2 tablespoons good olive oil, plus extra for searing
1 1/2 cups diced yellow onion (2 onions)
2 teaspoons peeled, minced fresh ginger
1 1/2 teaspoons minced garlic
2 ripe mangos, peeled, seeded, and small diced
1/3 cup freshly squeezed orange juice
2 teaspoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 to 2 teaspoons minced fresh jalapeno pepper, to taste (1 pepper)
2 teaspoons minced fresh mint leaves
2 tuna steaks

Steps:

  • Saute the olive oil, onions, and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent. Add the garlic and cook for 1 more minute. Add the mangos, reduce the heat to low and cook for 10 more minutes. Add the orange juice, brown sugar, salt, black pepper, and jalapeno; cook for 10 more minutes, until orange juice is reduced, stirring occasionally. Remove from the heat and add the mint. Serve warm, at room temperature, or chilled.
  • Heat a saute pan over high heat for 5 minutes until very hot. Season the tuna liberally with salt and pepper. When the pan is very hot, add a drizzle of olive oil and then the tuna steaks. Sear for 2 to 3 minutes on each side, or until the outside is browned, but the inside is very rare.
  • Serve the tuna on top of the mango salsa.

1/4 cup black sesame seed
1/2 cup white sesame seeds
4 (6 ounce) ahi tuna steaks, 1 inch thick
salt & freshly ground black pepper
2 tablespoons grapeseed oil or 2 tablespoons canola oil

Steps:

  • In a shallow dish, combine the two types of sesame seeds and stir to mix.
  • Season the tuna with salt and pepper and dredge in the sesame seeds, coating the tuna evenly.
  • In a non stick pan, warm the oil until smoking, arrange the tuna in the pan (making sure not to overcrowd) and cook until the white sesame seeds start to turn golden underneath (around 1 minute).
  • Carefully turn the tuna over and cook for about another minute.
  • Transfer the tuna to a cutting board and cut into 1/4 inch thick slices.
  • Serve immediately.

1 orange, peeled and cut into slices

Steps:

  • Rub the pepper into the swordfish steaks and let sit for 5 minutes.

Four 6-ounce fresh tuna steaks
1 tablespoon extra-virgin olive oil
1 teaspoon ground coriander

Steps:

  • In a medium bowl mix together the oranges, pepper, onion, mint and vinegar. Season with salt and pepper and set aside.
  • Heat the grill to high-heat. Oil the grates generously with vegetable oil (not cooking spray), and let heat up. Rub each tuna steak with a little bit of olive oil, and then sprinkle with coriander, salt and pepper. Place the tuna steaks on the grill and cook 4 to 6 minutes, turning just once. It will still be pink in the center.

8 to 9 oz. fresh tuna fillet
1 Tbs. vegetable or olive oil
Kosher salt and freshly ground black pepper
3/4 cup finely diced fresh pineapple
4 scallions (white and light green parts only), thinly sliced
2-1/2 Tbs. fresh lime juice
1-1/2 Tbs. soy sauce
1 tsp. minced fresh ginger
1 small ripe avocado (about 6 oz.), finely diced
1/2 cup coarsely chopped fresh cilantro leaves; plus small whole leaves for garnish
3-1/2-oz. package plain rice crackers

Steps:

  • Cut the tuna into long, fat, squared-off strips or "logs" 1 to 1-1/2 inches thick. Coat the tuna with the oil and season lightly with salt and pepper. Set a 10-inch heavy-duty skillet over high heat. When the pan is very hot, after 2 to 3 minutes, sear the tuna logs for 20 to 30 seconds on each side-they should be seared outside and rare inside. Transfer to a clean cutting board and slice 1/4 inch thick.
  • In a -medium bowl, combine the pineapple, scallions, lime juice, soy sauce, and ginger. Add the avocado and gently stir to combine. Stir in the chopped cilantro.

2 tuna steaks (big eye, yellowfin, or albacore; about 1 1/4 in. thick, 5 to 6 oz. each)
1 teaspoon minced or pressed garlic
Salt and pepper
2 teaspoons vegetable oil
1/4 cup sake
2 tablespoons soy sauce
3/4 cup finely chopped tomatoes
2 tablespoons finely chopped green onion
1 tablespoon chopped fresh cilantro

6 to 8 slices peeled avocado (3 to 4 oz. total)

Steps:

  • Rinse tuna; pat dry. Spread garlic on both sides of steaks; sprinkle with salt and pepper. Pour oil into an 8- to 10-inch nonstick frying pan over medium-high heat. When hot, add tuna. 1 ½ teaspoons soy sauce
1 shallot, chopped
1 tablespoon chopped fresh parsley
1 ½ teaspoons fresh thyme
1 ½ teaspoons chopped fresh dill
1 tablespoon honey
1 teaspoon Dijon mustard
½ jalapeno or serrano chili pepper, seeded and chopped
1 ½ teaspoons minced ginger
¾ cup olive oil

Steps:

  • Stir together 1/2 cup olive oil, 1 tablespoon parsley, and red pepper flakes. Toss tuna with marinade, and set aside to marinate for 30 minutes.
  • Pour vinegar, orange juice, lemon juice, lime juice, and soy sauce into the bowl of a blender. Add shallot, 1 tablespoon parsley, thyme, dill, honey, Dijon mustard, jalapeno, and ginger. Blend on high until smooth, then add 3/4 cups olive oil in a slow, steady stream with the blender running. Season to taste with salt and pepper, and set aside.
  • Bring a large pot of salted water to a boil over high heat. Fill another large container with half ice, half cold water, and set aside. Add the haricots verts to the boiling water, and cook until just tender, 35 to 40 seconds. Remove from the water, and immediately plunge into the ice water to cool. Next, blanch the carrots until just tender, about 1 1/2 minutes; chill in ice water until cold.
  • When the vegetables are cold, remove from the ice water and pat dry. Place into a large bowl, and toss with the halved tomatoes, olives, onion, and chervil; set aside.
  • Heat a heavy-bottomed skillet over high heat until very hot. Remove tuna steaks from marinade, and wipe off excess marinade. Season the tuna to taste with salt and pepper, then sear in hot skillet to desired doneness, about 1 minute per side for rare.
  • To assemble, toss the vegetable salad with enough dressing to lightly coat. Divide the salad among 4 plates, and place a seared tuna steak on top of each. Drizzle with additional dressing to serve.

2 tablespoons limes
1/4 cup onion, minced
1 piece fresh ginger, size of a quarter and crushed
1 garlic clove, left whole and but crushed
2 -4 tablespoons wasabi paste
1 tablespoon soy sauce
1/2 cup unsalted butter
1 cup fresh cilantro leaves or 1 cup fresh parsley
6 (6 ounce) tuna steaks
1 tablespoon olive oil
salt and pepper

Steps:

  • Combine wine, lime, onion, ginger and garlic in a saucepan over medium heat. Simmer to reduce to about 2 tablespoons.
  • Place reduced sauce in blender with the butter, soy and wasabi and blend till smooth and butter is melted.
  • Place in a bowl.
  • Stir in cilantro.
  • Preheat grill high. It needs to be very hot!
  • Mix olive oil and 1 tablespoon sauce together. Brush tuna steaks with the sauce and oil mixture.
  • Grill for 90 seconds then turn and continue grilling for 90 seconds more.
  • If you just want the tuna seared remove from grill now. Otherwise continue grilling for 1 minute on each side again.
  • Serve tuna topped with the yummy sauce.

2 x 250g/9oz fresh tuna steaks
5 tbsp Italian olive oil
salt and freshly ground black pepper, to taste
2 handfuls of new potatoes, par-boiled until al dente then cooled
4 anchovy fillets
1 tbsp capers, roughly chopped
1 clove garlic, roughly chopped
½ lemon, zest and juice only
90ml/3fl oz olive oil
2 tbsp flatleaf parsley, chopped
1 tbsp basil, chopped
salt and freshly ground black pepper

Steps:

  • Marinate the tuna steaks in the olive oil, salt and pepper for at least two hours before cooking.
  • Preheat a griddle until hot and cook the tuna steaks for approximately two minutes on each side.
  • In the meantime, prepare the salsa verde. Place the anchovy fillets, capers and garlic into a mortar and pestle and pound until broken down.
  • Add the lemon zest and juice.
  • Add the olive oil in a steady stream, whisking to combine.
  • Stir in the parsley and basil and season to taste with salt and black pepper.
  • Boil the new potatoes for 12-15 minutes.
  • Crush the potatoes with a fork and combine with half the salsa verde.
  • Serve the potatoes on the side of the plate and pour over the rest of the salsa verde. Serve with the tuna.

  • Make sauce:
  • In a large saucepan combine citrus juices, tamari or soy sauce, vinegar, oil, and gingerroot and simmer 15 minutes. Pour sauce through a fine sieve into a bowl. (Sauce may be made 1 day ahead and chilled, covered. Reheat sauce before preceeding.)
  • Preheat oven to 400°F..
