Grab-and-go offerings of picnicky food are almost universally mediocre and exasperatingly expensive. Resist the temptation to outsource and make your own. This recipe is built to last. You can make it a day or two ahead of time, or leave it out on the counter if you're going to eat this salad within a few hours of making it.

dried seaweed
sesame oil
soy sauce
mirin (or sugar).

Steps:

  • Rinse dried seaweed (a mixture is best), then soak it in at least 10 times its volume of water until tender, about 5 minutes.
  • Drain, and gently squeeze to remove excess water. Pick through the seaweed, discard any hard bits (there might not be any) and roughly chop it with scissors if the pieces are large. Toss with sesame oil, soy sauce and mirin (or sugar).
  • Garnish with toasted sesame seeds if you like.

Seaweed has amazing properties! Sea vegetables are virtually fat-free, low calorie and are one of the richest sources of minerals in the vegetable kingdom. According to Seibin and Teruko Arasaki, authors of Vegetables from the Sea, "All of the minerals required by human beings, including calcium, sodium, magnesium, potassium, iodine, iron, and zinc are present in sufficient amounts. In addition, there are many trace elements in seaweeds." They also contain vitamins as vitamin A (in the form of beta-carotene), B1, B2, B6, niacin, vitamin C, pantothenic acid, and folic acid. Analysis has shown trace amounts of vitamin B12, which rarely occurs in land vegetables. Sea vegetables have been shown to cleanse the body of toxic pollutants. Seaweed feeds the shafts and the ducts of the scalp to help improve the health of the hair. It has been said that the thick, black, lustrous hair of the Japanese is partly due to their regular diet of brown sea vegetables such as arame. Research has shown that minerals are important to healthy hair growth, and arame has a high mineral content. Other health benefits, according to Carlson Wade's book Health Secrets from the Orient, include regulating the hormones, enriching the bloodstream, assisting in metabolism, promoting a youthful skin color, and helping to warm the body to promote mental youthfulness. 2 tablespoons sesame oil, divided, or to taste
1 tablespoon minced fresh ginger root
1 bunch fresh kale
1 tablespoon minced garlic
2 tablespoons liquid amino acid (such as Bragg®), or to taste
1 tablespoon toasted sesame seeds

Steps:

  • Rinse seaweed; soak in a bowl with water until softened, about 6 minutes. Drain seaweed; toss with 1 teaspoon of the sesame oil and ginger in a large bowl.
  • Soak kale in a bowl with water to loosen dirt; rinse thoroughly. Chop kale into 1-inch strips.
  • Heat 2 teaspoons of the sesame oil in a large skillet over medium heat. Add garlic; cook until fragrant, about 1 minute. Add seaweed mixture; cook until softened, about 1 minute more. Transfer seaweed mixture back to large bowl.

This Chinese Seaweed Salad recipe is an easy, refreshing, and healthy summer dish. It makes a great side or appetizer, keeps in the fridge for a few days, and gets more flavorful each day.

12 ounces fresh kelp ((340 g))
4 cloves garlic ((15g, minced))
3 thin slices ginger ((8g, minced))
3 Thai chilies ((thinly sliced))
2 scallions ((chopped, white and green parts separated))
3 tablespoons vegetable oil
1 tablespoon Sichuan peppercorns
1 1/2 teaspoons sugar
2 teaspoons Chinese black vinegar ((or to taste))
2 1/2 tablespoons light soy sauce
1 teaspoon oyster sauce
1/2-1 teaspoon sesame oil ((to taste))
1/4 teaspoon salt ((or to taste))
1/4 teaspoon five spice powder
1 tablespoon cilantro ((chopped))

Steps:

  • Bring a pot of water to a boil. Add the kelp, and simmer over medium heat for 5 minutes. Drain and rinse thoroughly in cold water. Drain completely and set aside. (You can also run it through a salad spinner to dry it even more.)
  • Next, make the sauce / dressing. In a large heat-proof bowl, arrange the minced garlic, minced ginger, Thai chilies, and the white parts of the scallions so they're next to each other at the bottom of the bowl. Don't pile them on top of each other, as you'll be pouring hot oil over everything, and you want it in an even layer.
  • Add 3 tablespoons of oil to a small pot or saucepan. Add the Sichuan peppercorns and let them infuse the oil over low heat for 10 minutes until fragrant. Take care not to burn the peppercorns.
  • Scoop out the peppercorns, and turn up the heat on the oil until it's just smoking. Then, immediately turn off the heat and pour the oil over the aromatics in your heat-proof bowl. The oil should be hot enough that the aromatics sizzle on contact.
  • Carefully stir the oil to evenly distribute the heat. Add the sugar, vinegar, light soy sauce, oyster sauce, sesame oil, salt, and five spice powder. Mix well, and stir in the green parts of the scallions and the cilantro.
  • Pour the dressing over the kelp, and toss to coat. Give it a taste, and add salt if needed. Serve.

This delicious recipe came from a class I took at my local food co-op on sea vegetables by Nishanga Bliss. It is super easy to make and is wonderful for people who have not done a lot of cooking with or eating of seaweed, like me. I served it as a side to veggie burgers and ate leftovers cold in my lunch the next day. You will probably be able to find the seaweed in natural food or Asian stores. Variations: use almond or peanut butter instead of tahini, add garlic while cooking the onion, add whole toasted sesame, pumpkin or sunflower seeds.

1 ounce sea vegetables (sea palm, arame, hijiki)
1 onion, sliced
1 tablespoon sesame or 1 tablespoon olive oil
2 tablespoons tahini
1/2 teaspoon tamari
1 dash umeboshi vinegar

Steps:

  • Soak seaweed in cool water to cover, 10-15 minutes. Drain (save the water for soup stock, to water plants or to use in a bath. It has tons of nutients in it).
  • Heat oil in a skillet and sautee the onions until they begin to brown.
  • Add the seaweed and sautee until tender (how long this takes will depend on the type- averaging about 10 minutes).
  • Stir in the tahini and a splash of water it the tahini is very thick.
  • Stir in the tamari until all is smooth. Finish with a dash of umeboshi vineger, to taste.
  • Enjoy!

2 tablespoons soy sauce

12 ounces yellowfin tuna, cleaned and diced into 1/4-inch cubes
4 tablespoons finely diced shallots
6 tablespoons finely sliced chives

18 gaufrette potatoes, recipe follows
3 ounces paddlefish roe (optional)
2 ounces dried wakame seaweed
1/3 cup rice vinegar
1 tablespoon salt
1 tablespoon sugar
1/2 teaspoon toasted sesame oil
1/2 cup soy oil
2 small red chile peppers, seeds removed and cut into thin strips
4 tablespoons sesame seeds, toasted
2 large baking potatoes, like russets
2 tablespoons clarified butter

Steps:

  • Combine the mustard, vegetable, and extra-virgin olive oils in a cup with a pour spout.
  • In a mixing bowl, combine the wasabi, lemon juice, rice vinegar, Dijon mustard, yuzu kosho, and soy sauce, and whisk well. Slowly add the oils, whisking constantly to emulsify. Taste for seasoning, add salt, and set aside.
  • Place tuna in a glass or stainless steel bowl. Add the shallots and chives, and toss gently to combine. Drizzle about half of the vinaigrette over the tuna, and mix well. Let the tartar sit for 2 minutes; taste for seasoning, and add more of the vinaigrette or salt, to taste. Leftover vinaigrette will keep, refrigerated, for 1 week.
  • To serve: shape 1/6 of the tuna tartar into a disc and place it in the center of a serving plate. Arrange 3 dollops of seaweed salad around the disc and garnish with 3 potato slices. Top tuna with a small spoonful of caviar, if desired.
  • Place the wakame in a mixing bowl, and soak it in tepid water for 20 to30 minutes. Remove from water, squeeze dry, and trim away the tough spine. Cut into thin strips, and place in a large mixing bowl.
  • In a separate bowl, combine the vinegar, salt, sugar, and both oils. Pour the dressing over the wakame, add the chile peppers, and toss. Sprinkle with the sesame seeds.
  • Preheat an oven to 350 degrees. Peel the potatoes, and using a mandolin for best results (you can thinly slice with a knife, but you will not get the criss-cross pattern which makes these potatoes unique), slice them thin in a criss-cross pattern with the zig-zag part of a mandolin. Lay the slices onto a non-stick sheet pan, not overlapping, and brush them with clarified butter. Bake until crisp, about 12 minutes.

  • Toast sesame seeds in a large frying pan over medium heat, stirring often, until golden, 3 to 4 minutes. Pour into a bowl.
  • Add 1 tablespoons oil to the pan with the garlic and onions; sauté over medium heat until softened, 1 minute. Remove from heat.
  • Add seaweeds, remaining 1 tablespoons oil, and soy sauce. Toss gently to coat well and let stand until dulse is softened, 5 minutes. Mix in sesame seeds.
  • Taste and add rice vinegar if you like. Serve warm or at room temperature.
