HERB ENCRUSTED SEA BASS WITH SUNDRIED TOMATO CHARDONNAY SAUCE



Herb Encrusted Sea Bass with Sundried Tomato Chardonnay Sauce image

2 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh thyme leaves
1 teaspoon black peppercorns, crushed finely
2 cloves garlic, minced
2 tablespoons olive oil
2 (8 ounce fillets) fresh sea bass
1/4 cup Cognac or brandy
1/3 cup fish stock
Salt and pepper
1 bunch asparagus, blanched and refreshed
Sundried Tomato-Chardonnay Sauce, recipe follows
2 basil buds, for garnish
1 tomato, peeled seeded and small diced (1 tomato concassed), for garnish
1/4 cup olive oil
2 tablespoons black peppercorns
2 tablespoons shallots
3 cups Chardonnay
1 fresh bay leaf
1 teaspoon fresh lemon juice
1 large sun-dried tomato, chopped
1/2 pound butter, cut into small cubes

Steps:

  • In a flat plate, mix the basil, thyme, peppercorns, and garlic.
  • Heat the oil in a large saute pan. Encrust the fish with the fresh spice mix. Saute the fish delicately, about 3 minutes per side.
  • Without removing the fillets from the pan, drain off most of the oil. Deglaze the pan with the Cognac. Tilt pan to flambe, allowing the flame to crisp the crust on the fish. Add the stock to extinguish the flambe, and to deglaze further.
  • Season with salt and pepper.
  • Divide asparagus between two serving plates, arranging the stalks decoratively. Carefully place sauteed fish on top of the asparagus. Drizzle the Sundried Tomato-Chardonnay sauce over and around the fish. Sprinkle the tomato concasse all over the plate. Place a basil bud on top of the fish.
  • Heat olive oil in a saucepan, then add peppercorns and shallots. Saute until translucent. Add the wine, bay leaf, lemon juice, and sun-dried tomato, and reduce by 80 percent. With a whisk, 3 to 4 cubes at a time, incorporate butter, making a beurre blanc sauce. Strain through chinois. Keep warm.

4 teaspoons olive oil, divided
4 (5-ounce) sea bass fillets (or other white fish)
1 small onion, diced
1/2 cup white wine
1 cup canned low-sodium diced tomatoes, with juice
1/2 cup chopped pitted black olives
2 tablespoons capers
1/4 teaspoon dried crushed red pepper, optional
2 cups packed fresh baby spinach leaves
Salt and pepper

Steps:

  • In a large nonstick skillet, heat 2 teaspoons of oil over a medium-high heat. Add fish and cook until opaque in the center, about 2 1/2 minutes per side. Transfer the fish to a platter and tent with foil to keep the fish warm.
  • Heat the remaining 2 teaspoons of oil in the same skillet; add onion and saute for 2 minutes. Add the wine and cook until reduced by half, about 2 minutes. Add the tomatoes, olives and capers and crushed red pepper, if using, and cook for 3 minutes more. Stir in the spinach and cook until it is wilted, about 3 minutes. Season with salt and pepper. Spoon the sauce over the fish and serve.

1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
2 tablespoons olive oil
Four 6-ounce center-cut salmon fillets
1 stick unsalted butter, at room temperature
3/4 cup (one 6.5-ounce jar) sun-dried tomatoes in oil and herbs, drained and sliced
3/4 cup (one 6.5-ounce jar) sun-dried tomatoes in oil and herbs, drained and sliced
1/2 teaspoon dried oregano
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • For the salmon: Sprinkle both sides of the salmon with the salt, pepper and dried oregano. Drizzle with the olive oil.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Grill for 3 to 5 minutes on each side until cooked through.
  • For the butter: In the bowl of a food processor, combine the butter, sun-dried tomatoes, dried oregano, salt and pepper. Blend until the sun-dried tomatoes are finely chopped. Place in a bowl and refrigerate until ready to use.
  • Serve the salmon with a dollop of the sun-dried tomato butter on top.

4 sun-dried tomato halves (not packed in oil)
8 Kalamata olives, pitted
2 tablespoons chopped red onion
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley
1 large garlic clove
2 teaspoons red wine vinegar
1 teaspoon olive oil
4 6-ounce sea bass fillets

Steps:

  • Place sun-dried tomatoes in small bowl. Pour boiling water over to cover. Let stand until tomatoes are very soft, about 30 minutes. Drain, reserving 4 tablespoons soaking liquid.
  • Transfer tomatoes to processor. Add olives, onion, chopped basil, parsley and garlic and chop finely. Add vinegar, oil and 2 tablespoons reserved tomato soaking liquid; blend until moist paste forms, adding more soaking liquid if mixture is too thick. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Sprinkle sea bass with salt and pepper. Grill or broil fish until opaque in center, about 4 minutes per side.
  • Transfer fish to plates. Top with spoonful of tapenade and serve.

1 1/3 lbs sea bass fillets, with skin
salt
fresh ground white pepper
1/3 cup all-purpose flour
1/4 cup extra virgin olive oil
3 tablespoons chopped fresh parsley
2 tablespoons drained capers
4 anchovy fillets
1 garlic clove, chopped
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil

Steps:

  • Check the sea bass fillet for any errant bones and scales, and divide into 4 equal portions.
  • Season the fillets generously with salt and pepper and lightly dredge in the flour.
  • Heat 2 tablespoons of the olive oil in a large frying pan (preferably nonstick) over medium heat and sauté the sea bass for about 5 minutes on each side.
  • While the sea bass is cooking, grind the parsley, capers, anchovies, and garlic in a mortar with a pestle or in a food processor. Finally, when it is fairly well mixed together, add the mustard, lemon juice, and the remaining virgin olive oil.
  • Season with pepper and check for salt.
  • To serve, spoon some of the sauce onto each of the warmed plates and carefully set the sea bass on top.

1/4 cup sun-dried tomato packed in oil
2 garlic cloves
2 lbs sea bass fillets or 2 lbs red snapper fillets
2 lemons, thinly sliced
2 tablespoons fresh rosemary, minced, can substitute 1 tsp. dried
salt
pepper

Steps:

  • Puree sundried tomatoes and garlic.
  • Reserve 2 tablespoons oil to brush on the fish.
  • Line a 9" X 13" baking dish with lemon slices and place the fish on top of the lemons. Brush with reserved oil and the lemon juice mix from the baking dish.
  • Spread the puree over the fish evenly.
  • Sprinkle with rosemary, salt and pepper.
  • Marinate for 30 minutes, up to 1 day.
  • Bake uncovered at 375 degrees F., until the fish is opaque, about 10-14 minutes for 1-1 1/2 inch thick fish filets.
