¼ cup coconut oil
½ cup applesauce
2 large eggs
¼ cup butter, melted and cooled
½ cup white sugar
½ cup raw sugar
2 teaspoons vanilla extract
1 teaspoon sea salt
2 bananas, mashed
½ cup sour cream
1 ½ teaspoons baking soda
¾ cup all-purpose flour
¾ cup whole wheat flour
½ cup chopped roasted almonds
¼ cup teff
¼ cup poppy seeds
¼ cup chia seeds
¼ cup flax seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans with the coconut oil.
  • Beat applesauce, eggs, and butter together in a large bowl until smooth. Add white sugar, raw sugar, vanilla extract, and salt; mix well.
  • Whisk bananas, sour cream, and baking soda together in a separate bowl until smooth; stir into the applesauce mixture until evenly combined.
  • Gradually stir all-purpose flour, 1/4 cup at a time, into banana mixture until well mixed. Gradually stir whole wheat flour, 1/4 cup at a time, into banana-flour mixture until batter is well mixed. Fold almonds, teff, poppy seeds, chia seeds, and flax seeds into the batter. Pour batter into the prepared loaf pans.
  • Bake on the middle rack of the preheated oven until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Cool bread in the pans for 15 minutes before transferring to a wire rack to cool, about 20 minutes.

1/2 cup butter (room temperature)
1 cup sugar
2 eggs
3-4 ripe bananas (mashed with potato masher)
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
3 teaspoons chia seeds (100% optional)

Steps:

  • Preheat the oven to 350F. Grease and place a cut out parchment paper into a loaf pan, set aside. Using a hand mixer, whisk 1/2 cup butter and 1 cup sugar. Add 2 eggs and 3 mashed bananas, whisk until everything is combined.
  • In a different bowl, mix 1 1/2 cup flour, 1 teaspoon baking soda, 1/2 teaspoon salt and 3 teaspoons chia seeds. Add flour mixture to banana mixture, using a spatula stir until everything is combined, try not to over mix.
  • Pour the batter into a greased loaf pan and bake for 55 minutes. Let it cool, cut a slice and enjoy!

low-fat spread, for the tin, plus extra to serve
140g wholemeal flour
100g self-raising flour
1 tsp bicarbonate of soda
1 tsp baking powder
300g mashed banana from overripe black bananas
4 tbsp agave syrup
3 large eggs, beaten with a fork
150ml pot low-fat natural yogurt
25g chopped pecan or walnuts (optional)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the flours, bicarb, baking powder and a pinch of salt in a large bowl.
  • Mix the bananas, syrup, eggs and yogurt. Quickly stir into dry ingredients, then gently scrape into the tin and scatter with nuts, if using. Bake for 1 hr 10 mins-1 hr 15 mins or until a skewer comes out clean.
  • Cool in tin on a wire rack. Eat warm or at room temperature, with low-fat spread.

1/2 cup old-fashioned or quick-cooking oats
1/4 cup ground flax seed
1 tsp. baking powder
1/2 tsp. baking soda
1/4 cup butter, softened
1 cup sugar
1 cup mashed fully ripe bananas (about 3)
1 cup sour cream
2 eggs
1 cup chopped walnuts

Steps:

  • Heat oven to 350ºF.
  • Combine dry ingredients. Beat butter and sugar in large bowl with mixer until blended. Add bananas, sour cream and eggs; mix well. Gradually add flour mixture, mixing on low speed after each addition just until blended. Stir in nuts.

  • Remove odd pots and pans from oven.

This can either be vegan friendly (how I make it) or for those of you who love your dairy, not vegan. This is so tasty and full of seeds and yummy stuff. I created this one day trying to make a vegan alternative to the regular banana bread my mom makes (it was pretty basic--this is way better).

1/2 cup brown sugar
1/2 cup sugar
1/2 cup margarine
3 ripe bananas
2 eggs (or fake eggs as i use made with soy milk)
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
3/8 cup of whole brown flax seed
1/8 cup poppy seed
1/4 cup sunflower seeds
1/2 cup raisins
1/2 cup oats
1/2 cup wheat germ
1 cup brown flour

Steps:

  • Preheat oven to 350°F
  • Prepare a loaf pan (I like to oil it then line it with wax paper so it doesn't stick at all).
  • Mix sugars and melted margarine in a large bowl.
  • Pre-mix your fake eggs (or beat your regular eggs) and add them.
  • Mash the 3 ripe bananas and mix those in too.
  • Add soda, vanilla, cinnamon, allspice and nutmeg.
  • Mix in the flour, oats and wheatgerm.
  • Now add all your seeds and raisins.
  • Place mixture into the pan and cook in the oven for an hour (should be nice and brown on top, if not give it more time).
