1 pound fresh green beans, trimmed
1 cup mayonnaise
1/4 cup lemon juice
1 shallot, finely chopped
2 tablespoons minced fresh tarragon or 2 teaspoons dried tarragon
2 tablespoons minced fresh parsley or 2 teaspoons dried parsley flakes
2 teaspoons grated lemon zest
Dash pepper

Steps:

  • Place 1 in. of water in a Dutch oven; add asparagus and beans. Bring to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender., Meanwhile, in a small bowl, combine the remaining ingredients. Drain vegetables; transfer to a serving platter. Drizzle with dip.

1/2 pound green beans, trimmed of stems
3/4 pound regular or pencil asparagus, trimmed of rough ends, a small bundle
1/2 red onion, thinly sliced
1 cup flat-leaf parsley, a couple of handfuls
1 lemon, zested and juiced
1/2 cup basil, 12 leaves, a couple of handfuls
1 small clove garlic, cracked from skin
1/4 cup grated Parmigiano-Reggiano or Romano, a generous handful
1/3 cup extra-virgin olive oil, eyeball it
Salt and pepper
2 plum tomatoes, seeded then thinly sliced lengthwise

Steps:

  • Bring 1-inch of water to a boil, add salt then green beans, cover and cook 2 minutes, then add asparagus and cook 3 minutes more. If using pencil asparagus, blanch for 1 to 2 minutes. Drain well and cold shock vegetables in ice water to stop cooking process. Drain the vegetables on clean kitchen towels to dry completely. Thinly slice the green beans lengthwise on an angle; pile them together and run your knife through them cutting them into 2-inch pieces. Halve the asparagus lengthwise if thicker, leave in spindles if thin, then cut the spears into 2-inch pieces on an angle. Combine the beans, asparagus, 1/2 cup of parsley and onion in a shallow bowl.
  • Combine the lemon zest and juice, remaining 1/2 cup of parsley and herbs in a food processor with cheese. Turn processor on and stream in extra-virgin olive oil. Season the dressing with salt and pepper and pour over the salad. Season the sliced tomatoes with salt and garnish salad with them.

2 cups fresh green beans, snapped into 1-inch secions
2 tablespoons minced garlic
1 teaspoon kosher salt

1/4 cup baby carrots, strips (optional)
3 tablespoons olive oil
1 teaspoon balsamic vinegar (optional)

Steps:

  • Heat a heavy bottom saute` pan to medium high. Add olive oil and swirl to coat pan. Add asparagus, green beans (and carrots if using) and stir well to coat vegetables with oil. Sprinkle in salt and pepper and add garlic. Stir constantly 1-2 minutes until garlic is lightly browned. Pour onto serving platter and add a splash of Balsamic vinegar to finish if desired. 1 pound fresh green beans, trimmed and cut into bite-size pieces
1 tablespoon extra-virgin olive oil
1 pound fresh asparagus, trimmed and cut into bite-size pieces
1 tablespoon extra-virgin olive oil
½ red onion, chopped
2 cups cherry tomatoes, halved
¼ cup chopped fresh parsley
kosher salt to taste
ground black pepper to taste
1 tablespoon extra-virgin olive oil, or as desired

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Toss green bean pieces and 1 tablespoon olive oil in a bowl until the green beans are evenly coated; spread onto a baking sheet.
  • Roast green beans in preheated oven until tender, about 10 minutes.
  • Toss asparagus pieces and 1 tablespoon oil in a bowl until the asparagus is evenly coated; spread onto the baking sheet with the partially roasted green beans.
  • Continue roasting the green bean and asparagus mixture until tender, 10 to 12 minutes.

A lot of folks simply open a couple of cans of green beans, heat, add a bit of butter...and wonder why no one eats them! This simple little "tweak" turns them into a delicious, satisfying side that'll change the way you think of canned green beans.

2 (14 1/2 ounce) cans cut green beans (not french-style)
4 slices thick-cut bacon
1/4 teaspoon minced garlic
salt

Steps:

  • Cook the bacon in a heavy sauce pan (do not crisp the bacon, just cook enough to extract the drippings). Remove from heat.
  • Empty the 2 cans of cut green beans into the sauce pan directly on top of the cooked bacon and drippings.
  • Add salt to taste and then the 1/4 teaspoons of minced garlic. Stir well and return to heat.
  • Bring to a boil over medium heat, then reduce heat to med-low, cover, and simmer for at least 30 minutes (1 hour is better).
  • Serve and enjoy.
  • NOTE - Use good quality canned green beans. My family prefers "flat beans" (Cut Italian Green Beans), but regular cut will taste just as good.

Steps:

  • For OAMC (Once A Month Cooking preparation), combine everything in bowl, then place in freezer bag.
  • Place optional cheese in a smaller bag and insert in freezer bag.
  • Squeeze out as much air as possible before sealing.
  • Freeze until needed.
  • When ready to serve, heat skillet to medium-high and saute with 2 T water for about 8-10 min until beans are are brightly colored and tender.

2 pounds asparagus, tough ends discarded and halved crosswise at a sharp diagonal
1/2 pound string beans, tops trimmed and halved crosswise at a sharp diagonal
1 bunch scallions (about 8)
2 tablespoons extra virgin olive oil

Steps:

  • Bring a 5- to 6-quart pot of water seasoned with 1 tablespoon kosher salt to a boil. Cook asparagus and string beans until just tender, 5 to 6 minutes. Drain, then transfer in a single layer to paper or kitchen towels to dry.
  • Separate white parts from green parts of scallions. Halve whites lengthwise. Halve green parts lengthwise and again in half crosswise. You should have approximately 3-inch pieces.
  • Heat oil in a large, heavy skillet over medium-high heat until oil shimmers. Add white parts of scallions and sauté until they just begin to wilt and turn golden, about 2 minutes.

3 slices bacon, cooked and crumbled
1 medium onion, chopped
2 teaspoons cornstarch
1/2 teaspoon salt
1/4 teaspoon dry mustard
1 tablespoon brown sugar
1 tablespoon vinegar

Steps:

  • Cook green beans (you can steam the fresh ones about 15-18 minutes; or fix frozen according to pkg directions, or heat canned).
  • Saute onion in bacon fat or butter/margarine until tender and starting to turn brown.
  • Mix cornstarch, salt, mustard, brown sugar, and vinegar together with 1/2 cup of the water from the green beans.
  • Add this to the onions in the pan and cook, stirring, until slightly thickened.
  • Drain the cooked green beans and mix into the thickened onions; adjust salt and pepper and stir, coating green beans and cooking until reheated if necessary.
  • Top with crumbled bacon and serve.

200g green bean
200g asparagus , woody bottoms cut off
200g frozen pea
200g double-podded broad bean
200g/7oz spring or Savoy cabbage , shredded
small knob of butter
2 tsp caster sugar

Steps:

  • Bring a large saucepan of water to the boil. Add the carrots and cook for 2 mins, then add the green beans and cook for 1 min more. Tip in the asparagus, peas, broad beans and cabbage, and cook for another 3 mins. Test a carrot and green bean to see if they are done, then drain well. Tip back into the pan with the butter, sugar and some seasoning. Toss together and transfer to a serving dish.
