1 pkg. (2-layer size) chocolate cake mix
1 pkg. (3.9 oz.) JELL-O Chocolate Flavor Instant Pudding
4 eggs
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup oil
1/2 cup water
1 tub (8 oz.) COOL WHIP Whipped Topping (Do not thaw.)
2 Tbsp. sliced almonds

Steps:

  • Heat oven to 350°F.
  • Chop 2 oz. chocolate. Beat cake mix, dry pudding mix, eggs, sour cream, oil and water in large bowl with mixer until blended. Stir in chopped chocolate. Pour into 2 (9-inch) round pans sprayed with cooking spray.
  • Bake 30 to 35 min. or until toothpick inserted in centers comes out clean. Cool in pans 10 min. Loosen cakes from sides of pans. Invert onto wire racks; gently remove pans. Cool cakes completely.
  • Microwave COOL WHIP and remaining chocolate in microwaveable bowl on HIGH 1-1/2 min. or until chocolate is completely melted and mixture is well blended, stirring after 1 min. Let stand 15 min. to thicken.
  • Stack cake layers on plate, filling and frosting with COOL WHIP mixture. Sprinkle with nuts.

4 large eggs (separated)
3/4 cup sugar
8 tbsp butter (melted)
1 t vanilla extract
3/4 cup all-purpose flour
2 cups milk (lukewarm (105-110℉))

Steps:

  • Preheat oven to 325˚F
  • Line an 8"x 8" brownie pan with parchment paper
  • In a large bowl, add 4 egg yolks and sugar. Use a hand mixer to beat the mixture until it's pale yellow.
  • Add the melted butter and vanilla extract. Beat for a couple more minutes. Fold in the flour.
  • Once incorporated, add the warm milk, stirring to combine.
  • In a separate bowl, beat the egg whites with a hand mixer into stiff peaks.
  • Add the egg whites to the yolk mixture and gently fold them in. Be sure not to over-mix --there should be some streaks of egg white visible.
  • Pour the batter into the prepared pan and bake for 40-70 minutes, or until the top is golden.
  • After the cake has cooled, sprinkle with powdered sugar. You may top with fresh fruit too if you like.

150ml sunflower oil, plus extra for the tin
175g self-raising flour
2 tbsp cocoa powder
1 tsp bicarbonate of soda
150g caster sugar
2 tbsp golden syrup
2 large eggs, lightly beaten
150ml semi-skimmed milk
100g unsalted butter
225g icing sugar
40g cocoa powder
2½ tbsp milk (a little more if needed)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line the base of two 18cm sandwich tins. Sieve the flour, cocoa powder and bicarbonate of soda into a bowl. Add the caster sugar and mix well.
  • Make a well in the centre and add the golden syrup, eggs, sunflower oil and milk. Beat well with an electric whisk until smooth.
  • Pour the mixture into the two tins and bake for 25-30 mins until risen and firm to the touch. Remove from oven, leave to cool for 10 mins before turning out onto a cooling rack.
  • To make the icing, beat the unsalted butter in a bowl until soft. Gradually sieve and beat in the icing sugar and cocoa powder, then add enough of the milk to make the icing fluffy and spreadable.
  • Sandwich the two cakes together with the butter icing and cover the sides and the top of the cake with more icing.

Steps:

  • Beat egg white until stiff.

1 1/4 cups milk
1/3 cup lemon juice
2 tablespoons butter
1 tablespoon grated lemon peel

Steps:

  • Separate eggs and let stand at room temperature for 30 minutes.
  • In a large bowl, combine 1/2 c sugar, flour and salt. Stir in the milk, lemon juice, butter and lemon peel. Beat egg yolks; add to lemon mixture.
  • In a small mixing bowl, beat egg whites on medium speed until soft peaks form. Gradually add remaining sugar, 2 tbsp at a time, beating on high until stiff peaks form and sugar is dissolved. Fold into lemon mixture.
  • Spoon into six greased 8 oz. ramekins.
  • Place in a 13 x 9 x 2 baking pan. Add 1 inch hot water to pan, careful to not get it inside the ramekins.
  • Bake uncovered at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean.
  • Serve immediately or chill.
  • Garnish with a mint sprig and a curl of lemon rind or if chilled, with a spoonfull raspberry sauce and a dollop whipped topping or whipped cream.

1 cup granulated sugar, plus
2 tablespoons granulated sugar

Steps:

  • CAKE: Melt the chocolate with 1/3 cup water; stir until smooth.
  • Remove pan from heat; let cool until lukewarm.
  • Meanwhile, preheat oven to 350*F.
  • Grease an 8 1/4x4 1/2" loaf pan; line the bottom with waxed paper.
  • Put the sugar, butter, salt, baking soda, and vanilla in a medium bowl.
  • Beat with an electric mixer on high speed until well blended.

  • MAKE THE FROSTING: Melt the chocolate with the brown sugar and heavy cream in a medium saucepan over low heat, stirring often, until smooth.
  • Remove pan from heat; add the butter, vanilla, and salt and stir until the butter has melted.
  • With an electric mixer on low speed, beat in 1 cup of the powdered sugar.
  • Increase the speed to high and beat for 1-2 minutes, or until light and fluffy.
  • Reduce mixer speed to low and beat in the remaining powdered sugar.
  • Increase speed to medium and beat the frosting for 1 minute longer.
  • ASSEMBLE THE CAKE: Cut the cake in 2 layers.
  • Spread 1/2 the frosting on the bottom layer, replace the top, and spread the remaining frosting over the top and sides.
  • Serve as is, or with a scoop of ice cream and a generous portion of fudge sauce.
  • MAKE THE FUDGE SAUCE: (OPTIONAL).
  • Bring the evaporated milk and sugar to a boil in a medium saucepan, stirring often to dissolve the sugar.
  • Reduce heat to low and simmer for 5 minutes.
  • Remove saucepan from heat.
  • Add the chocolate, vanilla, and salt and let stand for 5 minutes until the chocolate melts.
  • Beat with an electric mixer on high speed (be careful--the chocolate will spatter at first) until smooth and thick, about 3 minutes.
  • Serve warm.

300g stoned date , chopped
6 large eggs , separated
350g light muscovado sugar
200g wholemeal flour
2 tsp baking powder
100g cocoa
5 tbsp custard powder
5 tbsp light muscovado sugar
50g cocoa powder
1.2l skimmed milk

Steps:

  • Cover the dates with boiling water and set aside to soften for 30 mins.
  • Heat oven to 160C/140C fan/gas 3 and line a 20 x 30cm baking tin with baking parchment. Drain the dates, reserving the liquid, then whizz the dates to a purée with 100ml of the soaking liquid.
  • Beat the egg whites in a large bowl with an electric whisk until stiff peaks hold on the end of your whisk. Add half the sugar and beat until thick and glossy.
  • In another bowl, beat the yolks and remaining sugar until pale. Whisk in the mashed date mixture, then fold into the egg white mixture until well combined. Mix the flour, baking powder and cocoa with a pinch of salt. Sprinkle over the wet mixture and very gently fold in until well combined. Gently scrape into the tin and spread to the edges. Bake for 35-40 mins until a skewer poked in comes out clean.
  • Meanwhile, mix the custard powder, sugar and cocoa together in a saucepan. Stir in dribbles of milk until you get a smooth paste. Gradually add more milk until it's all incorporated with no lumps. Put over a medium heat and warm, stirring constantly, until thick and just bubbling.
  • Cut the warm cake into slabs and pour over the hot chocolate custard to serve.
