Seared Scallops with Herb Butter Sauce and Orzo image

Scallops are one of my favorite food items of all time. I just love their slight sweetness and incredibly smooth and firm yet delicate texture.

3/4 cup uncooked orzo
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
2 teaspoons extra-virgin olive oil
1 tablespoon fresh lemon juice
Kosher salt
1 1/2 pounds large sea scallops, patted completely dry
Kosher salt and freshly ground black pepper
1 teaspoon unsalted butter plus 3 tablespoons chilled and cubed butter
1 teaspoon olive oil
1 tablespoon chopped shallots
1/3 cup dry white wine
1 tablespoon white wine vinegar
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 teaspoon chopped fresh thyme

Steps:

  • Prepare the orzo according to the package directions. Drain the orzo and return to the pan. Stir in the parsley, chives, olive oil, lemon juice and a pinch of salt. Keep warm.
  • Sprinkle the scallops evenly with salt and pepper. Add 1 teaspoon of the butter and the olive oil to a 12 to 14-inch sauté pan on high heat. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Remove the scallops from the pan and keep warm.
  • Add the shallots to the pan and sauté for about 1 minute, stirring frequently. Pour the wine into the pan and scrape up any browned bits on the bottom of the pan with a wooden spoon. Add the vinegar and cook for 3 minutes, or until the liquid reduces to about 1 tablespoon. Reduce heat to low and add the remaining 3 tablespoons butter, 1 cube at a time, whisking after each addition until the butter is fully incorporated. Stir in the parsley, chives, thyme, and salt and pepper to taste. Serve scallops with sauce and orzo.

1 cup orzo
5 tablespoons unsalted butter
Grated zest and juice of 1 lemon
Freshly ground pepper
1 pound medium sea scallops, "foot" muscles removed
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/2 cup dry white wine
1 to 2 tablespoons capers, drained
2 tablespoons chopped fresh parsley
2 cups baby arugula
1 cup cherry tomatoes, halved or quartered if large

Steps:

  • Bring a medium saucepan of salted water to a boil. Add the orzo and cook as the label directs. Reserve 1/4 cup cooking water, then drain. Transfer the orzo to a large bowl and add 2 tablespoons butter, the lemon zest, half of the lemon juice and 2 tablespoons of the reserved pasta cooking water. Season with salt and pepper; toss, adding more pasta cooking water as needed to loosen. Cover to keep warm.
  • Pat the scallops dry and season with salt and pepper. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the scallops and cook until browned on the bottom, about 3 minutes. Flip and cook until just cooked through, 1 to 2 more minutes. Transfer to a plate; cover to keep warm.
  • Add the garlic to the skillet. Cook, stirring, until golden, about 10 seconds. Add the wine, 1/4 cup water and the remaining lemon juice. Cook until reduced by half, about 3 minutes. Add the capers and the remaining 3 tablespoons butter; swirl to melt. Stir in the parsley.
  • Add the arugula and tomatoes to the orzo; toss. Serve with the scallops and pan sauce.

3 cups pumpkin, diced
1/3 cup shallot, finely chopped
3 cloves garlic, minced
8 ounce orzo
1 tablespoon parsley
1 teaspoon thyme
1 pinch black pepper
1 pound scallops
1 pinch s&p
1 tablespoon butter
1 tablespoon shallot, chopped
2 clove garlic, minced
1/3 cup white wine
1/3 cup heavy cream
1 teaspoon thyme
2 tablespoon pepitas, roasted
1 tablespoon parsley

Steps:

  • Bring a medium pot of salted water to a boil over medium-high heat.Melt the butter in a 12-inch nonstick skillet over medium heat. Add the pumpkin and shallot and cook, stirring, until the pumpkin is almost tender and the shallot is golden, 6 to 8 minutes. Add the garlic and cook, stirring, until the pumpkin is completely tender, about 2 minutes more. Set aside. Cook the orzo in the boiling water until al dente. Reserve 1 cup of the water and drain. Add the orzo, parsley, and marjoram to the skillet, along with 1/2 cup of the reserved pasta water, and stir until blended and heated through, adding more pasta water if necessary, about 1 minute. Season to taste with salt and pepper. Keep warm.
  • Pat the scallops dry and season generously with salt and pepper. Melt the butter in a 12-inch nonstick skillet over medium-high heat. Add the scallops to the skillet and cook, flipping once, until browned on both sides yet just barely cooked through, about 1½ minutes per side. Transfer to a plate. Stir the shallot and garlic into the butter, add the wine, and bring to a boil, scraping the bottom of the pan with a wooden spoon. Stir in the cream and marjoram and boil until thickened, about 1 minute. Return the scallops and any liquid to the skillet and stir briefly over medium heat. Divide the orzo and scallops among four plates and drizzle with the sauce. Sprinkle with the pepitas and parsley and serve.

1 lb dry large scallop (rinse under cold water and pat dry with paper towels)
3 tablespoons unsalted butter, cut into 6 pieces
2 tablespoons finely diced shallots (1 medium shallot)
1/4 cup dry white wine
1/8 cup finely chopped fresh flat leaf parsley
1/8 cup finely chopped fresh chives
1/4 teaspoon finely grated lemon zest
kosher salt
fresh ground black pepper
2 tablespoons extra virgin olive oil
2 lemon wedges, for serving

Steps:

  • Heat 12" nonstick skillet over medium-high heat for 1-2 minutes.
  • Add 2 tablespoons olive oil and heat until quite hot.
  • Pat scallops dry one more time and put them in the pan in a single, uncrowded layer.
  • Season with salt and pepper and let sear undisturbed until one side is browned and crisp, 2-4 minutes.
  • Using tongs, turn the scallops and sear until the second side is well browned and the scallops are almost firm to the touch, 2-4 minutes.
  • Take the pan off the heat, transfer the scallops to a plate, and set them in a warm spot.
  • Let the pan cool for a minutes before you make the sauce.
  • When pan has cooled somewhat, return it to medium heat.
  • Add a piece of the butter and the shallots and saute until shallots begin to soften, about 1 minutes.
  • Add wine and simmer until reduced by half, another 1-2 minutes.
  • Add the herbs and lemon zest.
  • Reduce heat to low, add the remaining butter, and whisk constantly until the butter melts into the sauce.
  • Return the scallops and any accumulated juices to the pan.
  • Gently roll the scallops in the sauce to warm them through.
  • Taste for salt and pepper and serve immediately with lemon wedges on the side to squeeze over the scallops.

1 cup mushroom, diced
1/3 cup onion, diced
1/3 cup sun-dried tomato, diced

2 tablespoons parsley, chopped
1/2 cup whipping cream
2 tablespoons olive oil
3/4 lb large scallops (from Nova Scotia if you can) or 3/4 lb large shrimp

Steps:

  • Cook orzo according to package directions and set aside.
  • In large heavy pot, heat oil and saute mushrooms, onion, sun-dried tomatoes and red pepper until soft.
  • Add stock and bring to a boil.
  • Stir in orzo, parmesan and parsley. Add cream and simmer gently, stirring frequently, until mixture is creamy but not runny, about 20 minutes.
  • Meanwhile, heat oil in very hot pan. Season scallops or shrimp with salt and pepper. For scallops: sear until brown on outside but opaque in the middle. For shrimp: sear until just pink and cooked through.
  • Sprinkle parmesan cheese over risotto and top with scallops or shrimp.

2 quarts white chicken stock, heated to a boil
1 1/2 lbs orzo pasta, dried
2 tablespoons peanut oil
3 ounces fresh chives, washed & snipped
1 tablespoon grated lemon zest
1 tablespoon fresh lemon juice
salt
white pepper or crushed red pepper flakes
2 teaspoons olive oil
1 1/2 lbs sea scallops
1/8 teaspoon salt (to taste)
1/8 teaspoon white pepper
chopped fresh flat leaf parsley
lemon wedge

Steps:

  • Place the stock in a saucepan, and heat to a boil.
  • Add the orzo, reduced to heat & simmer until cooked al dente, approximately 7 to 8 minutes,.
  • Drain and rinse under cold water.
  • In a saucepan, heat the oil and add the cooked orzo and the remaining ingredients.
  • Toss to combine, season to tatse.
  • Then, heat oil in a another large cast-iron skillet ove medium-high heat.
  • Sprinkle scallops evenly with salt and pepper.
  • Add scallops to pan; cook 3 minutes on each side or until desired degree of doneness.
  • Season again, as needed; serve immediately with some fresh chopped parsely, if you choose.
  • Enjoy!

½ cup all-purpose flour
2 teaspoons seasoning salt
½ teaspoon dried oregano
½ teaspoon dried thyme
2 tablespoons lemon pepper
16 sea scallops, rinsed and drained
2 tablespoons olive oil
4 tablespoons chopped fresh parsley, divided
4 teaspoons lemon juice, divided

Steps:

  • In a large bowl, mix together flour, salt, oregano, thyme and lemon pepper. Roll scallops in flour mixture until lightly coated on all sides.
  • Heat olive oil in a skillet or frying pan over high heat. Add 4 scallops to the pan and sear on all sides (about 2 minutes for each side).
