GRILLED ASIAN SESAME BEEF SKEWERS
Grilled beef tenderloin skewers marinated in an Asian sesame marinade. Sesame oil, soy sauce, ginger, garlic and green onions.

Steps:
- Trim the beef tenderloin of any fat and membrane. Cut into 1 inch cubes.
- Make the marinade by mixing the oils, soy sauce, sugar, garlic, ginger and chili flakes together.
- Place beef cubes in a bowl, pour the marinade over them and toss to ensure all the beef is coated in the marinade. Cover the bowl with plastic wrap and place in the fridge for at least one hour to marinate.
- Soak skewers for at least 15 minutes before adding the meat.
- When ready to grill, place the meat on the skewers.
- Grill on medium high for about 6 minutes, flipping halfway through. This will cook the beef to medium rare. Adjust the grill time for suit your desired doneness.
- Place on a serving platter. Sprinkle with sesame seeds and green onions.

- Cut beef into 1/4-in.-thick strips. In a large bowl, whisk the first 7 ingredients until blended. Pour 1 cup marinade into a shallow dish. Add beef; turn to coat. Refrigerate, covered, 2-8 hours. Cover and refrigerate remaining marinade., Drain beef, discarding marinade in dish. Thread beef onto 12 metal or soaked wooden skewers. Grill kabobs, covered, over medium-high heat or broil 4 in. from heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 4-5 minutes, turning occasionally and basting frequently using 1/2 cup of reserved marinade. , To make glaze, bring remaining marinade (about 3/4 cup) to a boil; whisk in 1/2 teaspoon cornstarch. Cook, whisking constantly until thickened, 1-2 minutes. Brush kabobs with glaze just before serving. If desired, top with sesame seeds and sliced green onions.

- In a bowl, toss beef with 3 tablespoons dressing and soy sauce; let stand 10 minutes. Meanwhile, in a large bowl, combine pineapple, apples, chili sauce, lime juice and pepper; toss to combine., Thread beef onto four metal or soaked wooden skewers; discard remaining marinade. Grill kabobs, covered, over medium heat or broil 4 in. from heat until desired doneness, 7-9 minutes, turning occasionally; brush generously with remaining dressing during the last 3 minutes. - Thread beef, capsicum, zucchini, and onion onto 8 skewers. Combine sauces, sesame oil, and 2 tablespoons water in a small jug. Place half the sauce in a microwave-safe dish. Microwave on high for 30 seconds or until warm. Brush skewers with warm sauce.
- Preheat a barbecue plate to moderate. Spray skewers with oil. Cook skewers, turning once or twice, for 6-8 minutes for medium or until beef is cooked to your liking. Transfer to a plate. Cover with foil and let rest for 5 minutes.
- Meanwhile, place noodles in a large heatproof bowl. Cover with boiling water; soak for 5 minutes or until soft. using a fork, seperate noodles. Drain. Place remaining sauce in a microwave safe dish. Microwave on high for 30 seconds or until warm. Add sauce and coriander to noodles; toss to combine.
- To serve, spoon noodles onto serving plates. Top with skewers. Sprinkle with sesame seeds and serve with lemon wedges.

- Soak skewers in water for 1/2 hour.
- Preheat the broiler.
- In a small sauté pan over low heat, toast the sesame seeds, stirring constantly to avoid burning them. When the seeds are golden, remove them from the pan and reserve.
- Slice the beef into very thin strips - 1 1/2 inches in length, 3/4 inch in width, and as close to 1/4 inches thick as you can get.
- Slice the white stems of the green onions into 3/4-inch-long pieces; discard the rest.
- Roll up one piece of beef like a jellyroll. Place it on a skewer, add one piece of green onion, then another piece of beef and another scallion. Repeat with all the skewers. Sprinkle the skewers with salt.
- To cook: Place under the broiler for 2 to 3 minutes for medium rare. Sprinkle with sesame seeds and serve.
SESAME BEEF AND SCALLION KEBABS

- In a small bowl whisk together the soy sauce, the garlic, the oil, the gingerroot, the sugar, the vinegar, the sesame seeds, and the pepper. SESAME STEAK ASIAN SKEWERS RECIPE

- Cut the steak into bite size pieces and set aside.
- In a bowl combine the soy sauce, apple cider vinegar, honey, canola oil, minced garlic, water and 3/4 of the sliced green onions.
- Whisk until all the ingredients are combined, then add the steak pieces.
- Let the steak marinate for at least an hour. We prefer to let it marinate over night.
- If using wooden skewers, before sliding on your steak and vegetables, be sure the skewers soak in cold water for 20-30 minutes to avoid burning or breaking.
- Slide your steak pieces, red onion and red pepper slices onto the skewers, leaving about and inch and a half on each end for rotating on the grill.
- Place your skewers on the grill (pre-heated to about 300 degrees F) and rotate them every one to two minutes until they have reached your desired meat preference (I like my steak cooked medium and it took about 6-7 minutes to cook).
- Remove from grill and garnish with the 1/3 of preserved green onions and the sesame seeds.
- Serve warm!

- In a bowl, combine 2/3 of the garlic with 1/4 cup soy sauce, sesame oil, brown sugar, cumin, and red-pepper flakes. Thread 2 pieces of beef onto each of 16 skewers; arrange in a shallow dish. Pour marinade over beef; refrigerate covered 45 minutes or preferable overnight, turning once.
- Meanwhile make dipping sauce: Heat canola oil in a small saucepan over medium heat. Add remaining garlic; cook, stirring, until soft, 3 minutes. Add broth and 1/4 cup water; bring to boil. Remove from heat; whisk in peanut butter, ketchup, vinegar, and remaining teaspoon soy sauce. Let cool completely.
- Heat a grill to high. Season beef with salt and pepper. Remove skewers from marinade, letting excess drip off. Discard marinade. Grill beef 1 to 2 minutes per side for medium. Serve hot with dipping sauce on the side.

GRILLED THAI BEEF SKEWERS
From Williams-Sonoma. DH and I tried these for lunch today. Easy and tasty! According to Williams-Sonoma, if you would like these for a complete meal, you can serve the skewers over scallion rice. To do this, cook your rice according to package instructions and stir in 1/4 cup thinly sliced green onions and 1 Tb toasted sesame seeds. We just had ours straight from the skewers.

- Marinate the beef: Cut the flank steak across the grain into slices 1/4 inch thick. In a shallow glass or ceramic dish just large enough to hold the meat, stir together the sake, soy sauce, vinegar, honey, sesame oil, ginger, garlic, red pepper flakes, and coriander. Add the flank steak and stir to coat thoroughly. Cover and let stand for 30 minutes at room temperature or up to 4 hours in the refrigerator.
- Prepare the skewers and the grill: Meanwhile, soak 12 bamboo skewers in cold water for at least 30 minutes. Prepare a gas or charcoal grill for direct-heat cooking over high heat and oil the grill rack. Or, preheat a broiler.
