have swollen but still have some bite. Drain, then transfer to a bowl to cool slightly.
  • Meanwhile, in a jug, combine the oil, lemon juice and vinegar with some seasoning.
  • Once the quinoa has cooled, mix with the dressing and all the remaining ingredients and season. Divide between plates or lunchboxes.
