Here's another recipe that comes from the 2006 cookbook SMOOTHIES & JUICES, a copy of which was sent to me by my current cookbook swap partner Tansy. Measurements have been slightly tweaked.

1 1/2 cups frozen strawberries
2 1/2 cups low-fat buttermilk (I use cultured buttermilk with 2% fat)
1/2 teaspoon vanilla extract
2 tablespoons caster sugar (superfine sugar)

Steps:

  • Put all ingredients in a blender & process until smooth.
  • Pour into 2 tall glasses & ENJOY!

Number Of Ingredients 5

1 pint vanilla ice cream
1 cup buttermilk
1 teaspoon grated lemon zest
1/2 teaspoon vanilla extract
1 drop lemon extract

Steps:

  • Place all ingredients in a blender container. Cover and process on high until smooth. Pour into glasses. Refrigerate any leftovers.

1 cup shortening
2 cups sugar
4 large eggs, room temperature
2 teaspoons lemon extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
GLAZE:
1-1/2 cups confectioners' sugar
1 tablespoon grated orange zest
5 tablespoons orange juice
1 tablespoon grated lemon zest
5 tablespoons lemon juice
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan., Cream shortening and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Beat in extract. In another bowl, whisk together flour, baking powder, salt and baking soda; add to creamed mixture alternately with buttermilk, beating after each addition., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. , Poke holes in warm cake using a fork or wooden skewer. Mix glaze ingredients; spoon slowly over cake. Cool 15 minutes before removing from pan to a wire rack; cool completely.,

Number Of Ingredients 10

1/4 cup sugar
1/4 cup hot water
1 cup buttermilk
1 cup fresh orange juice
2 tablespoons fresh lemon juice
1/2 teaspoon vanilla extract
2 cups ice cubes
4 teaspoons gingersnaps, crushed
2 teaspoons lemons, zest of, roughly chopped
4 lemon slices

Steps:

  • COMBINE sugar and hot water in a small bowl; stir until dissolved.
  • PUREE all ingrdients in a blender. Be sure to add the ice last so it doesn't lock the blades.
  • GARNISH each serving with 1 teaspoons crushed cookies, 1/2 teaspoons zest, and a lemon slice. Serve immediately.
