PISTACHIO VEGGIE BURGER
This is from the California Pistachio Commision. It looks different and delicious, I have yet to try it, but putting it here so I can soon!

Steps:
- Combine all ingredients, except dressing and mix well. Shape into 6 patties. Brush both sides generously with dressing and place in a grill basket with a fine grid. Grill in covered barbecue over medium coals for 5 to 6 minutes. Or you may cook this inside in a grill pan or under the broiler. Baste with dressing and flip burger. Cook another 5 to 6 minutes.
- Serve in buns with fixings. Enjoy!

Steps:
- In a food processor, combine chickpeas, oats, carrots, red onion, egg, salt, pepper, garlic powder, and olive oil. Blend just until combined.
- Add lemon juice and blend again until well-combined.
- Scoop out a handful of the mixture and form into patties.
- Heat a tablespoon of olive oil over medium-high heat.
- Cook the patty 4-5 minutes on each side, or until golden brown.
- Assemble with your favorite burger toppings.
- Enjoy!

- While the skillet is heating, add the pistachios, chili powder, cumin powder, sea salt, and black pepper to a food processor and process until it forms a fine powder. Set the mixture aside.
- Add the 1/2 Tbsp avocado oil and your diced onions to the heated skillet and cook for about 8-10 minutes, stirring occasionally, until they are slightly browned. Transfer the onions to a large mixing bowl, and return the pan to the hot stove.
- Add the cooked brown rice, mashed beans, BBQ sauce (or salad dressing), and pistachio mixture to the bowl with the onions and stir everything together until it forms a thick dough that you can mold with your hands. If it seems too dry, add 1-2 Tbsp more BBQ sauce or salad dressing. If it seems too wet, add additional ground pistachios.
