SIMPLEST QUINOA AND PINE NUT PILAF



Simplest Quinoa and Pine Nut Pilaf image

1 1/4 cups whole grain quinoa (about 7 ounces)
1 3/4 cups low-salt chicken broth (preferably organic)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh cilantro or Italian parsley
1/3 cup pine nuts

Steps:

  • Place the quinoa in a fine sieve. Rinse under cold running water 1 full minute. Set aside to drain.
  • Bring the broth, salt and pepper to a boil in heavy, medium saucepan over medium-high heat. Stir in the quinoa. Cover, reduce the heat to medium-low and simmer until the quinoa is tender and all the broth is absorbed, about 15 minutes. Turn off the heat. Let the quinoa stand, still covered, for 10 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Scatter pine nuts on a small rimmed baking sheet. Toast the nuts until golden, stirring occasionally, about 5 minutes. Cool on the baking sheet.
  • Mix the cilantro and pine nuts into the quinoa.

1 cup pineapple chunk (fresh or canned)
1 tablespoon butter
2 tablespoons sugar-free honey
2 tablespoons pine nuts, toasted
1 teaspoon rum
2 tablespoons mascarpone cheese

Steps:

  • Drain the pineapple cubes in a strainer.
  • Lay the pineapple cubes on a paper towel and pat dry.
  • Put the butter in a medium saute pan over medium heat.
  • Make brown butter by heating the butter until melted and just starting to brown around the edges.
  • Add the pineapple and toss to coat in the butter.
  • Add the honey and toss to coat the pineapple with the honey.
  • Cook until the pineapple is golden, about 5 to 7 minutes.
  • Turn off the heat and stir in the pine nuts.
  • In a small bowl mix together the rum and the mascarpone.
  • Place the pineapple mixture in a serving dish (I use a stemless red wine glass) and top it with a dollop of the cheese mixture.
  • Serve immediately.

4 ounces (115 grams) butter
3 1/2 ounces (100 grams) confectioners' sugar
Pinch salt
8 ounces (225 grams) all-purpose flour
2 egg yolks
2 tablespoons cold milk or water
9 ounces (225 grams) pine nuts
9 ounces (225 grams) butter
9 ounces (225 grams) caster sugar
3 large eggs, preferably organic
4 tablespoons Greek fig tree honey
4 ounces (115 grams) all-purpose flour
1 orange, zested
Lemon thyme, leaves picked, plus extra, for garnish

Steps:

  • You can make the pastry by hand or in the food processor. Cream together the butter, sugar, and salt and then rub or pulse in the flour and egg yolks. When the mixture has come together, looking like coarse breadcrumbs, add the milk or water. Gently pat together to form a small ball of dough. Wrap and let rest for an hour.
  • Carefully cut thin slices of the pastry (or you can roll out if you prefer) and place in and around the bottom and sides of a 12-inch (30-centimeter) tart pan. Push the pastry together and level out and tidy up the sides. Cover and let to rest in the freezer for about 1 hour.
  • Pre-heat oven to 350 degrees F (180 degrees C), and bake the pastry for around 15minutes until lightly golden. Reduce the oven temperature to 325 degrees F (170 degrees C).
  • While the pastry is in the oven, toast the pine nuts under the grill.
  • Using a spatula, or a food processor, whip the butter and sugar until light and fluffy.
  • Stir in your pine nuts, add the eggs 1 at a time, and then fold in the honey, flour, thyme, orange zest, and salt. Spoon into the tart shell and bake for 30 to 35 minutes.
  • Add a few uncooked pine nuts to the top of the mixture for decoration.
  • Serve with caramelized figs (grilled with a little sugar), creme fraiche and a little lemon thyme.
  • Serving suggestions: carmelized figs and creme fraiche.

GRILLED PINEAPPLE, BANANAS, AND GRAPES

1/2 cup honey
2 tablespoons fresh lemon juice (from 1/2 large lemon)
1 large lemon, zested
1/2 cup heavy cream
3 tablespoons powdered sugar
1/4 cup plain Greek yogurt
2 tablespoons dark rum
1/2 teaspoon pure vanilla extract
1 pineapple, skinned and cut into 3/4-inch thick slices, or 8 canned pineapple slices in pineapple juice, drained
3 ripe but firm bananas, peeled and halved lengthwise, then halved crosswise
6 to 10 red or green grapes, halved
1/2 cup light brown sugar
3 tablespoons chopped fresh mint, for garnish

Steps:

  • For the glaze: In a small saucepan, bring the honey, lemon juice, and lemon zest to a boil over medium heat. Boil for 1 minute until smooth. Set aside to cool.
  • For the cream: In a medium bowl, using a hand mixer on medium speed, beat the cream until thick. Add the sugar and beat until the cream holds stiff peaks. Beat in the yogurt, rum, and vanilla.
  • For the fruit: Place a grill pan over medium heat or preheat a gas or charcoal grill. Sprinkle each side of the pineapple slices with brown sugar. Sprinkle the cut sides of the bananas and grapes with brown sugar. Grill the pineapple until grill-marked and golden, 4 to 5 minutes each side. Grill the bananas and grapes until lightly browned and warmed through, 2 to 3 minutes each side.
  • Place the grilled pineapple on 4 plates. Top with 3 banana slices and 3 grapes. Drizzle with honey glaze and spoon a dollop of the cream on top. Garnish with chopped fresh mint and serve.

PINEAPPLE SEMIFREDDO

1 cup heavy cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
3 egg whites
1/2 cup simple syrup, recipe follows
1 (20-ounce) can crushed pineapple, drained
1 cup crushed amaretti cookies, for sprinkling
1/4 cup water
1/2 cup sugar

Steps:

  • Spray a 9 1/4 by 5 1/4 by 3-inch (6-cup) metal loaf pan lightly with nonstick spray. Line the pan with plastic wrap with enough plastic wrap extending over the sides to cover the top after the pan has been filled.
  • In a medium bowl, whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. Set aside.
  • In another medium bowl, whip egg whites until foamy. With the mixer on, slowly add the simple syrup. Continue beating on high speed until the mixture is glossy and doubles in volume, about 7 to 10 minutes.
  • Using a large rubber spatula, fold the pineapple into the egg whites. Fold the whipped cream into the egg white mixture. Gently, spoon the mixture into the loaf pan. Fold over the plastic wrap to cover and freeze for 8 hours (or up to 1 month).
  • To serve: Unfold the plastic wrap. Invert the semifreddo onto a cutting board. Remove the plastic wrap. Cut the semifreddo into 1-inch thick slices. Place on individual serving plates and top each slice with the crushed amaretti cookies.
  • In a saucepan, combine water and sugar over medium heat. Bring to a boil, reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take pan off heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container.
  • Yield: 1/2 cup
