- Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans with the coconut oil.
- Beat applesauce, eggs, and butter together in a large bowl until smooth. Add white sugar, raw sugar, vanilla extract, and salt; mix well.
- Whisk bananas, sour cream, and baking soda together in a separate bowl until smooth; stir into the applesauce mixture until evenly combined.
- Gradually stir all-purpose flour, 1/4 cup at a time, into banana mixture until well mixed. Gradually stir whole wheat flour, 1/4 cup at a time, into banana-flour mixture until batter is well mixed. Fold almonds, teff, poppy seeds, chia seeds, and flax seeds into the batter. Pour batter into the prepared loaf pans.
- Bake on the middle rack of the preheated oven until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Cool bread in the pans for 15 minutes before transferring to a wire rack to cool, about 20 minutes.

- Preheat the oven to 350F. Grease and place a cut out parchment paper into a loaf pan, set aside. Using a hand mixer, whisk 1/2 cup butter and 1 cup sugar. Add 2 eggs and 3 mashed bananas, whisk until everything is combined.
- In a different bowl, mix 1 1/2 cup flour, 1 teaspoon baking soda, 1/2 teaspoon salt and 3 teaspoons chia seeds. Add flour mixture to banana mixture, using a spatula stir until everything is combined, try not to over mix.
- Pour the batter into a greased loaf pan and bake for 55 minutes. Let it cool, cut a slice and enjoy!

- Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the flours, bicarb, baking powder and a pinch of salt in a large bowl.
- Mix the bananas, syrup, eggs and yogurt. Quickly stir into dry ingredients, then gently scrape into the tin and scatter with nuts, if using. Bake for 1 hr 10 mins-1 hr 15 mins or until a skewer comes out clean.

HEALTHY BUT OH-SO-DAMN-GOOD BANANA BREAD
This can either be vegan friendly (how I make it) or for those of you who love your dairy, not vegan. This is so tasty and full of seeds and yummy stuff. I created this one day trying to make a vegan alternative to the regular banana bread my mom makes (it was pretty basic--this is way better).

- Preheat oven to 350°F
- Prepare a loaf pan (I like to oil it then line it with wax paper so it doesn't stick at all).
- Mix sugars and melted margarine in a large bowl.
- Pre-mix your fake eggs (or beat your regular eggs) and add them.
- Mash the 3 ripe bananas and mix those in too.
- Add soda, vanilla, cinnamon, allspice and nutmeg.
- Mix in the flour, oats and wheatgerm.
- Now add all your seeds and raisins.
- Place mixture into the pan and cook in the oven for an hour (should be nice and brown on top, if not give it more time).
- And there you have it! enjoy!
