Spicy Chipotle Pumpkin Hummus image

It seems silly to even call this a 'recipe' due to how easy and fast it is to make! Adding pumpkin puree and Adobo sauce to traditional hummus deepens the flavors making them a bit more autumnal with a touch of smoky spice! Dipping suggestions: pita bread triangles, crackers, baby carrots, celery slices, sliced sweet peppers or other vegetable slices. Can be used as a spread on bread for sandwiches or crostini.

3 large Garlic Cloves (, peeled)
1 15-ounce can Garbanzo Beans (, drained)
1 cup Pumpkin Puree ((homemade or canned))
3 tablespoons Lemon Juice
2 tablespoons Extra Virgin Olive Oil
2 tablespoons Tahini
1 teaspoon ground Cumin
3 teaspoons Adobo Sauce ((taken from a can of Chipotle Chilies en Adobo or a jar of Adobo Sauce))
1 teaspoon Kosher Salt
Roasted (, salted Pepitas (pumpkin seeds) to garnish the hummus)

Steps:

  • Add the garlic cloves to the bowl of a food processor and process until minced.
  • Add the remaining ingredients and process until the hummus is smooth. Refrigerate until serving.

One 15.5-ounce can garbanzo beans, rinsed and drained
2 tablespoons adobo sauce (from canned chipotles), plus additional for garnish
1 tablespoon fresh lemon juice
2 teaspoons sesame seed paste (tahini), optional
2 cloves garlic
1/3 cup olive oil, plus additional for garnish
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh cilantro
Serving suggestions: tortilla chips or crudites

Steps:

  • Put the garbanzo beans, chipotle adobo sauce, lemon juice, sesame paste if using and the garlic in a processor and blend until combined. With the machine running, add the olive oil until well incorporated.
  • Transfer the hummus to a medium bowl. Season with salt and pepper. Drizzle with olive oil and a few drops of chipotle adobo sauce, and garnish with fresh cilantro. Serve with tortilla chips or crudites.

1 tub (7 oz.) ATHENOS Greek Style Hummus
1 Tbsp. chopped canned chipotle peppers in adobo sauce plus 3 Tbsp. adobo sauce
1/4 cup pepitas, toasted
2 cups ATHENOS Pita Chips Original

Steps:

  • Combine pumpkin, hummus, peppers and sauce.
  • Top with pepitas.
  • Serve with pita chips.

Throw a Halloween party and use a carved out pumpkin to make this creamy hummus. At other times of the year use butternut squash or a blue-skinned pumpkin

1 small pumpkin (about 500g)
olive oil , for roasting
2 garlic cloves , peeled
½ lemon , juiced
2 tbsp tahini paste
400g can chickpeas , drained
1 red pepper , deseeded, and sliced
1 yellow pepper , deseeded, and sliced
mini breadsticks and pitta chips, to serve

Steps:

  • Cut the top off the pumpkin, about two-thirds of the way up. Remove the pumpkin seeds, then scoop the flesh out of the bottom and the lid.
  • Heat oven to 200C/180C fan/gas 6. Cut the pumpkin flesh into pieces and put in a roasting tin with the garlic and a good glug of oil. Season, then bake for 45 mins until very tender. Leave to cool.
  • Tip the pumpkin into a food processor with any juices from the roasting tin and the garlic. Add the lemon juice, tahini paste and chickpeas. Season with salt and blend to a paste - add a little more oil if it's too thick. Scoop the hummus back into the pumpkin and serve with the peppers, breadsticks and pitta chips.
