FROZEN SMORES
Steps:
- Prepare a 9x13-inch pan by lining it with parchment paper. (The paper should extend up the sides.)
- In a medium bowl, combine the cream cheese, marshmallow fluff, and cool whip. Pour the mixture into the prepared 9x13-inch pan.
- In a separate bowl, combine the instant pudding and milk. Mix with a hand mixer (about 2 minutes or until thickened). Pour pudding over the marshmallow mixture and freeze for about 4 hours.
- Remove the pan from the freezer and top with 12 graham cracker squares.
- Place a cutting board on top of the pan, and carefully flip the pan over. The contents of the pan should now be on the cutting board.
- Place the remaining 12 graham cracker squares on the frozen marshmallow mixture. Cut into 12 squares and serve cold!

FROZEN S'MORES
These frozen s'mores give you all of the chocolate, marshmallow, and graham cracker goodness in a chilled, surprisingly less messy treat.

- Gather the ingredients. Preheat the oven to broil.
- Line a 9 x 13-inch baking dish with parchment paper. It's helpful to cut the edges out of the paper so it will lie flat in the bottom with sides that form a 90-degree angle. This will give you edges to grab and lift the frozen layers out of the baking dish. Spread the softened chocolate ice cream into the bottom of the baking dish. Make the top as smooth and even as possible. Freeze for about 1 hour or until the ice cream is mostly set and firm. It does not have to be completely frozen.
- While it is freezing, prepare the second layer. Toast the marshmallows on the center rack under the broiler for 1 to 2 minutes. It helps to do this on a piece of parchment paper prepared with cooking spray. It's important to do it on the center rack so the marshmallow cooks all the way through instead of just browning on the top. You want it to be quite soft and gooey.
- Add the marshmallows to a bowl with the whipped topping, cream cheese, marshmallow fluff, and vanilla extract. These ingredients should all be room temperature. Beat them together with a hand mixer until mostly smooth. You may have a few lumps from the marshmallows.
- Spread the marshmallow mixture over the chocolate mixture in one even layer. Make the top as smooth and as even as possible. Freeze for another hour until both layers are completely set.
- Take out your graham crackers and lay them over the top of the frozen layers so you will know where to cut. Cut the frozen layers to fit the graham crackers. It's a good idea to use a large knife or even a mezzaluna . Layer 1 graham cracker on the top and bottom of each square.
- Serve immediately or wrap each one individually in plastic wrap and freeze again in a plastic bag.

The secret ingredient is toasted marshmallow syrup, made by mixing charred marshmallows into a super-quick simple syrup. Whir it up in a blender with instant coffee, ice and whole milk. And don't forget the graham crackers and chocolate syrup.

- Dissolve the instant coffee in 1 tablespoon warm water; add to a high-powered blender. Add the ice, milk and Toasted Marshmallow Syrup to the blender and blend until smooth and creamy.
- Squirt whipped cream in the bottom of each of 2 tall, wide glasses and drizzle them with chocolate syrup. Divide the frozen latte between the glasses. Top each with whipped cream, chocolate syrup, graham cracker crumbs and 1 toasted jumbo marshmallow.
- Thread the marshmallows onto 2 disposable chopsticks and cook over the open flame of a stove until toasted all over, about 2 minutes. (Alternatively, line the baking sheet of a toaster oven with foil coated in nonstick spray, add the marshmallows and broil, flipping once, until golden brown, about 2 minutes per side.)
- Combine the sugar and 1 cup water in a medium saucepan. Bring to a boil and simmer over medium heat until the sugar is dissolved, about 3 minutes.
- Reduce the heat to low and add the toasted marshmallows to the saucepan. Cook, stirring continuously and turning down the heat if the mixture starts to bubble up around the edges of the saucepan, until the marshmallows are completely dissolved into an opaque mixture, 5 to 7 minutes.
- Strain the mixture through a fine-mesh strainer and whisk in the vanilla extract and salt. Cool completely Store in the refrigerator in an airtight container for up to 1 month.
THE FROZEN S'MORE

- Preheat the broiler and brush a baking sheet with some vegetable oil. Let the ice cream sit at room temperature until soft. Chill a medium stainless steel bowl in the freezer.
- Scatter 2 cups of the marshmallows on the prepared baking sheet and broil, rotating the pan as needed, until very dark and toasted, 3 to 4 minutes. Let cool. Scrape up the marshmallows, transfer them to a cutting board and roughly chop (lightly oil the blade of your knife to help keep the marshmallows from sticking). Transfer the soft ice cream to the frozen bowl, add the chopped marshmallows and stir to combine. Transfer the ice cream to a resealable container and freeze until solid, about 3 hours. The ice cream can be made up to a day ahead.
- Put the chocolate, corn syrup, vanilla and a pinch of salt in a medium bowl. Heat the cream in a microwave-safe bowl in the microwave until very hot, about 1 minute. Pour over the chocolate and let sit for 2 minutes. Stir until all the chocolate is melted and smooth. Pour into a small baking dish and refrigerate until set, about 25 minutes (the chocolate mixture should still be soft and scoopable). The chocolate mixture can be made up to a day ahead.
- Lay the graham crackers out on a baking sheet in a single layer. Spoon a teaspoon of the chocolate mixture onto each graham cracker and gently spread it out to the edges, being careful not to break the cookies.
- Let the ice cream soften slightly at room temperature. Top a graham cracker with about 1/4 cup of the ice cream. Sandwich with a second graham cracker, chocolate-side down, and press some of the remaining untoasted marshmallows into the sides to decorate. Repeat with the remaining graham crackers and immediately freeze until solid, about 1 hour. Once frozen solid, wrap individually and freeze for up to 1 week.

- Mix melted chocolate and condensed milk; set aside. Beat cream cheese in large bowl with mixer until creamy. Gradually beat in 2% milk. Add dry pudding mix; beat 2 min. Stir in COOL WHIP and marshmallows.
- Spread bottoms of graham squares with chocolate mixture. Place 9 squares, chocolate-sides up, in 9-inch square pan. Cover with pudding mixture and remaining graham squares, chocolate-sides down. Freeze 4 hours.
- Remove dessert from freezer 5 min. before serving. Let stand at room temperature to soften slightly. Use serrated knife to cut dessert into 18 bars, following lines in top crackers. Insert wooden pop stick into end of each frozen bar just before serving.

We made these up for our ice cream parlor, based very loosely on a recipe I saw in a magazine. If you love regular s'mores, you'll probably love these, too. Recipe is for one...make as many as you like. These are even more delicious and decadent dipped into melted chocolate.

- Break graham cracker in half.
- Spread one half with marshmallow cream and sprinkle with chocolate chips.
- Top with ice cream and remaining graham cracker half.
- Push a popsicle stick into ice cream, if desired.

- Sometimes we dip halfway into melted chocolate and then refreeze.
