  • Gather the ingredients.
  • Put the sesame seeds in a frying pan and toast them over low heat. When 2 to 3 sesame seeds start popping, remove the pan from the heat.

This has been my favourite salad dressing for quite some time. It's just so tasty. I keep coming back to this recipe, it's a staple for me. Lots of good for you ingredients if you get them raw, and I look forward to my salads when I have this dressing made up, or the ingredients to whip up a batch! I always feel great after eating it.

1/2 cup extra virgin olive oil (preferably cold-pressed, unrefined)
1/3 cup nama shoyu (or Bragg's seasoning)
1/3 cup lemon juice (fresh squeezed)
1/3 cup apple cider vinegar
1 garlic clove
1/3 cup tahini

Steps:

  • Combine first 5 ingredients in blender or food processor until garlic is well blended.
  • Add tahini and blend/process on slow speed until mixed through.
  • Note: If you pour a good amount of this dressing on your salad, mix it in well, and let it sit for a while, it's an amazing taste/texture sensation. It soaks in to the lettuce really well, makes it tender, and well, you won't know until you try it! :).

1 shallot clove, quartered
1/2 teaspoon salt
1/8 teaspoon black pepper
2 teaspoons tahini or peanut butter
1 tablespoon sesame seeds
1/2 cup sesame oil
6 cups mixed mesclun greens, soaked in salt water to remove grit, dried in a salad spinner and torn into bite sized pieces
1 cup baby corn from a jar or can
1 (8-ounce) can Mandarin orange segments, drained
1 red bell pepper, stem and seeds removed and sliced julienne
1 (4-ounce) can water chestnuts, rinsed to remove any tinny taste
1 cup grape tomatoes, halved

Steps:

  • Add 1 at a time through the feed tube of a running blender, vinegar, shallot, salt, pepper, tahini, and sesame seeds. Leaving the blender running add the oil in a slow thin stream. Set aside briefly.
  • Toss greens, corn, orange, bell pepper, water chestnuts, and tomatoes together in a large bowl with enough dressing to coat. Serve with additional dressing on the side.

2 tsp tamari
1 lemon , juiced
1 red chilli , deseeded and finely chopped
1 small onion , finely chopped
2 wholemeal noodle nests (about 100g)
160g sugar snap peas
4 small clementines , peeled and chopped
160g shredded carrots
large handful of coriander , chopped
50g roasted unsalted cashews

Steps:

  • Mix all the dressing ingredients together in a large bowl, then stir in the onion. Meanwhile, cook the noodles in a pan of boiling water for 5 mins, adding the sugar snap peas halfway through the cooking time - the noodles and peas should be just tender. Drain, cool under cold running water and drain again. Snip or cut the noodles into smaller lengths to make them more manageable to eat.
  • Tip the noodles and peas into the bowl with the dressing, along with the clementines, carrots, coriander and cashews. Toss to combine, then serve in bowls or pack into rigid airtight containers to take to work.

4 cloves garlic, crushed
30 ml (2 tablespoons ) superfine sugar

250g new potatoes , sliced
160g French beans , trimmed
2 wild salmon fillets
80g salad leaves
4 small clementines , 3 sliced, 1 juiced
handful of basil , chopped
handful of coriander , chopped
2 tsp sesame oil
2 tsp tamari
½ lemon , juiced
1 red chilli , deseeded and chopped
2 tbsp finely chopped onion (¼ small onion)

Steps:

  • Steam the potatoes and beans in a steamer basket set over a pan of boiling water for 8 mins. Arrange the salmon fillets on top and steam for a further 6-8 mins, or until the salmon flakes easily when tested with a fork.
  • Meanwhile, mix the dressing ingredients together along with the clementine juice. If eating straightaway, divide the salad leaves between two plates and top with the warm potatoes and beans and the clementine slices. Arrange the salmon fillets on top, scatter over the herbs and spoon over the dressing. If taking to work, prepare the potatoes, beans and salmon the night before, then pack into a rigid airtight container with the salad leaves kept separate. Put the salad elements together and dress just before eating to prevent the leaves from wilting.
