GRILLED ASIAN SESAME BEEF SKEWERS



Grilled Asian Sesame Beef Skewers image

Grilled beef tenderloin skewers marinated in an Asian sesame marinade. Sesame oil, soy sauce, ginger, garlic and green onions.

Number Of Ingredients 12

1 beef tenderloin (3-4 pounds) (, or other lean cut of beef)
1/2 cup sesame oil
1/2 cup vegetable oil
2/3 cup soy sauce
1/2 cup sugar
10 garlic cloves (, minced)
4 tbsp grated ginger
1 tsp dried chili flakes
2 tbsp sesame seeds
2 tbsp black sesame seeds
8 green onions (, sliced)

Steps:

  • Trim the beef tenderloin of any fat and membrane. Cut into 1 inch cubes.
  • Make the marinade by mixing the oils, soy sauce, sugar, garlic, ginger and chili flakes together.
  • Place beef cubes in a bowl, pour the marinade over them and toss to ensure all the beef is coated in the marinade. Cover the bowl with plastic wrap and place in the fridge for at least one hour to marinate.
  • Soak skewers for at least 15 minutes before adding the meat.
  • When ready to grill, place the meat on the skewers.
  • Grill on medium high for about 6 minutes, flipping halfway through. This will cook the beef to medium rare. Adjust the grill time for suit your desired doneness.
  • Place on a serving platter. Sprinkle with sesame seeds and green onions.

1 cup rice vinegar
1 cup soy sauce
1/4 cup packed brown sugar
2 tablespoons minced fresh gingerroot

2 teaspoons Sriracha chili sauce or 1 teaspoon hot pepper sauce
1/2 teaspoon cornstarch

Steps:

  • Cut beef into 1/4-in.-thick strips. In a large bowl, whisk the first 7 ingredients until blended. Pour 1 cup marinade into a shallow dish. Add beef; turn to coat. Refrigerate, covered, 2-8 hours. Cover and refrigerate remaining marinade., Drain beef, discarding marinade in dish. Thread beef onto 12 metal or soaked wooden skewers. Grill kabobs, covered, over medium-high heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 4-5 minutes, turning occasionally and basting frequently using 1/2 cup of reserved marinade. , To make glaze, bring remaining marinade (about 3/4 cup) to a boil; whisk in 1/2 teaspoon cornstarch. Cook, whisking constantly until thickened, 1-2 minutes. Brush kabobs with glaze just before serving. If desired, top with sesame seeds and sliced green onions.

600 g diced beef
2 large zucchini, thickly sliced
1 large red capsicum, cut into 3cm pieces
4 green onions, cut into 4cm lengths
1/3 cup hoisin sauce
1 tablespoon soy sauce
2 teaspoons sesame oil
cooking spray
450 g fresh hokkien noodles
1/3 cup coriander, chopped
1 tablespoon sesame seeds, toasted
lemon wedge, to serve

Steps:

  • Thread beef, capsicum, zucchini, and onion onto 8 skewers. Combine sauces, sesame oil, and 2 tablespoons water in a small jug. Place half the sauce in a microwave-safe dish. Microwave on high for 30 seconds or until warm. Brush skewers with warm sauce.
  • Preheat a barbecue plate to moderate. Spray skewers with oil. Cook skewers, turning once or twice, for 6-8 minutes for medium or until beef is cooked to your liking. Transfer to a plate. Cover with foil and let rest for 5 minutes.
  • Meanwhile, place noodles in a large heatproof bowl. Cover with boiling water; soak for 5 minutes or until soft. using a fork, seperate noodles. Drain. Place remaining sauce in a microwave safe dish. Microwave on high for 30 seconds or until warm. Add sauce and coriander to noodles; toss to combine.
  • To serve, spoon noodles onto serving plates. Top with skewers. Sprinkle with sesame seeds and serve with lemon wedges.

20 skewers
1 tablespoon sesame seeds
1 1/4 pounds filet mignon or boneless rib-eye, trimmed
2 bunches green onions

Steps:

  • Soak skewers in water for 1/2 hour.
  • Preheat the broiler.
  • In a small sauté pan over low heat, toast the sesame seeds, stirring constantly to avoid burning them. When the seeds are golden, remove them from the pan and reserve.
  • Slice the beef into very thin strips - 1 1/2 inches in length, 3/4 inch in width, and as close to 1/4 inches thick as you can get.
  • Slice the white stems of the green onions into 3/4-inch-long pieces; discard the rest.
  • Roll up one piece of beef like a jellyroll. Place it on a skewer, add one piece of green onion, then another piece of beef and another scallion. Repeat with all the skewers. Sprinkle the skewers with salt.
  • To cook: Place under the broiler for 2 to 3 minutes for medium rare. Sprinkle with sesame seeds and serve.

3/4 pound boneless shell steak, cut into 1-inch cubes
five 7-inch bamboo skewers
8 scallions, trimmed

Steps:

  • In a small bowl whisk together the soy sauce, the garlic, the oil, the gingerroot, the sugar, the vinegar, the sesame seeds, and the pepper. Thread the steak cubes loosely onto 4 of the skewers and thread the remaining skewer crosswise through the middle of each scallion so that the scallions stand parallel to one another. Put the beef and scallion kebabs in a shallow dish just large enough to hold them, pour the marinade over them, coating them well, and let the kebabs marinate, chilled, turning them frequently, for 25 minutes. Grill the kebabs on an oiled rack set about 6 inches over glowing coals, turning them, for 10 minutes. Alternatively the kebabs may be broiled under a preheated broiler about 4 inches from the heat in the same manner.) Divide the beef and the scallions, both removed from the skewer, between 2 plates.

These Sesame Asian Steak Skewers are nothing ordinary. They are full of sweet and tangy flavor, your family is going to love. If you love grilling, be prepared to take your grilling tastebuds to a whole new level.

3 pounds steak ((I used New York Strip Steak))
¾ cup Kroger lite soy sauce
¼ cup Kroger apple cider vinegar
¼ cup Kroger clover honey bear honey
¼ cup Kroger canola oil
1 teaspoon minced garlic
¼ cup water
1 bundle green onions (thinly sliced)
1 large red bell pepper (sliced into bite size pieces)
1 red onion (sliced into bite size pieces)
1 teaspoon private selection sesame seeds (for garnish, optional)

Steps:

  • Cut the steak into bite size pieces and set aside.
  • In a bowl combine the soy sauce, apple cider vinegar, honey, canola oil, minced garlic, water and 3/4 of the sliced green onions.
  • Whisk until all the ingredients are combined, then add the steak pieces.
  • Let the steak marinate for at least an hour. We prefer to let it marinate over night.
  • If using wooden skewers, before sliding on your steak and vegetables, be sure the skewers soak in cold water for 20-30 minutes to avoid burning or breaking.
  • Slide your steak pieces, red onion and red pepper slices onto the skewers, leaving about and inch and a half on each end for rotating on the grill.
  • Place your skewers on the grill (pre-heated to about 300 degrees F) and rotate them every one to two minutes until they have reached your desired meat preference (I like my steak cooked medium and it took about 6-7 minutes to cook).
  • Remove from grill and garnish with the 1/3 of preserved green onions and the sesame seeds.
  • Serve warm!

Steps:

  • In a bowl, combine 2/3 of the garlic with 1/4 cup soy sauce, sesame oil, brown sugar, cumin, and red-pepper flakes. Thread 2 pieces of beef onto each of 16 skewers; arrange in a shallow dish. Pour marinade over beef; refrigerate covered 45 minutes or preferable overnight, turning once.
  • Meanwhile make dipping sauce: Heat canola oil in a small saucepan over medium heat. Add remaining garlic; cook, stirring, until soft, 3 minutes. Add broth and 1/4 cup water; bring to boil. Remove from heat; whisk in peanut butter, ketchup, vinegar, and remaining teaspoon soy sauce. Let cool completely.
  • Heat a grill to high. Season beef with salt and pepper. Remove skewers from marinade, letting excess drip off. Discard marinade. Grill beef 1 to 2 minutes per side for medium. Serve hot with dipping sauce on the side.

To do this, cook your rice according to package instructions and stir in 1/4 cup thinly sliced green onions and 1 Tb toasted sesame seeds. We just had ours straight from the skewers.

1/3 cup sake (can also use dry sherry or mirin)
1/4 cup soy sauce

  • Marinate the beef: Cut the flank steak across the grain into slices 1/4 inch thick.   • Place the skewers on the grill rack, or put on a rimmed baking sheet and place under the broiler. Cook, turning once or twice, until seared, 3-4 minutes total for medium-rare, or done to your liking. Divide the skewers among dinner plates and serve immediately.
