MIXED BERRY TERRINE

We made our own flavored gelatin by dissolving unflavored gelatin in fruit juice.

2 envelopes (1/4 ounce each) unflavored gelatin
2 cups white grape juice
1/2 cup sugar
5 1/2 to 6 cups (about 2 pounds) mixed fresh berries, such as strawberries (hulled and halved), raspberries, blackberries, and blueberries

Steps:

  • In a small bowl, sprinkle gelatin over 1/4 cup grape juice; let soften 2 to 3 minutes.
  • Meanwhile, heat sugar with another 1/4 cup grape juice in a small saucepan over medium-high heat until dissolved. Remove from heat; stir in softened gelatin until dissolved, then stir in remaining 1 1/2 cups grape juice.
  • Place berries in a 4-by-8-inch (6-cup-capacity) loaf pan; pour gelatin mixture over, pressing berries gently to submerge completely (remove a few berries if necessary). Refrigerate until firm, at least 3 hours.
  • To unmold, dip bottom of pan in hotwater about 5 seconds. Invert onto a serving platter, and shake firmly to release. Slice to serve.

Sabayon of Muscat de Beaumes de Venise with Fresh Berries image

4 large egg yolks, at room temperature
1/2 cup granulated sugar
3/4 cup Muscat de Beaumes-de-Venise, at room temperature
1 teaspoon grated orange zest
1 1/4 cups mixed fresh berries, such as blueberries, raspberries, and blackberries
4 mint sprigs, for garnish

Steps:

  • Place the yolks in a medium, heatproof bowl. Gradually whisk in the sugar and whisk until the mixture is thick enough to form a thick ribbon when the whisk is lifted, about 2 minutes. Beat in the Muscat and orange zest. Place the bowl over a pot of simmering water. Whisking constantly, cook until the sabayon is warm and doubles in volume, about 8 minutes. Pour into 4 wine glasses. Refrigerate until chilled, about 1 hour. To serve, spoon the berries over each serving, and garnish with a mint sprig.

1 1/2 envelopes plain gelatin
1 cup orange juice
1 half bottle (350 milliliters) muscat de Beaumes-de-Venise
2/3 cup sugar, plus more for berries
1 vanilla bean, split in half
1 tablespoon pink peppercorns
1 1/2 pints raspberries
1/2 pint strawberries, sliced
1/2 pint blueberries

Steps:

  • Soften the gelatin in 1/2 cup orange juice. Combine the remaining juice with the muscat, sugar, vanilla and peppercorns in a saucepan, and bring to boil. Remove the saucepan from heat, stir in the gelatin to dissolve, and then strain.
  • Puree 1 pint of the raspberries, strain, and sweeten to taste. Refrigerate until ready to serve.
  • Line a 6-cup oblong terrine with plastic wrap. Pour in a thin layer of the muscat mixture and the remaining raspberries. Refrigerate until set, about 1 hour (or freeze for about 30 minutes). Add the blueberries and half of the remaining muscat mixture, and refrigerate 1 hour. Then add the strawberries and the remaining muscat mixture, and refrigerate at least 3 hours, until firm.
  • To serve, unmold the terrine, and peel off the wrap. Serve in thick slices with raspberry sauce drizzled around.

450-500g/1lb-1lb 2oz plain madeira cake
1kg mixed berries (include strawberries and red and blackcurrants, if possible)
100g golden caster sugar
2 tbsp cassis (blackcurrant liqueur), optional
coulis , to serve (see 'Goes well with' below)

Steps:

  • For the compote, hull strawberries and halve or slice if large. Put currants and blackberries (if using) into a pan with the sugar and 3 tbsp water and bring to the boil, stirring. Simmer for 5 mins until softened, add remaining fruits and cook for a couple more mins. Remove from the heat, add cassis, if using, then cool.
  • Line the base of a 1kg loaf tin with a long strip of double thickness baking parchment, allowing some overhang at the narrow ends to make lifting easier. Slice the cake into long thin strips to allow for 3 layers. Use offcuts for 'patching'.
  • Cover the base of the tin with one layer of cake, trimming offcuts to fit snugly. Spoon in half the fruits with some juice on top. Fit another layer of cake on top, then the rest of the fruits and finally a top layer of cake. Reserve leftover juice to pour over the cake when it is turned out. Press lightly down to squash the fruits into the cake, cover with cling film and put something heavy on top to weight it down. Chill overnight.
  • Transfer to a plate, using the paper to help loosen and lift it out. Spoon enough of the reserved juice over to moisten (any left over can be used as a drink with fizzy water). Serve with a bought or homemade coulis or cream.
