GLUTEN FREE BISCUITS
This Recipe is from Roben Ryberg's Cookbook You Won't believe it's Gluten-free! Easy and super yummy! Even good re-warmed the next morning(it any left!) I followed directions exactly except used soy milk and marg. and patted out and cut with a knife, worked fine but might try dropping from spoon like traditional drop biscuits next time, don't know how that would work, I have only done as writen so far....

Steps:
- Preheat oven to 375 degrees.
- Grease a baking sheet.
- In medium bowl, blend all dry ingredients, cut in the butter/marg.
- Add milk and vinegar.
- Mix together well.
- Dough will be soft.
- Pat out on prepared pan to 1/2 inch thickness.
- Cut into square biscuits and separate with the sides of knife.
- Bake 20 minutes, will just start to turn brown. (they don't really look done but are -- also look like spread and stuck together but separate easily -- ).
- If you are able to have real butter and desire at this point brush with melted butter.
- Makes 6-8 biscuits depending on size.

EGG, YEAST, CASEIN AND GLUTEN FREE BISCUITS
This recipe was adapted from the Gluten-free gourmet scone recipe. I was looking for an allergen free biscuit recipe to top off a meat and veggie pie . These biscuits should bake both on-top of like dishes or independently to be very light and fluffy with very little soda after taste.

Steps:
- Mix dry ingredients.
- Cut in 4 tbs of the butter. If a more moist dough is desired add up to 2 tbs more.
- Add rice or soy milk and mix.
- For a traditional biscuit add 1/2 cup of milk.
- For a drop biscuit add up to 3/4 cup of milk.
- The rice flour will soak up a lot of moisture, so more milk may be needed to maintain the consistency.
- For traditional biscuits roll to 3/4 inches thick and cut.
- For drop biscuits drop 1 tbs of batter onto cookie sheet.
- Bake 10-12 minutes at 400°F.
- Note: Baking with these substitutions will differ greatly from traditional recipes, especially in concern to higher moisture content needed to deliver a moist biscuit after baking and consistency due to the moisture content when handling.

COCONUT FLOUR SCONES (OR BLOBS)
A modified and healthified version of a coconut flour biscuit recipe I came across while trying to find something to satisfy my scone cravings. They're not really scones, they're more like under-enthusiastic drop biscuits. But MAN are they ever good. I really don't like the taste of coconut.. but not being able to eat wheat I decided to give coconut flour a try, enticed by its high fiber content and relatively appealing nutritional value. There is barely a hint of coconut in the taste, it mostly just adds a slight sweetness. These are wheat free, void of refined sugar, FULL of fiber and protein. I know that I'll be back to tweak this recipe once I have more time to experiment with it and modify the consistency of the batter which should be rather easy, but I wanted to post it before I did in hopes that if someone was looking for a coconut flour recipe like I was, they might enjoy these as much as I did :)

- Preheat oven to 400.
- With an electric mixer, beat together eggs, egg whites, applesauce, honey, and salt.
- In a separate bowl, sift coconut flour and baking powder together (include the cinnamon at this time if you are using it), mix and add to first mixture.
- Beat thoroughly until batter runs smooth with no lumps. It'll be unsettlingly runny. You'll be convinced you've either done something wrong or I've totally messed up on my liquid measurements. Have faith, it'll be okay!
- By hand, mix in the berries/fruit/chocolate chips.
- Spoon the distressingly runny batter onto a nonstick (or lightly greased) cookie sheet, making blobs about three inches across. Don't worry, they'll puff up quite nicely! Leave room for them to expand and spread out, about two inches between them to be safe. Yes, I know they look flat. It's okay, honest.
- Place in oven and bake for 8-14 minutes. I know ovens vary so keep an eye on them. When they are lightly browned around the edges, remove them from the oven and let them cool for a few minutes before attempting to move them onto a cooling rack. Use a very flat spatula to take them off the sheet, but do so slowly, they crumble easily when warm.

- Heat oven to 450 degrees.
- Mix together the dry ingredients in a bowl.
- Cut in the yogurt until like coarse crumbs.
- Add water or milk all at once.
- Stir quickly with fork just until dough starts to stick together.
- Lay dough on lightly floured surface.
- (Dough will be soft).
- Knead gently 10 to 12 strokes.
- Roll or pat dough to 1/2-inch thick.
- Dip biscuit cutter in flour; cut dough straight down.
- Bake on foiled baking sheet for 10 to 12 minutes.
- Makes approximately 10 to 12 biscuits.

- Mix dry ingredients.
- Put oil in measuring cup and add milk. Do not stir.
- Add to dry ingredients.
- Mix lightly to moisten ingredients and knead one or two times to form ball.
- Roll out on a flat, clean surface, until about 1/2 inch thick.
- Cut into 2" biscuits.
- Bake on an ungreased pan at 475F for 10-12 minutes, until lightly browned.

GOURMET SCONES - ADD ANY FRUIT!
This is a basic gourmet scone recipe. In this recipe, I am using strawberries, but you can use a variety of fruit(s) (blueberry, strawberry-rhubarb, currant, raspberry, peach, pumpkin, etc). Also, I tend to use splenda instead of sugar, since I'm splurging in the calorie department with the whipping cream!!! Extra treat: add some chunks of cream cheese to the centre of each scone. Yummy!!!

Steps:
- Pre-heat oven to 425°F
- Mix dry ingredients together in a mixing bowl.
- Add strawberries, or other fruit of choice.
- In a small bowl, beat egg and add in whipping cream. Mix well. Add lemon juice.
- Add whipping cream mixture into dry ingredients. Stir well, ensuring all flour is incorporated.
- Knead 6-7 times.
- Options: Either put on a baking sheet in spoonfuls, or you can pat the dough out into a large round. Using a knife, cut into triangles.
- Put scones onto an ungreased baking sheet.
- Brush tops with whipping cream and sprinkle on a little sugar.
- Bake for 12-15 minutes. Allow to cool in the pan for a few minutes.
- Enjoy!
