- Cut meat into two portions; pound to 1/4-in. thickness. Combine 1 tablespoon flour and salt; coat meat on both sides. In a skillet, brown meat in oil. Steps:
- Cut meat into 4 serving size pieces.
- Combine the flour, salt and pepper, along with the meat, in a ziplock bag; shake to coat meat.
- In a skillet, brown meat in oil; transfer to a 2 quart baking dish.
- In the same skillet, combine the tomatoes, onion, celery,carrots and thyme and bring to a boil.
- Pour over the meat and add all scraped, browned bits.
- Cover and bake at 350 degrees for 1 hour or until tender.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
AL'S BAKED SWISS STEAK
This is a variation on another recipe, which is great as is, but I couldn't make Swiss steak without green peppers or garlic. I also season the meat instead of the flour; it gets a more intense taste that way.

- Preheat oven to 350 degrees F (175 degrees C). Grease a shallow baking dish.
- Cut steak into four portions and pound to 1/4-inch thickness; season with salt, pepper, and seasoned salt. Coat meat evenly with about 1 tablespoon flour.
- Heat oil in a skillet over medium heat. Cook beef in hot oil until browned completely, 3 to 5 minutes per side; transfer to prepared baking dish reserving drippings in the skillet.

- Set oven to 300 degrees.
- Cut the steaks into serving-size pieces.
- Lightly dust the beef pieces with flour, then pound with a meat mallet until thin and flattened.
- In a small cup mix together salt, cayenne, black pepper (if using) paprika and dry mustard powder, then season the flattened beef with the spice mixture.
- Heat oil and butter in a large oven-proof skillet over medium heat.
- Add in the steaks and lighty brown/sear on one side, turn over and brown on the other side; transfer to a plate.
- Add in onions and garlic; saute for about 3 minutes, scraping up any browned bits on the bottom of the skillet with a wooden spoon.
- In a bowl mix together sour cream, water, soy sauce and brown sugar, then add to the skillet; mix to combine with the onion/garlic mixture.
- Return the steaks back to the skillet.
- Sprinkle lightly with Parmesan cheese.
- Cover the skillet and bake in oven at 325 degrees for about 30-45 minutes, or until tender.

- In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. This was my favorite growing up. I was amazed when I was older and asked my mom for the recipe how EASY it is! A small amount of prep. time, a day in the slow cooker, and you'll be amazed! It sounds too simple to be good... TRUST me! This gets RAVE reviews when we make it! The amount of vegetables is only an estimate. Use as many or as few as you choose. - Preheat oven to 325°. In a large shallow dish, combine flour, salt and pepper. Pound steak with a mallet to tenderize. Add meat, a few pieces at a time, and toss to coat., In an ovenproof Dutch oven, brown steak in oil on both sides. Arrange onion slices between layers of meat. - In a large cast-iron or ovenproof skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 1/4 cup drippings. Crumble bacon and set aside. , Trim beef; cut into serving-size pieces. Brown on both sides in drippings. Top meat with mushrooms, tomatoes and onion. Sprinkle with tarragon and bacon. My mother has been making this Swiss steak for years. It is wonderful, and can be made either on the stove top or -- when you don't have a lot of time but want a hearty meal ready when you come home -- in the crock pot. Serve over a bed of egg noodles or rice with a hunk of thick crusty bread.

- Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.
- About 20 minutes before steak is finished, fill a large pot with water and bring to a boil. Add pasta, and cook until al dente, about 8 to 10 minutes; drain.
- Serve Swiss steak over noodles.

- Cut meat into 6 serving pieces.
- Combine flour, salt, mustard, pepper, and garlic powder.
- Put 2 T. of the flour mixture into the meat.
- Brown the meat in the shortening on both sides.
- Drain off excess fat.
- Add undrained tomatoes, onion, celery, carrots, Worcestershire sauce and cooking wine.
- Cover and simmer for 1 1/4 hours or until meat is tender.
- Remove meat to a serving platter and keep warm.
- Combine 1/4 water and the remaining flour mixture.
- Stir into tomato mixture until thick and bubbly.
- Pass with meat.
- Serve meat and sauce with hot cooked noodles or rice.
- Crock pot directions:.
- Prepare swiss steak as above except cut meat to fit your crock pot.
- After browning meat, transfer to crock pot.
- Stir remaining flour into pan drippings in the skillet.
- Stir in the remaining ingredients and cook until thick and bubbly.
- Pour over meat in the crock pot.
- Cook on low for 8 to 10 hours.
- Serve with hot cooked noodles or rice.
- Oven directions:.
- Place meat in a baking dish.
- Cover with thickened drippings and veggies as above.
- Bake, uncovered, in a 350 degree oven for 1 hour and 20 minutes.
- Serve with hot noodles or rice.

- Stir flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle pieces of steak with flour mixture and pound the flour mixture into the meat with a meat mallet or the edge of a sturdy plate.

SIMPLE SWISS STEAK IN A DUTCH OVEN
All these years I've thought Swiss steak was from Switzerland! It's not. Swiss is the treatment of the steak. It's the process of rolling or pounding the tough cut to make it tender. I've kept the "Swissing" technique and added my own flavors. It's pretty simple. The hardest part is cutting the veggies. You can't beat a long braise to make meat--cut-with-a-fork tender. Feel free to add your own twist! Serve it over egg noodles and with a crusty loaf of bread.

- Cut London broil into 2-inch cubes and spread out on a cutting board. Combine flour, seasoned salt, and 1/2 teaspoon pepper in a small bowl; sprinkle over meat. Toss to coat.
- Place a sheet of plastic wrap over the steak and gently, but firmly, pound the steak with a mallet or the back of a soup ladle.
