6 pieces cod fish
1 c all-purpose flour
2 1/3 c saltine crackers
1 c buttermilk
3 eggs
1/2 tsp salt
1/4 tsp pepper
Oil for deep fry
2 c mayonnaise
1/4 c minced yellow onions
1/4 c minced fresh parsley
1/2 c dill pickle relish, drained

Steps:

  • Add flour to a large bowl and finely crushed crackers in another bowl to coat the fish pieces.
  • In a medium bowl, combine buttermilk, eggs, salt and pepper and whisk until combined.
  • Coat fish pieces in flour first and then dip into the buttermilk mixture. Finally, coat them with crushed crackers evenly.
  • Heat oil to 350F and deep fry fish pieces until golden brown.
  • For tartar sauce: mix all the ingredients in a bowl with a spatula. Refrigerate the sauce for 1 hour before serving.

1/2 cup dill relish
1/3 cup onion, chopped to almost a mushy consistency in a mini chopper
2 cloves garlic, chopped with onion
Salt & pepper, to taste
All of these ingredients are approximate and to taste except the mayo.

Steps:

  • Put all ingredients in small bowl and mix, add things to the mayo in small increments until it taste how you want it. Store in refrigerator, preferably some time before serving to allow flavors to meld and sauce to firm up a little.

Steps:

  • Preheat oven to 350°F.
  • Coat fish with flour, shaking off excess.
  • Spread mayonnaise evenly over fish.
  • Sprinkle with lemon pepper and parsley.
  • Place in baking pan large enough to hold in a single layer.
  • Carefully pour water around fish to 1/8 inch depth, without wetting the toppings.
  • Bake approximately twenty minutes or until fish flakes when tested with fork and top is light golden brown.

Easy Pan-Fried Fish Fillets and Tartar Sauce image

Make certain to prepare the tartar sauce at least a few hours in advance to blend flavors, the crushed saltines makes a wonderful coating for the fish, but make certain that they are finely crushed! I like whitefish, pickerel fillets, tilapia or sole for this, but any thinner fish fillets will do.

2 large eggs, beaten
1 1/2 cups finely crushed saltine crackers (about 45 crackers)
1/2 teaspoon garlic powder (can use 1 teaspoon garlic powder)
1 teaspoon lemon pepper (or use black pepper)
2 lbs fish fillets
oil (for frying)
seasoning salt
1 cup mayonnaise
1/4 cup sweet pickle relish (use Bick's sweet relish)
1/2 teaspoon garlic powder (or use 1-2 teaspoons fresh minced garlic)

Steps:

  • For the tartar sauce; in a bowl blend all ingredients until well combined.
  • Cover and refrigerate a minimum of 2 hours before using.
  • For the fish; place eggs in a shallow bowl.
  • In another shallow bowl mix together the crushed saltines with garlic powder and lemon pepper (or black pepper) until very well combined.
  • Coat the fish fillets firstly in the eggs, then coat into the breading mixture.
  • Place fillets on a plate and let stand for about 5-8 minutes.
  • Heat oil in a large skillet over medium-high heat.
  • Add in fillets and fry about 2-3 minutes on each side or until the fish flakes (cooking time will vary depending on the thickness of your fish).
  • Remove to a plate then lightly sprinkle with seasoned salt.
  • Serve fish with tartar sauce, YUMMMMM!
