FOR THE CREAM CHEESE LAYER:
12 oz. weight Cream Cheese, Softened
1 1/2 c. Powdered Sugar
12 oz. weight Cool Whip, Divided (1 1/2 Cups For Cream Cheese Layer, Remaining For Cool Whip Layer)
FOR THE CHOCOLATE PUDDING LAYER:
2 boxes (3.9 Oz. Size) Chocolate Fudge Instant Pudding & Pie Filling
4 c. Cold Whole Milk
FOR THE COOL WHIP LAYER:
Remaining Cool Whip From Cream Cheese Layer
2 oz. weight Shaved Dark Chocolate From A Bar

Steps:

  • For the salted pecan crust:Preheat oven to 325° F.In a medium bowl, combine flour, brown sugar, salt, and pecans. Cut in butter with a rigid pastry cutter or a fork until crumbly. Press mixture evenly onto bottom of 9 x 13 inch pan. Bake for 18-20 minutes, or until crust is set and slightly browned. It should smell nice and toasty, buttery and nutty. Remove to wire rack to cool completely.For the cream cheese layer:With a blender, whip cream cheese and powdered sugar until completely smooth. With a rubber spatula, fold in 1-1/2 cups of Cool Whip from the 12-ounce container until combined. Spread mixture onto cooled crust. Refrigerate while preparing the next layer.For the chocolate pudding layer:In a medium bowl, whisk pudding with milk for 2 minutes. Pudding will become more and more thick as you whisk. Spread pudding evenly over cream cheese layer.For the Cool Whip layer:Evenly spread remaining Cool Whip from the 12-ounce container over chocolate pudding layer. Sprinkle with shaved chocolate. (I use a vegetable peeler, running it down the sides of a chocolate bar.) Refrigerate for 4 to 6 hours or overnight before serving.This dessert can easily be made the day prior to serving. I actually prefer the overnight refrigeration, as it allows the dessert to chill thoroughly and firm up. Always serve this dessert chilled.

Found this recipe in magazine, but they used cake in the middle. We have people at work that are gluten intolerant so I used pudding layers instead of cake. Everyone was able to enjoy this for Cinco de Mayo!

1 quick set chocolate pudding
1 quick set pistachio pudding
1\4 cup large flake coconut
1 pkg baking white chocolate
1\4 cup sliced maraschino cherries
1 sm. tub whipped cream, sweetened
1 sm. Jar strawberry preserves
1 pkg. food coloring, red, blue, green and yellow.
1 quart 2% or whole milk

Steps:

  • 1. Make pudding in separate containers, according to directions on pkgs. Let set and chill.
  • 2. Thaw whipping cream in refrigerator.
  • 3. Crumble white chocolate into microwave safe dish. Microwave for 30 secs. Stir in 2 drops yellow and 1 drop red food coloring. Make it look like cheddar cheese. Stir until smooth, may need to microwave 10 secs. or longer. Pour in thin strips into parchment paper. Let set.
  • 4. Put coconut flakes into resealable bag, and 2 drops green food coloring, seal and shake. Make it look like lettuce.
  • 5. Put sliced cherries into resealable bag, add 2 drops blue food coloring, seal and shake. Make it look like black olives.
  • 6. Layer into Trifle bowl as follows. Chocolate pudding, whipping cream, Pistachio pudding, Strawberry preserves, Coconut flakes, cheese colored chocolate, maraschino cherries. Cover and chill in refrigerator.

1 Tbsp sugar
1 pkg (8 oz.) PHILADELPHIA Cream Cheese, softened

3 cups COOL WHIP Whipped Topping, thawed
2 pkg (4 serving-size each) JELL-O Pistachio Flavor Instant Pudding & Pie Filling
3 cups milk
3 cups COOL WHIP Whipped Topping, thawed

Steps:

  • Preheat oven to 350 degrees F. In a mixing bowl combine flour, pecans, butter, and sugar with a pastry blender. Pat or press into a 9 x 13 metal baking pan. Bake for 13 minutes. Cool completely before covering with next layer.
  • In another mixing bowl, beat together cream cheese, powdered sugar, and 3 cups whipped topping. Spread evenly over crust.
  • Prepare pudding as directed on package, but only use 3 cups milk. Spread evening over cream cheese layer.
  • Spread 3 cups whipped topping on top of pudding layer. Chill for 2 hours, cut, and serve. Refrigerate any leftovers.

1 cup flour
1 cup pecans, chopped
8 ounces cream cheese
1 cup powdered sugar
1 (16 ounce) container Cool Whip, thawed
1 (4 1/2 ounce) instant devil's food pudding
French vanilla instant pudding
2 cups cold milk

Steps:

  • Combine butter, flour, and pecans.
  • Press into 13x9 inch pan and bake at 350 degrees for 20 minutes. Cool.
  • Blend cream cheese, powdered sugar, and 1 cup Cool Whip.
  • Spread over cooled crust.
  • Blend instant puddings with milk until thick. Spread over cream cheese filling.
  • Top with remaining Cool Whip and chill well.
  • ***You can use whatever flavor instant pudding you like.

1 cup flour
1 stick melted butter
8 oz Philadelphia Cream Cheese
1 cup confectioners' sugar
1 tub Cool Whip, divided
1 package pudding (vanilla or chocolate)
Milk (as required in making the pudding)

Steps:

  • 1st layer - Mix pecans (reserving enough to top dessert), flour, and melted butter. Press in 8" or 9" square pan and bake at 400 degrees F for 15 minutes until light brown. Let cool.
  • 2nd layer - Mix cream cheese, confectioners' sugar and 1 cup Cool Whip. Spread over 1st layer.
  • 3rd layer - Mix pudding as directed on package and spread over 2nd layer.
  • 4th layer - Mix remaining Cool Whip & remaining pecans to cover cake.
  • Chill.

1 tablespoon pure vanilla extract
3 1/4 cups (450 grams) all-purpose flour
3/4 cup (65 grams) unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
3/4 cup (170 grams) brewed coffee
3/4 cup (170 grams) warm water
8 ounces dark chocolate, chopped
2 cups heavy cream
1/2 teaspoon pure vanilla extract
Pinch kosher salt
2 cups confectioners' sugar
1 cup hot fudge topping, such as Hershey's

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease three 8-inch-round cake pans with butter and line with parchment paper.
  • Place the sugar and oil in the bowl of a stand mixer fitted with the whisk attachment and beat on medium speed until combined. Add the eggs, one by one, until completely incorporated. Add the vanilla extract and buttermilk and continue mixing until combined.
  • Sift the flour, cocoa powder, baking powder, baking soda and salt in a large bowl. Mix together the coffee and warm water. Alternate adding the dry ingredients and the coffee mixture into the bowl of the stand mixer, beginning and ending with the dry ingredients. Mix until you don't see any lumps and a thin batter has formed.
  • Divide the batter evenly among the prepared pans and bake until a toothpick inserted in the middle of each cake comes out clean, 30 to 35 minutes. Transfer the pans to a wire rack and allow to cool for 10 minutes. Remove the cakes from the pans and set on the wire rack to cool completely, about 1 hour.
  • For the dark chocolate mousse: Place the dark chocolate in a large bowl and set aside. Pour 1 cup of the heavy cream into a small saucepan and bring to a boil over medium-high heat. Pour the cream over the chocolate, cover the bowl with a kitchen towel and let sit for 3 minutes.
  • Remove the towel and slowly whisk the ganache until it's smooth and shiny. Set aside to cool to about room temperature.
  • Meanwhile, whip the remaining cup of heavy cream to stiff peaks in the bowl of a stand mixer fitted with the whisk attachment, or by hand. Using a rubber spatula, fold one-fourth of the whipped cream into the cooled ganache to lighten the consistency, then fold that mixture into the remaining whipped cream until almost completely combined with just a few streaks. Add the vanilla and salt and gently fold until combined into a light, fluffy mousse.
  • For the chocolate fudge buttercream frosting: Place the sugar, hot fudge, cocoa powder, butter, milk, vanilla extract and salt in the bowl of a stand mixer fitted with the paddle attachment and beat on low speed to combine. When the sugar is incorporated, increase the speed to medium and beat until the buttercream is smooth and satiny, 8 to 10 minutes.
  • For the chocolate royal icing: Place the confectioners' sugar, cocoa powder, meringue powder and water in the bowl of a stand mixer fitted with the whisk attachment and whip on low speed to combine. Increase the speed to medium-high and whip until the icing holds stiff peaks, 5 to 8 minutes. If it seems too soft, add more confectioners' sugar in 1 tablespoon increments. If it is too stiff, add a bit more water, drop by drop. Transfer to a piping bag fitted with a medium star tip.
  • For the white chocolate ganache: Place the white chocolate in a medium bowl and set aside. Pour the cream into a small saucepan and bring to a boil over medium-high heat. Pour the cream over the chocolate, cover the bowl with a kitchen towel and let sit for 3 minutes.
  • Remove the towel and slowly whisk the ganache until it's smooth and shiny. Set aside to cool to about room temperature, then transfer to a piping bag fitted with a medium star tip.
  • To assemble, level the tops of the cakes with a serrated knife or cake leveler. Spread half of the mousse over the top of one cake layer. Stack the second layer and repeat. Add the third cake layer and frost the top and sides with a thin coat of the buttercream. Refrigerate until the frosting is firm, 20 to 30 minutes.
  • When the cake is ready, frost the top and sides with a thicker layer of the buttercream and refrigerate again until very firm, about 1 hour.
  • When the cake is almost ready, lightly dust your work area with cornstarch and roll the fondant into a circle about 20-inches wide and 1/8-inch thick. Drape the rolled fondant over the cake and, using a fondant smoother or your hands, lightly press and smooth it onto the cake, working your way from the top down the sides. Pop any air bubbles with a cake tester or toothpick and continue to smooth the surface.
  • Trim any excess fondant from the base of the cake with a pizza cutter. Using a pastry brush, lightly brush the bottom half of the cake with the piping gel, then cover it with chocolate sprinkles.
  • Pipe a scalloped border around the edge with the chocolate royal icing. Pipe little rosettes of the white chocolate ganache around the cake and press 1 hazelnut truffle onto each. Continue to pipe and decorate with the royal icing, white chocolate ganache and hazelnut truffles to your liking.
